Gluten Free Meatloaf with Homemade BBQ Sauce Topping

Dinner is meatloaf. A delicious, flavorful, moist meatloaf. I love meatloaf or should I say I love my  meatloaf. 

This is another one of my husbands favorite meals. The outside has a tangy BBQ style topping. My daughter had a friend over for dinner and she was even oohing and aahing. The picture defiantly won't be hitting taste spotting any time soon, I was really rather disappointed with the way the picture turned out. 
But I can tell you if you like meatloaf and BBQ sauce you will defiantly like this and so will the kids.
 
The topping recipe for the meatloaf is also great on chicken. So if you can over look my mediocre picture, I guarantee your taste buds will be happy.

Chop 1 medium onion place into a saute pan with 2 tablespoons olive oil, saute until caramelized. I then placed carrots, celery, and garlic into the food processor and process until fine. Other wise I would finely grate, the carrots and celery. Chop the garlic.

When onions are caramelized add the carrot mixture into the pan and saute 1 minute just to soften the carrots. The carrots add a nice moistness to the meat.

Dump the carrot and onion mixture into a large bowl and allow to cool.

Add oatmeal to the carrot mixture and stir well to incorporate. Add Dijon mustard, salt, pepper, garlic powder, paprika, Italian seasoning, egg, hamburger, ketchup, and hot sauce. Mix until well incorporated.

Line the bottom of a broiler pan with foil. This will help with clean up later. I also like the broiler pan as it allows the fat to drip off leaving a nice moist meatloaf, but isn't greasy.

Place the top of the broiler pan into place.

Add meat mixture and shape into a loaf.

In a separate bowl add all the topping sauce ingredients and stir well.

Cover meatloaf with sauce and bake for an 1 hour or until the meatloaf registers 160 degrees on a thermometer. Enjoy!

Ingredients
  • 1 whole Medium Onion, chopped
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 whole Carrots, Grated
  • 1 stalk Celery, Grated
  • 4 cloves Garlic, Minced
  • 1 cup Oatmeal
  • 1 whole Egg
  • 2 pounds Lean Ground Beef, I use ground chuck
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Sea Salt
  • 1 teaspoon Pepper
  • 2 teaspoons Garlic Powder
  • 2 teaspoons Smoked Paprika
  • 1 teaspoon Italian Seasoning
  • 1 cup Ketchup
  • 2 teaspoons Hot Sauce
For Homemade BBQ Sauce Topping:
  • 1 cup Ketchup
  • 2 tablespoons Sugar or Honey
  • 1/2 teaspoon Molasses
  • 1 teaspoon Apple Cider Vinegar
  • 1 teaspoon Garlic Powder
  • 1 pinch Sea Salt
  • 1/2 teaspoon Pepper
  • 1 teaspoon Smoked Paprika
Cooking Directions
  1. Preheat oven to 375 degrees. Line the the bottom of a broiler pan with foil to catch drippings and easy clean up. Place top of broiler pan over.
  2. Place onion in a large skillet with olive oil and cook until caramelized. Add minced carrots,celery and garlic, saute until soft and fragrant, about 1 minute. Place onion mixture into a large mixing bowl, add oatmeal and allow to cool until workable about 10 minutes. Add all the rest of the ingredients for the meat loaf and mix together until well incorporated. Shape meatloaf on the top of the broiler pan into a large log shape.
  3. For BBQ Sauce Topping: mix all the ingredients together until smooth and smoother over the top of the meatloaf.
  4. Place meatloaf into the oven and bake for about 1 hour or when the middle of the meatloaf registers 160 degree's on an meat thermometer.

  1. YUM! We make a very similar meatloaf, but I've never put carrots in mine...GREAT idea! I also like cooking it on the top of a broiler pan - all the fat is gone and it's delicious without being greasy! Lovely recipe, thanks!

  2. I just love meatloaf so much!! My mom used to make it growing up and it totally reminds me of home. I love making it with turkey and making individual "meatloaf cupcakes".. kind of fun :)

  4. This was yummy. We had it tonight, and 2 of my boys gobbled it down. One couldn't be convinced to try it, but it was good. I have a very old oven and no broiler pan, so the juices didn't drain away, but it still was good.
    I have another recipe with grated carrots; keeps it moist.
