Chicken Taco Soup is a quick and simple Taco Soup recipe for a chilly fall evening from scratch.

If you have never made Chicken Taco Soup it deserves a spot on the dinner rotation. Even if you have a smaller family then ours you can freeze the leftovers in small containers and have a pre-made lunch. Sadly it never lasts long enough in our house to save for later. 

The best part of Chicken Taco Soup is serving it with all the toppings so everyone can make it just the way  they like! Some of our favorite toppings are grated cheese, sour cream, diced avocado, cilantro, tortilla chips, and pickled jalapeños.

Here's how to make the recipe for Chicken Taco Soup:


Onions, Carrots, Celery, Bell Pepper, Jalapeño, Garlic and Seasonings in a soup pot for Chicken Taco Soup.

In a large stock pot add 1 tablespoon Olive Oil or Avocado Oil. 

Stir in:
  • 1 whole Medium Sized Onion, Diced
  • 2 whole Carrots, Diced
  • 2 whole Ribs Celery, Diced 
Heat over medium-high. Cook until onions soften and start to caramelize.

Add:
  • 1 whole Bell Pepper, Diced
  • 2 whole Jalapeños, Seeded and Diced or 1 Poblano Chili for less spicy
  • 4 cloves Garlic, Minced
  • 1 tablespoon Granulated Garlic, 
  • 3 tablespoons Chili Powder
  • 1 tablespoon Oregano
  • 1 tablespoon Ground Cumin
Cook for about 2 minutes until spices are fragrant.

Stir in:
  • 5 cups Chicken Stock
  • 28 ounces Diced Tomatoes with Juice
  • 3 cups Fresh or Frozen Corn
  • 3 cups Diced Cooked Chicken or Diced Chicken Breast
  • 15 ounces Black Beans, Drained and Rinsed
  • 15 ounces Kidney Beans, Drained and Rinsed
Stir until well combined. Bring to a simmer and turn to low. Cook for at least 30 minutes or if you have all day let the Chicken Taco Soup recipe simmer on low.

Serve on the side for everyone to garnish their own soup bowl:
  • Grated Cheddar Cheese 
  • Tortilla Chips
  • Sour Cream
  • Diced Avocado
  • Chopped Cilantro 
  • Pickled Jalapeños

Chicken Taco Soup is a favorite quick and easy recipe for Taco Soup from scratch! It's delicious topped with your favorite toppings for a hearty meal.

Ingredients

  • 1 tablespoon Extra Virgin Olive Oil
  • 1 whole Medium Onion, Diced
  • 2 whole Carrots, Diced
  • 2 ribs Celery, Diced
  • 1 whole Bell Pepper, Seeded and Diced
  • 4 cloves Garlic, Minced
  • 1 tablespoon Granulated Garlic
  • 3 tablespoons Chili Powder
  • 1 tablespoon Oregano
  • 1 tablespoon Cumin
  • 2 whole Jalapenos or 1 whole Poblano, Seeds Removed and Diced
  • 1 handful Cilantro, Chopped and Stem Removed
  • 5 cups Chicken Stock
  • 28 ounces Diced Tomatoes with Juice
  • 3 cups Corn, Fresh or Frozen
  • 15 ounces Canned Black Beans, Drained and Rinsed
  • 15 ounces Kidney Beans Drained and Rinsed
  • 3 cup Diced Chicken, Cooked Or Raw
For Garnishing
  • Grated Cheddar Cheese
  • Tortilla Chips
  • Sour Cream
  • Diced Avocado
  • Chopped Cilantro
  • Pickled Jalapeños

Instructions

  1. In a large stock pot add olive oil, onion, carrots and celery. Heat over medium high. Cook until softened and starting to caramelize.
  2. Add bell pepper, jalapeños, and seasonings. Cook for about 2 minutes until fragrant.
  3. Add chicken stock, cilantro, diced tomatoes with juice, corn, chicken, black bean and kidney beans. Stir well.
  4. Bring to a simmer and turn to low cook for at least 30 minutes or until chicken is done. Soup can also simmer on low for 1-2 hours if time allows.

Notes:

All the ingredients can be added to the Crock Pot and cooked on low for 6-8 hours for Crock Pot Chicken Taco Soup. If time allows I do like to still sauté the onion and veggies for flavor.
