First off sorry about the picture. On this particular night dinner was done around 7P.M. and the sun had already set, leaving me less then happy with the photos. Inside food photography's hard with out special lighting.
But on another note dinner was AMAZING and super healthy too! What more can you ask for in a dish? Lean protein paired with Kale which by the way is a super food and taste amazing cooked with the clams.
We paired this with a little toasted baguette for soaking up the broth at the bottom of the bowl and a nice glass of wine. The best part this meal is done in 25 minutes (other then the soaking of the clams)! Totally gourmet weeknight meal!
This dish came together as a duel effort. We where aiming for a quick weeknight dinner with the least amount of dishes possible and the middle child had been begging for clams for weeks, I know my kids aren't quite typical but my secret was consistently offering whatever my husband and I ate. I never once offered the kids the option of a special meal and the kids will eat close to anything as long as it taste's good. The only down side to this is if the food doesn't taste good the kids have no problem saying so and I have been left on a few occasions trying to cover up what I could barely eat myself when we have been over to someones house to eat.
Over cooked, under seasoned food is hard for the palate.

I had made these last Thursday because they are always a hit in our house, I love how easy they are to make. An easy dinner for a busy weeknight or when I need to feed the Hubby and his friends when their watching football. No slaving here!
I have met a few people who detest Sloppy Joes. However I have yet to have a chance to make them try these delicious babies! I have yet to understand what's not to like about ground hamburger with all sorts of goodies smothered with cheese over top on a toasted bun but if I figure it out I'll let you know! This recipe taste nothing like Manwich. Just for the record my kids will picket if I serve the Manwich.
This recipe could be totally gluten free if using gluten free hambuger buns or large dinner rolls.

Count down to fall has began. Only 2 days of summer left and almost 2 months till one of my favorite days of the year. Yep, you got it I love a big old chunk of turkey and pies galore! To celebrate I skinned up my pumpkin pie! When your eating pumpkin a couple times a month for the next 2 months it never hurts to skinny it up. The Hubby and kids couldn't even tell the difference, actually I could barely keep them out of it and since it's made with yogurt and eggs I thought it qualified for breakfast. Yes, 2 days in a row the Hubby and I sat after the kids were off to school and enjoyed a slice of pumpkin pie and coffee. All I can say is I was in heaven! Sadly the pie was gone with in 24 hours of being cut into, this folks is the story of my house! Nothing ever survives.
One of the best parts of this pumpkin pie is the lack of soggy crust since you blind bake the crust before filling.
Now if your really looking to keep it skinny I would totally forgo the whip cream but I figured since I had reduce the sugar and the heavy cream I originally added to the recipe I thought a dollop of whip cream was only fair.

One of the ways we enjoy hot wings around here is fried. We also love Boneless Hot Wings and I make a fabulous baked hot wing I'm sure I'll be sharing here soon too, you know to help keep the girlish figure. But right now's not about the girlish figure just some darn good wingie dingies.
More or less it's crispy crunchy fried chicken dipped into hot sauce. Need I say more? I thought I might share the recipe since we've kind of been on a football party theme lately and hot wings are a must!

In memories of the summer that's ending and our fabulous trip to Maui this year, I bring you Macadamia Nut Sticky Buns. We actually didn't enjoy these on Maui this year but on Kauai about 6 years back at our favorite little coffee shop Java Kai in Hanalei. Truth be told I have been thinking about one of these babies for the last 6 years and I was so disappointed when I hadn't run into these beauties on Maui. I guess the Hubby was too because his face lit up like it was Christmas when he found out what I was up too.
I mean who in their right mind doesn't like cinnamon rolls topped with caramelly sticky goodness? Then throw in a few macadamia nuts and you have heaven on a plate! Yes, I said it. Heaven on a plate!
Now step away, stop licking the screen and go get some macadamia nuts so you can have the real thing!
This recipe makes a few extra plain rolls you can set aside and drizzle with a little cream cheese frosting.

Mmmm.. Who loves coffee cake? I do! I do!
This coffee cake is my rendition of Panera Bread's Cinnamon Coffee Cake. I will still have to work on the swirl aspect of this cake to make it look like Panera but in the mean time grab a cup of tea or coffee and a fork. This coffee cake was delicious! The hubby was even busted with an empty plate over on his side of the bed from a late night snacking session after I was asleep!
Good thing the pictures were taken before anyone was able to grab a slice!
This didn't last long in our house!
The cake is a moist coffee cake with a crunchy crumb crust! Can you say deliciousness?

Twice Baked Potatoes are a real comfort food for our house. As a kid my Granny would make them all the time. I'm sure more likely then not she made them because I would request them.
I have always been in love with twice baked potatoes from as early as I can remember Granny making them. Hers where always simple and super tasty. She never added bacon or sour cream. Just good old potatoes, butter, a little salt, and a good sprinkling of paprika over the top. It sounds easy enough but this recipe took longer then most things I make to figure out how to make a light tasty filling with just the potatoes and butter. I discovered if you over cook the potatoes they became too starchy. Also if you don't remove the insides of the potatoes while the potatoes are still fairly hot it will be come thick and goopy. Not the light, buttery potato filling Granny would make. Then there's the slight crispness to the top of the potato after it has been baked the second time that just puts this potato over the top!
Now go get to making these tonight! You'll be glad you did!

What a better way to celebrate the changing of the seasons than with pork chops with apples, a true fall favorite. I made these last week as the temperature here seems to be plummeting at night down to the 50's and I was ready to rejoice in the cool weather. The best part of the whole dish is the pork and apples infuse each other with a fabulous flavor combined with the herbs sage, rosemary and garlic.
I mean who doesn't like pork chops and apple sauce? Think Peter Brady from the Brady Bunch. If you haven't seen that Brady Bunch episode use good old google and look it up! You'll be glad you did. Then jump on the pork chop band wagon and treat your self to a tasty treat!
We enjoyed this with twice baked potatoes but it is really divine with Skinny Mashed Yams.
