Grandma Sybil's Dilly Bread

This recipe is an old recipe from my husbands Grandma Sybil she passed away last year at the lovely age of 100! Simply amazing I thought! 

While we were visiting my Husbands Father brought up this Dilly Bread his mother had made for him over the years.. I believe his exact words at the time were, "That was the best darn bread I ever had."

So I proceeded to see if he might know where the recipe might be hidden but he was sure it was long gone since she went to the assisted living facility.

Fast forward to around Christmas time when I was having a conversation with my Mother-in-law about recipes she wanted to make sure I had copies of and I bring up the story about the Dilly Bread. 

Guess what she had Sybil's Dilly Bread recipe and it's every bit as delicious as my Father-in-law had described.

P.S. This bread is super easy and doesn't require a mixer!

Light and airy with these little dill seeds that taste mildly like caraway..

I substituted 1/4 cup finely chopped onion for the instant minced onion only because I didn't have any in the cupboard.

Melt 1 tablespoon butter in a medium sized sauce pan and saute 1/4 cup onion until softened over medium-low heat.

Add 1 cup Cottage Cheese to onion mixture, and cook until cottage cheese is lukewarm. 

It can be no hotter the 110 degrees on a thermometer or the yeast will die.

Combine:
  • 1/4 cup Water
  • 1 package Active Dry Yeast. 
Allow to sit for 3 minutes until yeast is softened.

Add:
  •  Cottage Cheese Mixture
  • 2 tablespoons Sugar
  • 1 teaspoon Salt
  • 1 whole Beaten Egg
  • 2 teaspoons Dill Seed
  • 1/4 teaspoon Baking Soda. 
Mix until combined.

Add 2 1/2 cups Flour in fourths mixing between each addition until well combined.

Mix until thoroughly combined. The original recipe calls this a stiff dough but in my opinion it is more of a medium firm dough...

Little spot's of cottage cheese will peak through the dough. 

Cover dough in bowl and allow to rise for an hour or until doubled.

Fold down dough and shape into a round. Place in a 8" cake pan or 9" pie plate greased with butter.

Allow to rise 1 hour or until light.

Bake in a 350 degree oven for 40-50 minutes.

ingredients:

  • 1 package Active Dry Yeast
  • 1/4 cup Water
  • 1 tablespoon Butter
  • 1/4 cup Onion, Finely Minced or 1 tablespoon Instant Minced Onion
  • 1 cup Cottage Cheese
  • 2 tablespoons Sugar
  • 1 teaspoon Salt
  • 1 whole Egg, Beaten
  • 2 teaspoons Dill Seed
  • 1/4 teaspoon Baking Soda
  • 2 1/2 cups All-Purpose Flour

instructions:

  1. Soften yeast in water in warm water under 110 degrees in a large bowl and set aside.
  2. In a medium sized sauce pan add butter and onion. Saute until softened. Add cottage cheese and cook over medium-low heat until mixture is lukewarm. (No warmer then 110 degrees.)
  3. Add cottage cheese mixture to yeast. Stir in sugar, salt, egg, dill seed, and baking soda.
  4. Add flour in fourths and stir until well combined after each addition until all flour has been added. Little lumps of cottage cheese will show but otherwise it will be a medium-stiff dough.
  5. Cover dough and let rise for 60 minutes or until doubled.
  6. Grease with butter a 8" cake pan or 9" pie plate.
  7. Fold dough down and shape into a round.
  8. Place round into greased pan, cover and allow to rise 60 minutes or until light.
  9. Preheat oven to 350 degrees and bake 40-50 minutes.

  13. My dad told me a story of some dill bread his mom used to make. After a quick search I tried this one and it was it!

    It is so ridiculously good I ran home to make it again!
