Chocolate, marshmallows and a brown sugar meringue need I say more? 

Lorna calls them shamores because she wanted some more...lol.. I thought it was rather cute!

These were super easy to make and gone faster than I could take a picture.

I actually made two pans of these because the first pan was gone before I could take a picture. The three little squares in the picture above was all that was left of the little mouthfuls of deliciousness, out of the second pan. 

Yes these are that good and a perfect dessert for any occasion.

Here's how I make Mud Hen Bars:

9" x13" pan lined with parchment paper and greased with butter.

Butter a 9x13 pan, line with parchment and butter parchment paper.

Butter, Granulated Sugar, Brown Sugar in a mixing bowl.

Beat together until creamy:
  • 1/2 cup Room Temperature Butter
  • 1/2 cup Granulated Sugar
  • 1/2 cup Brown Sugar 

1 Egg, 2 Egg Yolks, Vanilla, Baking Powder, and Salt add to Mud Hen batter.

Add:
  • 1 whole Egg
  • 2 whole Egg Yolks
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
Beat until smooth and creamy.

Flour added to Mud Hen Bar Batter.

Add:
  • 1 1/2 cups Whole Wheat Pastry Flour or  and mix on low until combined scraping the sides of the bowl as needed.


Mud Hen Bar dough spread into baking pan.

Smooth Mud Hen dough into bottom of greased pan.

Mud Hen Bar dough covered with chocolate chips and marshmallows.

Sprinkle chocolate chips and marshmallows evenly across the top.

Nuts being pressed into Mud Hen Bars.

Sprinkle with:
  • 1 cup Chopped Nuts

Press firmly across the top.

Beaten Egg Whites with brown sugar in a mixing bowl.

Beat 2 whole Egg Whites until stiff peaks form. 

Add 1 cup Light Brown Sugar and mix or fold on low speed until fully incorporated.

Brown Sugar Meringue being spread over top of Mud Hen Bars.

Spread Brown Sugar Meringue Topping evenly over the top of Mud Hen Bars.

Brown Sugar Meringue Spread over the top of Mud Hen Bars unbaked.

Bake in a 350 degree oven for 30 minutes or until golden brown.

Allow to cool before cutting into squares.

ingredients:

  • 1/2 cup Butter, Room Temperature Plus More For Greasing
  • 1/2 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 1 whole Egg
  • 2 whole Egg Yolks
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1 1/2 cups Whole Wheat Pastry Flour Or All-Purpose Flour
  • 3/4 cup Chocolate Chips (I used dark but semi-sweet works also.)
  • 1 cup Mini Marshmallows
  • 1 cup Chopped Almonds Or Any Other Desired Nut (Optional)
  • 2 whole Egg Whites
  • 1 cup Light Brown Sugar

instructions:

How to cook Mud Hen Bars

  1. Preheat oven to 350 degrees.
  2. Butter a 9" x 13" baking pan, line with parchment paper and butter parchment paper. Set aside.
  3. Cream butter, granulated, and 1/2 cup brown sugars until creamy.
  4. Add egg, both egg yolks, vanilla, baking powder and sea salt. Mix until smooth and creamy.
  5. Add flour and mix until combined scraping the sides of bowl as needed.
  6. Smooth dough over the bottom of parchment lined pan.
  7. Top dough with chocolate chips, marshmallows and nuts if using. Press down evenly.
  8. Beat egg whites until stiff peaks form.
  9. On low speed or by hand mix in brown sugar.
  10. Spread mixture evenly over the top of chocolate chips, marshmallows and nuts.
  11. Bake for 30 minutes or until golden brown. 
  12. Allow bars to cool completely before cutting to desired size.

    1. Hi Amy, Greasing the pan helps the parchment stick to the pan so the parchment doesn't move around and greasing the parchment ensures the bars won't stick to the parchment when removed from the pan.
