7 Up Jello Salad is a classic holiday favorite passed down from Colt's Grandmother. It's a favorite for barbecues, summer picnics, potlucks and of coarse the holidays. 

7Up Salad consists of Lemon Jello made with 7 Up, drained crushed pineapple, sliced bananas, and mini marshmallows. It's then refrigerated before being covered with a pineapple pudding mousse. It can be garnished with maraschino cherries and chopped nuts if desired.  

It's usually served as a side dish for Thanksgiving, Christmas, and Easter but it also makes a fantastic dessert.

7 Up Jello Salad is a staple in Colt's family for the Holidays. His Grandma Sible passed this recipe down to Colt's Mom years ago (by that I mean close to 40 years ago) and it's the only Jello Salad that I have ever tasted that I can't live without. It's a Thanksgiving and Christmas staple in our house and once in awhile I make it just to be naughty.

7up Salad is made with lemon jello, 7up, crushed pineapple, bananas and of course mini marshmallows. But wait thats not what makes 7up salad totally amazing, it's the layer of pineapple pudding mousse that goes on top, oh dear lord it's delicious! 

I almost ate could have ate all the pudding and left the jello for the kids, I know its so bad in so many ways but it's just that good.

Crock Pot Beef Stroganoff is a favorite twist on my Beef Stroganoff From Scratch by slow cooking a cheap cut of stew meat. The cool wet days of fall have arrived in Washington and I'm sure they won't be leaving anytime soon. 

I've had to force my cold achy body out of bed and into the shower, after snoozing the alarm clock one too many times and contemplating asking Lorna to make her own breakfast and lunch. 

Ugh..Nothing about cold mornings and rolling out of bed before the sunrises I love, I much rather stay in my warm bed and hide with a cup of coffee.. Thank God he made weekends! 

I love fall, I just don't love the mornings. The smell of walking through the door after a long day of errands and appointments to dinner done is one of the reason's I love fall, all the comfort food meals like this Crock Pot Beef Stroganoff make for a great end to any day. 

Plus I am a boots, sweater and scarves girls. I love watching the trees change colors and the fresh apples at the market. Enjoying apple cider, watching the fireplace snuggled under my favorite knitted blanket with one of my babies..

So for now I pray I adjust to the cold mornings and the lack of light.

Monster Cookie Recipe

Sometimes life calls for Monster Cookies loaded with oats, peanut butter, chocolate chips and M&M's. I can't think of a better lunch box treat! 
I usually don't eat M&M's for a million reasons but sometimes a cookie with some crunchy little hard shell covered candies are an exception. 
Especially the dark chocolate M&M's... They might be a new found weakness..
Since I've been so busy with appointments lately I knew these would make a special treat to add to the kids lunch box, a little hidden surprise to remind the kids and hubby just how much I love them. 
Plus who doesn't like a surprise plate of cookies when you walk through the door? 
These monster cookies are super easy to make and always a winner.

FYI:These are technically gluten-free but please double check all your ingredients if you are gluten sensitive! I couldn't find anything on the Dark Chocolate M&M's about having gluten, but please double check the ingredients you use if you have a gluten-free household.

Pumpkin Spice Cake with Caramel Icing is a fall favorite bundt cake recipe from Serena Bakes Simply From Scratch.

The weathers been windy and cold over the weekend. Calling for a Pumpkin Spice Bundt Cake with Caramel Icing to help ring in Autumn.

This pumpkin spice cake came about when Colt and I were at the kitchen store looking for little pans to make pot pies and he found this super cool bundt pan sitting on the bottom shelf shoved in the back. Colt has really stepped in and come up with a lot of tasty ideas, helping with cooking and photography over the last few months.

I feel thankful, without him I wouldn't be able to post like I've been able to. All of a sudden his passion for the blog is running deep and he's been telling everyone about it and I mean everyone. 

No one at the grocery store knows what I do, until now... It was my little secret.

As I was checking out the other day the checker asked what I was making with the pretty purple kale that was in my cart and I explained Sausage Kale and Potato Soup. Then Colt says," You know she has this incredible blog."  D'oh.. Smacks head and sent Colt the why'd you tell her look..

Of course the checker says what's the name of the blog, Colt turns to look at me and I some how I spit out Serena Bakes Simply From Scratch.com. I don't know why I get so embarrassed. 

He told me in the car, I really should be proud of what I do. I already knew what he was saying but it's a bit like having a B on a report card when you really want an A. Plus to top it off she's seen my kids in their darkest hours having melt downs going through line when they were little and me trying to sneak through line in yoga pants, my hairs a mess and no make up on.

She's even seen me shoot the kids the knock it off or life's going to suck to be you look.
I know I should be proud, the recipes are always tasty and the photo's are ok, but sometimes I worry more about what other people think than I should.

So I'm learning to feel proud, I don't have the largest blog, it's far from perfect, I have spelling errors on a regular basis that I miss but it teaches me something new almost every day, I've made a lot of friends and love all of you. 

Most of all I love what I'm doing! I feel so blessed for each and everyone of you that read the blog.

I guess I've rambled on enough for the day so on to Pumpkin Spice Bundt Cake With Caramel Icing.

Pumpkin Muffins

Thursday morning I woke up bound and determined to bake.
I had gone on a pumpkin buying spree the night before, my cupboards now contain a total of 9 cans of pumpkin puree.  
We headed to Costco yesterday and I realized they now carry the Organic Pumpkin I bought at a little over $3 bucks a can for under $2 if I bought a case and we all know how Costco works one day your favorite products there and the next you go back to buy some more and it magically disappeared and no one ever knows where it went.
(Case in point they carried this great Organic Flour for awhile for fairly cheap and then one day poof it's gone never to return again.)
Then you search all of Costco looking for that one item while your cart magically fills with all these other things you never intended on buying.
I am so glad I stocked up because I have so many favorite pumpkin recipes I can't wait to make and these muffins are no exception.
They are moist, with a nice pumpkin spice flavor and as if this wasn't enough I made a little brown sugar  spice crumb topping just to make them a little extra special.

I have a love for all pulled meat. I don't know what it is but something about juicy meat cooked long and slow in a sweet and tangy sauce piled high on a bun always calls my name. This was one of those recipe that was running through my mind when I wanted to sleep or maybe it was really just a dream and I thought I was awake.Then it kept popping in my head over the next few days and I knew I had to make it and oh boy am I thankful I did..


I've been trying to plan more crock-pot meals to help ease the dinner time burden. Our afternoon's have been filled with a lot of appointments, leaving us in a dinner time rush with the kids back to school. 

Slow Cooked Bourbon Peach Bbq Pulled Pork is a perfect fix it and forget it dinner.

I started the pork in the morning as the kids were headed off to school and by the time we came home from the chiropractor it was done and the house smelled divine. The sweet peach sauce with a hint of bourbon and a little chipotle peppers made a perfect sauce to infuse the pork. Sweet but tangy with a touch of heat. A perfect end to a busy day!

Quick S'more Cookie Bars

Sometimes life calls for something ooey gooey, chocolaty, marshmallowy easy S'mores Cookie Bars for dessert. I have the perfect treat for you! S'mores Ooey Gooey Chocolaty Marshmallowy Graham Cracker Cookie Bars.Whew that was a mouthful! 

We randomly make these through out the year, especially around Christmas since they are great to bring to any gathering and loved by young and old alike. They are so very easy to make and never last long! Lorna was asking to make a treat last night when I came home from my Doctor's appointment  and these were the perfect easy solution since they didn't require any additional help and make very little mess. 

Oh and did I mention these fulfill every s'mores craving you'll ever have without even needing a fire pit.
