Pan Roasted Asparagus
Are you still needing last minute idea's for Thanksgiving? 
If so I bring you perfect pan roasted asparagus, such an easy way to fix one of my favorite veggies.
When I first met Colt he was totally anti-asparagus. 
It took me almost a year to even convince him to take a small bite, he associated the bright green deliciousness with the stuff out of the can that's slimy and stringy or fresh that's been cooked well past the point of tender. 
I'll never forget the following few years I had to make asparagus quickly cooked and smothered with a little hollandaise sauce, it was usually the first thing gone on his plate.
Eventually I made a quick pan roasted asparagus and he was totally sold.
If your idea of asparagus is an over cooked, slimy, stringy mess I'm here to tell you today, it doesn't need to be that way.
It can be crisp and fresh tasting in a little buttery lemon sauce and easy to make.

Orange Cranberry Bread with Orange Glaze is sooooo good, you have to make it! 

I've had my share of one too many bland, dry loaves of Orange Cranberry Bread over the years and this my friends is not any of those. 

I used my sweet Grannies Banana Luncheon Loaf Recipe with a few adaptations like brown sugar, cinnamon, milk and orange juice instead of banana to produce a super moist and flavorful loaf of Orange Cranberry Bread with an Orange Glaze to push this loaf over the top.

It lasted less then 15 minutes once it was cut and the final picture was taken.

Sorry to repeat myself but this Orange Cranberry Bread recipe turned out was soooo good! You have to make it. I'm planning on making another loaf tomorrow, it's the perfect beginning or end to any day with a hot cup of coffee or tea and a wonderful balance of flavors.

I'm a day late. I was hopping to share this yesterday for meatless Monday but after my morning therapy appointments my body seemed be done cooperating with me.
My body and mind have 2 different ideas of how things should be lately and I've had to learn so much patience with myself.
If you like chipotle and sweet potatoes then Crock Pot Chipotle Sweet Potato Black Bean Quinoa Chili is for you.
It's super easy to make, you just toss everything in the crock pot to fix it and forget it until dinner time.
The spice of the chipotle is a nice contrast to the sweetness of the sweet potatoes and is filled with lots of protein from the black beans and quinoa! 
If your not big on sweet potatoes then I would suggest Chipotle Black Bean Chili,  Artichoke and Mushroom Tomato Sauce or Curly Endive With Spaghetti  all are regular fast, meatless, inexpensive dinners in our house.

Grannies Banana Luncheon Loaf

For as long as I can remember I've always loved Banana Bread.

Banana Bread, Cinnamon Rolls, Brownies and Chocolate Chip Cookies all made regular appearances in Grannies kitchen growing up.

So when my cousin Kristi told me she had the handwritten recipe for Grannies Banana Luncheon Loaf and was more then happy to send me a copy, I was elated! 

Grannies Banana Bread is a super easy to make loaf.

Banana Bread has always been one of my all time favorites and I don't think I could ever tire of eating it.

The day Lorna was born started out with me and Colt in the kitchen of our little apartment making Banana Bread. My contractions continued to become worse while we were making the loaves until my water broke. 

Being a first time Mom I didn't realize the little trickle of water I was experiencing was my water breaking since I thought it would be a huge gush. So once the loaves went in the oven I had decided to take a hot shower to see if I could lessen the pain and help the contractions subside.

When that didn't work I asked Colt to call the Dr.'s office to see what they wanted us to do. Colt came in the bathroom a few minutes later and said the Dr. wants you to come buy the office unless your water breaks then we need to go directly to the hospital.

In that moment my mind clicked back on and I told him my waters broken and we need to go to the hospital. 

But we had one major obstacle.

My Banana Bread was still baking in the oven and had like 40 minutes left to go. There was no way I was taking a half baked loaf of bread out of the oven to waste.

So I convinced him we had to stay until the Banana Bread was done.

I'm sure at this point he was pretty terrified because I was moving around and horribly uncomfortable with every contraction.  But he knew by this point in our relationship how stubborn I am and there was no hope of getting me to the car until my Banana Bread was done, so we waited.

Thank God we made it to the hospital with plenty of time. We arrived between 3-4 in the afternoon and my sweet girl was born by 8 that night.

The best part was when we returned home from the hospital and had 2 loaves of Banana Bread waiting to be eaten.
