Greek Feta Dip

Greek Feta Dip is an easy to make whipped dip recipe with fresh herbs. It's always a hit at parties! It simple to make with ingredients you might already have on hand. It's always requested for Thanksgiving, Christmas, Tailgating, and any other gatherings we have. It's easy enough to make just for snacking.

Colt and I were shopping at Trader Joes last weekend and they were sampling their Greek Feta Dip with Pita Chips so of course we had to try it.

Then we thought about buying it but I was like you know I have just about everything at home to make this and you would have more then what comes in that little container. 

So he reluctantly agreed to let me try and replicate the Feta Dip. I'm pretty sure he didn't believe I could come up with something the equivalent or better but I managed to knock his socks off with this one.

He told me I better have this posted before Superbowl because this Greek Feta Dip needs to be at everyones party. He then went on to tell me we will having this at our house for Superbowl before he managed to polish off the last of the dip.

Good thing this is a super easy recipe because it looks like we will be making it again for Sunday!

Greek Feta Dip

Greek Feta Dip is an easy to make whipped dip recipe with fresh herbs is great for dipping pita chips and fresh veggies.

Ingredients

  • 8 ounces Neufchatel or Cream Cheese, Room Temperature
  • 1 cup Plain Greek Yogurt
  • 2/3 cup Crumbled Feta Cheese
  • 1 tablespoon Fresh Chives, Chopped
  • 2 teaspoons Fresh Dill, Chopped
  • 1 teaspoon Rosemary
  • 1 teaspoon Oregano
  • 1/2 teaspoon Granulated Garlic
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Fresh Ground Black Pepper

Instructions

  1. In a mixer add all ingredients and use a whisk attachment, whip until well blended, and light.
  2. If time allows refrigerate for a few hours.
  3. Serve dip with pita chips and fresh vegetables.

Avocado Grapefruit Salad with Grapefruit Vinaigrette is my go to salad at the moment.
I can't seem to get enough of how light and refreshing it is and the sliced almonds add the perfect crunch.

I find the sweeter pink grapefruit gives the right balance of flavor and the Grapefruit Vinaigrette is mildly sweet and tangy pairing perfectly with the tart grapefruit and creamy avocado.

When I'm looking for something a little more substantial for dinner or lunch I add cooked shrimp or salmon for a fat fighting power house to Grapefruit Avocado Salad plus it's quick which is always a win in my book! 

I've been unable to really do any cardio in the last year and half so anything that could help kill the demonic belly bulge is a good thing in my book.

Refried Black Beans recipe made from Serena Bakes Simply From Scratch. A must make for Cinco De Mayo.

I probably should have smothered these Refried Black Beans in cheese and cilantro or something because they aren't the most photogenic thing but they taste amazing.

We enjoyed these with the Chicken Enchiladas that were smothered in cheesy goodness that I shared on Sunday and I mean who doesn't love refried beans plus these blow the canned stuff out of the water.

If you aren't feeding an army you could easily freeze the leftovers for later or use to make an out of this world cheesy bean dip! Plus if your feeding a crowd these are much more economical then buying canned beans since dried beans are so inexpensive. 

These are actually really easy to make and totally worth the time. I hope you love them as much as we do!

Spinach Artichoke Pasta

Two of my favorite things in the whole wide world are Hot Spinach Artichoke Dip and One Skillet Meals only because I totally hate doing dishes.

One Skillet Spinach Artichoke Pasta combines both of those with a gluten free option using brown rice noodles instead of regular pasta ( I promise no one will know it's GF). It's incredible with regular pasta or gluten free!

It's cheesyliciousness at it's best and filled with lots of spinach and artichoke hearts leaving my taste buds singing for more!

Colt nabbed the leftovers for lunch and said he almost thought it was even better the next day because the flavors had melded.

This is comfort food at its prime and done in under 30 minutes.

It's like a little taste of heaven in every bite!

Quinoa Shrimp Mango Pomegranate Spinach Salad with White Balsamic Vinaigrette is reminiscent of a favorite salad I had enjoyed eons ago while Colt and I had gone on an overnight stay.

Eating this salad is like a mental vacay perfect for beating the winter blues with it's light and bright flavors.

It's loaded with Quinoa, Spinach, Mixed Baby Greens, Mango, Pomegranate Seeds, Walnuts and Feta  making it high in protein and a perfect lunch or light dinner.

The White Balsamic Vinaigrette is slightly sweet but tangy and pairs perfectly with the sweet mangoes and shrimp.

Plus with the holidays finally over we are trying to concentrate on eating healthier because we always seem to gain a few extra pounds.

Quinoa Mango Pomegranate Salad with White Balsamic Vinaigrette

Quinoa Mango Pomegranate Spinach Salad has Shrimp, Walnuts, Feta Cheese, and a Creamy White Balsamic Vinaigrette.

Ingredients

White Balsamic Vinaigrette
  • 1/3 cup White Balsamic Vinegar
  • 1/2 cup Extra Virgin Olive Oil
  • 2 tablespoons Water
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper, Fresh Ground
  • 1/2 teaspoon Honey
Quinoa Mango Pomegranate Salad
  • 3/4 pound Shrimp, Peeled (Optional)
  • 6 ounces Baby Spinach
  • 4 ounces Mixed Baby Salad Greens
  • 2 whole Large Mangoes, Peeled and Diced
  • 1 1/4 cup Pomegranate Seeds
  • 1 cup Quinoa, Cooked (I used Red Quinoa)
  • 1 cup Walnuts Or Nuts Of Choice, Roughly Chopped
  • 1/3 cup Feta Cheese

Instructions

White Balsamic Vinaigrette
  1. In blender combined white balsamic vinegar, olive oil, water, sea salt, black pepper, and honey. 
  2. Blend until smooth and creamy about 45 seconds. Set aside.
Quinoa Mango Pomegranate Salad
  1. In a large pan add 2 tablespoons of the creamy white balsamic vinaigrette heat until hot over medium-high heat.
  2. Add shrimp, cook until pink on both sides and cooked through. Set aside.
  3. In a large bowl combined baby spinach, mixed baby greens, mangoes, pomegranate seeds, quinoa, walnuts, feta cheese and cooked shrimp. Drizzle with 1/4 cup Creamy White Balsamic Vinaigrette and toss until well combined.

Hamburger Taco Soup

Hamburger Taco Soup recipe from Serena Bakes Simply From Scratch is a healthy, inexpensive dinner time favorite!

The boys had a friend over to stay the night last week and I needed something super easy to make and that everyone would like so we decided on Hamburger Taco Soup because who doesn't love tacos and soup?

I served all the condiments on the side and left out the hot sauce so everyone could adjust their bowl of soup to their liking. 

I love that Taco Soup is so easy to make and healthy too with only 380 calories per serving before you add any additional toppings. 

We also love Chicken Taco Soup,  and Mexican Meatball Soup a lot if you're looking for different dinner ideas! Slow Cooker Green Chile Pork Posole also looks so good! You really can't go wrong with any of these recipes.
