This my friends is one of those pies that sings to my heart. 

Homemade Strawberry Pie is almost like shortcake but in a Flaky Pie Crust or Graham Cracker Crust dependent on how you roll. One of the most important things when making a Strawberry Pie is making sure the strawberries are incredibly ripe.

I went all the way this time with a Flaky Crust because I was already making that luscious Lemon Meringue Pie I shared last week so I had a second crust needing to be put to use.

Lorna has been asking me to make another one since we devoured the first one in less then a day so I'm thinking maybe I'll have her help make another one for Easter. This is one of those desserts I could eat for breakfast or dessert for the rest of my life and totally be content.

Boston Cream Pie recipe is a light yellow sponge cake filled with vanilla pastry cream and covered in chocolate ganache

I remember from an early age lusting over the gorgeous Boston Cream Pies at the local Bakery growing up. Layers of light yellow sponge cake filled with creamy vanilla pastry cream and covered in chocolate ganache combined to make a gorgeous dessert worthy of any occasion. This particular recipe was 15 years in the making.

When Colt and I first became married I tried many Boston Cream Pie recipes that usually ended in a disaster with an overly dense cake, too sweet of pastry cream and excessively sweet chocolate ganache.

I spent a lot of time over the years perfecting the layers of yellow sponge cake to become light, airy and not overly sweet. Then I filled it with a rich vanilla lightly sweetened pastry cream and covered it in a rich chocolate ganache.

I opted to make 2 (8") cakes and trim the tops level over the traditional single cake sliced into two.
I will be the first to admit no matter how hard I tried to slice the cake perfectly into two I always ended up with two uneven pieces of cake.

By trimming the tops level and filling with pastry cream the finished slices turned out equally as stunning as the local bakery with much less trouble.

Tuscan Ham and Bean Soup

A hearty White Bean Soup recipe filled with smokey ham, white beans, zucchini, yellow squash and kale.

I made a big batch of this Tuscan Ham and Bean Soup last weekend because even though it's been sunny it's still been very cold and when it's cold I crave soup to warm my bones.

This soup is probably not authentic Tuscan because I'm not Italian but more my rendition of a perfect soup to take me away to Tuscany on a chilly day.

I used 2 large smoked ham hocks because we had gone out to our favorite butcher and picked a few up but a really meaty ham bone would work too. I loaded this soup with kale, zucchini, yellow squash, carrots and celery to keep it healthy. The smokey ham was the perfect disguise to hide the veggies from any picky eaters you might have in the house.

It was devoured with just enough for Colt's lunch the next day. If you aren't feeding an army this recipe could easily be halved, or the leftover's could be frozen for an easy quick dinner the following week.

Strawberry Shortcake Poke Cake is a favorite Spring and Summer cake recipe when fresh strawberries are at their peak! Homemade light yellow cake is filled with fresh strawberry filling for a delicious make ahead dessert.

I've been dreaming of Strawberry Shortcake all winter, so when I finally found really ripe amazing smelling strawberries at the market I decided to make this  Strawberry Shortcake Poke Cake because I wasn't in the mood to make traditional biscuits and roll them out.

I made a moist and light yellow lemon buttermilk cake for the base because I knew it would be the perfect flavor combo.Then filled it with fresh strawberry puree, diced strawberries and smothered it in freshly whipped cream.

My Dad who never eats dessert decided to have a slice and said it was the best ever. He even wanted to have a piece for breakfast the next morning and let me tell you that is way out of his normal. I don't think I've ever seen him eat sweets for breakfast, the man even drinks his morning coffee black! 

So I know if he loves it as much as the rest of the family you'll love it too!
