Caesar Salad is a family favorite for an easy dinner during the summer in our house. This Healthier Caesar Salad Dressing recipe is a must for your next Caesar Salad and super easy to make.

It's been super hot here the last few weeks, way warmer than usual for Seattle so we've been barbecuing and enjoy cold foods as much as possible in an attempt to keep the house cool. 

When the weathers hot Caesar Salad is a staple in our house.

Sometimes we enjoy it as a side but more often then not we toss in a little grilled chicken or steak and call it a meal. The other night we stuffed it in pita bread for a quick and easy dinner.

The kids always love when I serve things in pita bread and it makes an easy lunch or dinner on the go.

I usually make Caesar Salad with this Healthier Caesar Salad Dressing to cut back on calories and increase the protein by using low fat greek yogurt over traditional egg yolks or mayonnaise for a healthier option.

This dressing is so easy to make you will no longer have a need to buy dressing from the store.

We love Fully Loaded Baked Potato Skins because they are hearty, easy to make and perfect finger food as an appetizer, for a crowd or a light dinner.

I like to lightly salt the potatoes before baking for maximum flavor and the filling options are endless. 

On this occasion we stuck with a traditional Fully Loaded Baked Potato Skin because you can never go wrong with melty cheese, crispy bacon with a large dollop of sour cream, a sprinkle of chives in a crispy lightly salted potato skin. 

If this is wrong I don't want to be right!

Another favorite filling idea is taco seasoned ground beef, cheese, sour cream, avocado and salsa.

Just for the record I've never met a potato skin I didn't like!

A simple Waldorf Salad recipe with crunchy apples, red grapes, raisins, and walnuts with a delicious Greek Yogurt dressing. It's a perfect side salad that is perfect for your next gathering or add chicken for a main dish.

With the beginning of the first day of summer almost upon us I am officially craving Waldorf Salad.

Waldorf Salad is one of those classic picnic or potluck recipes that was a standard dish at family gatherings.

I remember my Grandma Lorna whipping up Waldorf Salad for family picnics on a few hot summer days.

I used yogurt and honey to lighten the dressing up in this classic dish and was able to cut back on the mayo. If someone had told me there was mayo in this dish before I tried it I probably would have turned my nose up and run the other way, but trust me Waldorf Salad is delicious! 

I've never been big on mayo but it makes for a deliciously creamy dressing with a nice tang that really pulls the flavors of the sweet raisins, apples, grapes and walnuts together.

Then in memory of my Great Grandparents I decided to pull out the depression glass bowl Grandma Lorna gave to me a few years beck that she inherited from my Great Grandma Sachs. I think my summer goal will be to fill this bowl with gorgeous food instead of hiding it in the china hutch since every meal should be a celebration.

Fontina Chorizo Spinach Quiche

I had originally planned on sharing a crock pot mac and cheese with you today but the recipe still needs some perfecting and I kept dreaming of Chorizo Spinach Quiche and Fontina Cheese. I love Fontina's slightly nutty flavor and smooth creamy texture.

While Colt and I were out shopping we spotted fresh Chorizo in the meat case and knew Fontina Chorizo Spinach Quiche had to be made.  My kids usually like breakfast for breakfast and dinner for dinner. So they thought I might be losing it when they found out I had quiche planned for dinner but it was quickly devoured and I was barely able to hide the last piece for lunch the next day.

Colt and the kids all requested Fontina Chorizo Spinach Quiche be added to the regular breakfast and dinner rotation so I know the combo was out of this world.
