Bacon Egg and Cheese Grilled Sandwich

Bacon Egg and Cheese Sandwiches have been one of my favorites for breakfast as long as I can remember. They are composed of crispy bacon, a layer or cheese, a runny egg or scrambled eggs sandwiched between two slices of sourdough bread or your favorite bread and grilled until toasty on the outside. Bacon and Egg Grilled Cheese are a favorite start to the morning.

The great thing about grilled breakfast sandwiches is that you can make them with whatever you have on hand. Ham or sausage can be substituted for bacon, don't have sourdough white or whole wheat can be used, and or coarse you can use whatever cheese you have on hand.

If you follow me on Instagram you might have seen this Breakfast Bacon Egg and Cheese Grilled Sandwiches a few weeks back. It just so happens to be a family favorite in all it's cheesy, eggy, bacony, goodness!

Since we all know breakfast is one of the most important meals of the day these Bacon Eggs and Cheese Breakfast Sandwiches on Sourdough are perfect when you need a portable meal on the go, but tasty enough for a lazy weekend at home.

Breakfast Bacon and Egg Grilled Cheese Sandwiches are composed of sourdough bread, a layer of cheese which just happens to be pepper jack on this occasion, a few slices of bacon, 2 fried eggs or scrambled if your prefer, another slice of cheese if desired, sandwiched between another slice of sourdough bread, and then grilled to golden delicious perfection!

These are totally and utterly delicious! Here's how easy it is to make these Bacon Egg and Cheese Grilled Sandwiches:

Fry 2 pieces of Thick Sliced Bacon per sandwich over medium-high heat until brown, and drain on a paper towel.

In a medium-high heat  skillet or griddle melt plenty of butter and brown one side of Sourdough Bread until golden brown. If you prefer you can butter both sides of bread instead of greasing skillet.

Fry 2 whole Eggs or scramble over medium-high heat in a buttered skillet, until almost desired doneness. The eggs will firm up slightly in the grilled cheese.

Heavily grease skillet or griddle with more butter (if bread isn't buttered), and flip bread over so toasted side is up. Cover with a slice of your favorite cheese, we used Pepper Jack Cheese on this occasion.

Add 2 slices Fried Bacon.

And Fried or Scrambled Eggs. You can add an additional slice of cheese if desired, for extra cheesiness!

Place the second slice of toasted bread, toasted side down. Butter skillet or griddle well, if you didn't butter bread, and flip sandwich once bottom is golden brown. 

Serious deliciousness. Bacon Egg and Cheese Breakfast Sandwiches make mornings way more enjoyable. We love to serve them with Summer Berry Fruit Salad for a side.

Breakfast Bacon and Egg Grilled Cheese Sandwich

Bacon Egg and Cheese Grilled Breakfast Sandwiches are composed of crispy bacon, a layer or cheese, a runny egg or scrambled eggs in a grilled cheese sandwich on sourdough or your favorite bread.

Ingredients

  • 1 tablespoon Butter
  • 2 Slices Bacon
  • 2 slices Sourdough Bread or Favorite Bread
  • 2 whole Eggs
  • 2 slices Favorite Cheese (We Used Pepper Jack)

Instructions

How To Make Breakfast Sandwich
  1. Fry bacon until crispy and brown. Drain on paper towel.
  2. Butter bread or melt plenty of butter in a skillet or griddle over medium-high heat. Toast one side of bread.
  3. While bread browns, fry egg to almost desired doneness, eggs will firm up slightly in sandwich. Alternatively you can make scrambled eggs.
  4. Add more butter to the skillet or griddle if needed. Flip bread over so toasted side is up, add a slice of cheese, 2 slices of Bacon, fried eggs, and an additional slice of cheese if desired. Cover with toasted side of bread.
  5. Cook until bread is golden brown, and cheese is melted. Flip and toast other side adding more butter if needed.
  6. Slice in half if desired and enjoy!
