If you follow me on Instagram you had seen I spent some time with Safeway and Albertsons at the 'Organics For All' event with O Organics® a few weeks back. I had a wonderful trip.

We started out our day with a delicious Overnight Oats Breakfast Bar, I can't wait to make for the next time we have company overnight, and then had a wonderful cooking demo with Registered Dietitian Anissa Chumbley.

We then had a chance to hit the kitchen with O Organics® where my team decided to make the most heavenly Berry Muffins. Then we had an opportunity to look over all the amazing O Organic® products and see things that might not be available yet in our local stores!

The time with O Organics®, and all the other amazing bloggers left me inspired to hit the kitchen. Colt and I headed to our local Safeway store to pick up a few ingredients to make Caribbean Curry Chicken Red Beans and Rice. It's a faster version of two of my favorite things at the moment: Jamaican Curry Chicken with Coconut Red Beans and Rice.

I use to work with this wonderful women named Nathalie who volunteered on the employee committee, and hooked me on Jamaican Curry Chicken. If you've never had it you've been missing out!

Jamaican Curry Chicken is usually one of those long, and slow dishes that cooks the better part of the day, so I decided to create a Caribbean Curry Chicken Red Beans and Rice as a quicker fusion that can be made in under 30 minutes on a busy weeknight with all the flavors we love.

I'm thankful our local Safeway and Albertsons carry a wide selection of O Organics. O Organic products are available at Albertsons Companies stores across the country including ACME Markets, Vons, Jewel-Osco, Shaw's, Tom Thumb, Randalls, Pavilions, and Star Market

Dice 1 pound Boneless Skinless Chicken Thighs or Breast. I chose thighs for this recipe for the flavor, but chicken breast can be used instead.

Toss Chicken with 1 1/2 tablespoons Jamaican Curry Powder, if using your hands make sure to wear gloves as the curry powder will turn your hands yellow.

Heat 2 tablespoons Butter, and 3 tablespoons Olive Oil, over medium-high heat until hot. Add chicken, and brown on both sides. Remove chicken from pan, and set aside.

Add 1/2 whole Diced Onion, and sauté until starting to caramelize. 

Stir in:
  • 4 cloves Minced Garlic
  • 2 cups Jasmine Rice
  • 2 sprigs Fresh Thyme
  • 1 teaspoon Dried
  • 2 whole Bay Leaves
Stir until rice becomes translucent and herbs become fragrant.

Stir in:
  • Cooked Chicken
  • 15.5 ounces Drained Kidney Beans
  • 13.5 ounces Coconut Milk
  • 2 1/2 cups Chicken Broth
  • 1 tablespoon Tomato Paste
  • 1 teaspoon Smoked Paprika
  • 1/2 teaspoon Oregano
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Granulated Garlic
  • 1/4 teaspoon Cayenne Pepper
  • 1 scotch Bonnet Pepper or Habenaro (Optional)

Stir until well combined. Bring to a simmer, cover, reduce heat to low, and cook for 20 minutes or until rice is tender.

ingredients:


  • 1 pound O Organics Boneless Skinless Thighs Or Breast, Diced
  • 1 1/2 tablespoons Jamaican Curry Powder
  • 2 tablespoons Butter
  • 3 tablespoons Extra Virgin Olive Oil
  • 1/2 whole Onion, Diced
  • 4 cloves Garlic, Minced
  • 2 cups Jasmine Rice
  • 2 sprigs Fresh Thyme or 1 teaspoon Dried Thyme
  • 2 whole Bay Leaves
  • 5.5 ounces Kidney Beans, Drained and Rinsed
  • 13.5 ounces Coconut Milk
  • 2 1/2 cups Chicken Broth
  • 1 teaspoon Smoked Paprika
  • 1/2 teaspoon Oregano
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Granulated Garlic
  • 1/4 teaspoon Cayenne Pepper, Or To Taste
  • 1 whole Scotch Bonnet Pepper or Habanero Pepper
  • Parsley Chopper For Garnish (Optional)

instructions


  1. Mix chicken with jamaican curry powder. Make sure to wear gloves, or use a metal spoon as the curry powder will turn your hands yellow.
  2. In a large skillet with a tight fitting lid add butter, and olive oil. Heat until hot, and add chicken, brown on both sides. Remove chicken, and set aside.
  3. Add onion to pan and cook until starting to caramelize. Stir in garlic, rice, thyme, and bay leaves. Stir until rice becomes translucent, and herbs are fragrant. Stir in chicken, kidney beans, coconut milk, chicken broth, tomato paste, smoked paprika, oregano, salt, granulated garlic, cayenne, and pepper. Stir until well combined.
  4. Bring to a simmer, reduce heat to low, and cook for 20 minutes, or until rice is tender.
  5. Garnish with parsley if desired.

  1. You tricked me, I thought you were black lol. I've been looking for ethnic recipes because I've been feeling like my traditional weekly meals are getting bland. I've used several of your recipes and was telling people about this site I found (yours), where this Jamaican lady has all these good recipes! Anyways, great recipes. I've made this beans and rice with curry chicken three times now.

  2. Can i use organic curry powder instead of Jamaican curry powder?

    1. You would want to add allspice, ground anise, and cayenne pepper. The flavor of the Jamaican Curry Powder has a little different flavor, but you could probably doctor it up to get a similar flavor.
