Blueberry Mango Salsa. It wouldn't be Mexican night without a Margarita!
Mango Margaritas are up there in my top 3 favs! I like to use frozen mangoes so they stay slushy, and don't loose flavor from too much ice. I'll add a cup of ice cubes or additional frozen mangoes to the pitcher to help them stay cold longer. I find a few whole ice cubes melt a lot slower then once they are pureed, and prolongs the slushiness of the Mango Margaritas.
