Things have been rather busy around here with the end of school fast approaching. It always seems like the busiest time of the year in our house. So I thought we would put Bacon Asparagus Pasta on the menu tonight.

I make Bacon Asparagus Pasta a lot when I'm craving comfort food, or when I need a super easy peasy dinner. Sometimes I make it for lunch, but also when the groceries are low in the house. I keep a stock pile of bacon, and pasta on hand in case of an emergency.

If I could I would make it for breakfast, but I'm not sure how the kids would feel about that.

Bacon Asparagus Pasta is only 7 ingredients plus spices.

Bring 4 quarts of Water to a boil. Stir in 2 teaspoons Salt. Slowly add 16 ounces Signature Kitchens Spaghetti to boiling water. Cook uncovered, stirring occasionally for 8-9 minutes, until just shy of desired doneness. Reserve 2 cups Cooked Pasta Water, and drain spaghetti.

Dice a 1/2 pound Signature Farms Thick Sliced Bacon, cook until brown, and remove from pan. Drain off excessive grease.

Add 2 tablespoons Butter, 6 cloves Minced Garlic, 2 teaspoons Lemon Zest, 1 pinch Red Pepper Flakes, and 1 pinch Salt.

Stir in 1 pound Asparagus cut into 1 inch pieces, and cook until garlic is fragrant.

Add cooked pasta to asparagus, and 1 cup Cooked Pasta Water. Stir until pasta is desired doneness, about an additional minute. Add additional cooked pasta water as needed to form a light sauce.

Stir in cooked bacon, and 1/2 cup Signature Kitchens Grated Parmesan Cheese.

INGREDIENTS:

To Cook Spaghetti
  • 4 quarts Water
  • 2 teaspoons Salt
  • 16 ounces Signature Kitchens Spaghetti
Bacon Asparagus Pasta
  • 1/2 pound Signature Farms Bacon, Diced
  • 2 tablespoons Butter
  • 2 teaspoons Lemon Zest
  • 1 pinch Red Pepper Flakes
  • 1 pinch Salt
  • 1 pound Asparagus, Cut Into 1 inch pieces
  • Reserved Cooked Pasta Water
  • 1/2 cup Signature Kitchens Grated Parmesan Cheese
  • 1/3 cup Parsley, Chopped
For Serving
  • Additional Signature Kitchens Grated Parmesan Cheese, and Lemon Wedges.

INSTRUCTIONS:

To Cook Spaghetti
  1. Bring water to a boil. Stir in salt. Slowly stir in spaghetti into boiling water. Cook uncovered, stirring occasionally for 8-9 minutes, until just shy of desired doneness.
  2. Reserve 2 cups Cooked Pasta Water, and drain spaghetti.
Bacon Asparagus Pasta
  1. Cook bacon in a large skillet until brown. Remove bacon, and drain off excess bacon grease.
  2. Add butter, garlic, lemon zest, red pepper flakes, 1 pinch salt, and asparagus. Cook until garlic is fragrant, and asparagus bright green.
  3. Stir in cooked pasta, and 1 cup pasta water. Stir until pasta is desired doneness, about an additional minute. Add additional pasta water as needed to achieve desired doneness, and to form a light sauce.
  4. Stir in cooked bacon, parmesan cheese, and parsley.
For Servings
  1. Serve with additional parmesan cheese, and lemon wedges.
