Tangy Pea Bacon Salad

Pea Salad with Bacon and Cheddar Cheese is an easy side salad recipe to make. Delicious for gatherings from Serena Bakes Simply From Scratch.

I always loved a Tangy Pea Salad when I was growing up. All the sweet peas that burst open with every bite are a summer staple to me..

My kids not so much.. They love the peas and tangy dressing, but would be ok without the rest. I should have made them a deconstructed Pea Salad, with Bacon and Cheddar optional.. One picked out all the bacon, and another the cheddar cheese cubes..lol..

I always use frozen sweet peas to make pea salad, since they always retain their shape so nicely, with a soft creamy center.  I made my dressing a little lighter using non-fat greek yogurt. I prefer to make Pea Bacon Salad recipe a few hours in advance to allow the flavors to mingle in the fridge.

There's probably a million different Pea Salad recipes, but here's how I made my Pea Salad recipe:


Tangy Pea Salad dressing.

In a small bowl whisk together: 
  • 1/2 cup Greek Yogurt
  • 2 tablespoons Sugar
  • 2 tablespoons White Wine Vinegar
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1/4 teaspoon Granulated Garlic
Until well combined.

A large bowl with sweet peas, cubed cheddar cheese, bacon and parsley.

Allow 16 ounces Frozen Sweet Peas to thaw. 

Add: 
  • 1 cup Cubed Cheddar Cheese
  • 4 slices Cooked Chopped Bacon
  • 2 tablespoons Chopped Parley

A large bowl with peas, bacon, cheddar, roasted red pepper, and red onion.

Add:
  • 1/4 cup Chopped Jarred Roasted Red Peppers
  • 1/4 cup Chopped Red Onion 
Pea Salad with Bacon and Cheddar Cheese is an easy side salad recipe to make. Delicious for gatherings from Serena Bakes Simply From Scratch.

Toss with dressing, and refrigerate for a minimum of an hour to allow the flavors to mingle.

ingredients:

Creamy Tangy Dressing
  • 1/2 cup Greek Yogurt
  • 2 tablespoons Sugar

Pea Bacon Salad

  • 1/4 cup Jarred Roasted Red Peppers, Chopped
  • 1/4 cup Red Onion, Chopped
  • 2 tablespoons Parsley, Chopped

How to cook Tangy Pea Bacon Salad

Creamy Tangy Dressing
  1. Mix all ingredients until well combined.
Pea Bacon Salad
  1. Add all ingredients to a bowl. Toss with dressing until well combined.
  2. Refrigerate for a minimum of an hour.
