So, I promised you the recipe for Apple Salad with Candied Hazelnuts and Lemon Vinaigrette a few weeks back when I shared the recipe for Spiced Candied Hazelnuts. I know.. I know.. It's long overdue, but it's so good. It's based on the salad from the Athenian we enjoyed way back in September.

The flavors are perfect for fall all the way into winter. We usually make it as a side, but it would be so delicious with Roasted Chicken or Leftover Turkey as a main course. We totally forgot to add the Bleu Cheese in the photos, and only realized once we sat down to eat. Logan was thankful for our mistake, since he's not big on cheese. The bleu cheese really rounds out the flavor of the sweet Spiced Candied Hazelnuts, and tart yet sweet Granny Smith Apples.

Spiced Candied Hazelnuts
This recipe starts off with Spiced Candied Hazelnuts. You could always use Roasted Hazelnuts, but I love the sweet spicy crunch that the Candied Hazelnuts add.Lemon Vinaigrette
In a shaker jar, or whisk together 1/2 cup Extra Virgin Olive Oil, 1/4 cup Lemon Juice, 2 tablespoons Water, 1 tablespoon Honey, 1/2 Dijon Mustard, 1/4 teaspoon Salt and 1/4 teaspoon Pepper. Shake or whisk until well emulsified.

Cut 1 whole Granny Smith Apples into matchsticks. Place 1/2 pound Washed Mixed Baby Lettuce on a platter of bowl, and scatter Granny Smith Apples over the top. Add 3/4 cup Spiced Candied Hazelnuts, 3 ounces Bleu Cheese Crumbles, and drizzle with Lemon Vinaigrette.

Yes, we forgot the bleu cheese crumbles when we took the photos, but we added them once we sat down to eat! I highly recommend them, or goats cheese would be good!

Lemon Vinaigrette
  • 1/2 cup Extra Virgin Olive Oil
  • 1/4 cup Lemon Juice
  • 2 tablespoons Water
  • 1 tablespoon Honey
  • 1/2 teaspoon Dijon Mustard
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Pepper
Apple Salad with Candied Hazelnuts and Bleu Cheese
  • 1 whole Granny Smith Apple
  • 1/2 pound Mixed Baby Lettuce, Washed
  • 3/4 cup Spiced Candied Hazelnuts
  • 3 ounces Bleu Cheese Crumbles

INSTRUCTIONS

Lemon Vinaigrette
  1. Shake or whisk together all Lemon Vinaigrette ingredients until well emulsified.

  1. Core apple and cut into matchsticks.
  2. Layer baby greens, apple, spiced candied hazelnuts, and bleu cheese. Drizzle with lemon vinaigrette.
