Since it's the New Year and I'm consciously making an effort to make healthier choices I thought we should make this Asian Turkey Salads.

It's super healthy, but it doesn't feel that way with the kale, and turkey keeping it hearty. Yet it's super filling, and an easy way to fill your plate with all the colors of the rainbow. The Asian Dressing really brings the flavors together with a little heat to keep the taste buds satisfied beyond the first few bites.

Asian Turkey Salad really came together in the isles of my local Safeway. It started with a trip through the meat department to choose our protein for the night. Foster Farms® Organic Ground Turkey was an easy choice since it's West Coast grown, USDA Certified Organic, 100% Natural, has No Antibiotics Ever, and is a fresh lean protein choice. I also like that it's raised on organic vegetarian feed.

Then I decided I would add the colors of the rainbow with kale, red and yellow bell peppers, English cucumbers, radishes, carrots, scallions, and cilantro. When I got home I made a little Chili Scallion Oil for flavor while I chopped the veggies. I just adore this and had just run out of my stash in the fridge.

To make the Chili Scallion Oil add to a small pot combined 1/2 cup Grape Seed Oil, 2 whole Thinly Sliced Scallions, 2 cloves Minced Garlic, 2 whole Star Anise Pods, 1 tablespoon Crushed Red Pepper Flakes, and 1 tablespoon Grated Ginger. Cook over medium heat until simmering. Reduce heat to low, and cook until garlic is brown. This can be made ahead of time and stored in the fridge until ready to use.

Remove Star Anise from oil before using.

Add 1 tablespoon Chili Scallion Oil, and 2 tablespoons Grape Seed Oil to a pan. Turn heat to medium-high, and add 16 ounces Foster Farms® Organic Ground Turkey. Break up turkey.
Add 1 teaspoon Soy Sauce, and 1 teaspoon Toasted Sesame Seed Oil. Cook until turkey is well done.
In a shaker jar or whisk together 1-2 tablespoons Chili Scallion Oil (1 tablespoon for less spicy), 3 tablespoons Soy Sauce, 2 tablespoons Water, 2 teaspoons Honey, and 2 teaspoons Toasted Sesame Seed Oil. Shake until well combined.
In a large bowl add 2 bunches Kale thinly sliced with stems removed, 1/2 a thinly sliced English Cucumber, 1 whole sliced Red Bell Pepper, 1 whole sliced Yellow Bell Pepper, 1/3 cup thinly sliced Carrot, 3-4 thinly sliced Radishes, 2 sliced Scallions, 1 handful Cilantro chopped, and 1/3 cup Sunflower Seeds. Add cooked Turkey, and drizzle with dressing. Toss until well combined.
You can enjoy it immediately or the kale is hearty enough to withstand a few hours in the fridge prior to serving to allow the flavors to develop. Making this a perfect substitution for a traditional pasta salad.

ingredients:

Chili Scallion Oil
  • 1/2 cup Grape Seed Oil
  • 2 whole Thinly Sliced Scallions
  • 2 cloves Minced Garlic
  • 2 whole Star Anise Pods
  • 1 tablespoon Crushed Red Pepper Flakes
  • 1 tablespoon Grated Ginger
Ground Turkey
  • 1 tablespoon Chili Scallion Oil
  • 2 tablespoons Grape Seed Oil 
  • 16 ounces Foster Farms® Organic Ground Turkey
  • 1 teaspoon Soy Sauce
  • 1 teaspoon Toasted Sesame Seed Oil
Asian Dressing
  • 1-2 tablespoons Chili Scallion Oil (1 tablespoon for less spicy)
  • 3 tablespoons Soy Sauce
  • 2 tablespoons Water
  • 2 teaspoons Honey
  • 2 teaspoons Toasted Sesame Seed Oil
Assemble Asian Turkey Salad
  • 2 bunches Kale, Thinly Sliced with stems removed
  • 1/2 whole English Cucumber, Thinly Sliced
  • 1 whole Red Bell Pepper, Thinly Sliced
  • 1 whole Yellow Bell Pepper, Thinly Sliced
  • 1/3 cup Carrot, Thinly Sliced
  • 3-4 whole Radishes, Thinly Sliced
  • 2  whole Scallions, Thinly Sliced
  • 1 handful Cilantro, Chopped
  • 1/3 cup Sunflower Seeds

Chili Scallion Oil
  1. In a small saucepan combine all the ingredients for Chili Scallion Oil. Bring to a simmer over medium heat. Reduce heat to low and cook until garlic is brown.
  2. Remove star anise from oil before serving.
Ground Turkey
  1. Add both oils to pan, and  heat over medium heat, until hot. Add turkey and break up.
  2. Add soy sauce, and sesame seed oil. Cook until turkey is cooked through.
Asian Dressing
  1. In a shaker jar or whisk together all ingredients for Asian Dressing.
Assemble Asian Turkey Salad
  1. Add all vegetables  and turkey to a large bowl. Drizzle with Asian Dressing and toss until combined.
