Easy, healthy and delicious Whole Roasted Bar-B-Que Rosemary Garlic Lemon Chicken. There's nothing quite like the flavor of a whole chicken cooked on a charcoal grill. In the summer it's delicious just to have a roast chicken and a lot of fresh veggies tossed onto the grill about 8 minutes before the chicken is done. A Family Day Hiking At Denny Creek Near Snoqualmie Pass WA

We took the kiddos up hiking last week when the weather here near Seattle finally topped 95 degrees to Denny Creek up near Snoqualmie Pass. It is one of my all time favorite short hikes and a must do anytime the weather here passes the 85 degree mark!
The water in the creek runs low this time of year perfect for the kids to slide on the slippery rocks with a few deeper pools under a few of the small waterfalls deep enough for a quick swim. The water happened to be icy cold but it felt wonderful after the 95 degree heat and the hike.

Roasted Tomato Pasta a perfect use for the over abundance of cherry tomatoes growing in the yard this time of year and a fresh light spin for a Meatless Monday night dinner.
The easy light fresh sauce combined with the pop in your mouth roasted tomatoes creates a wonderful easy one pan dinner.
We enjoyed this with a nice glass of organic Pinot Grigio and homemade Easy Chessy Garlic and Herb Bread Sticks!

I have a new found love for Lemon Vinaigrette after having a side salad at Fleetwoods On Maui.
They made a fabulous butter lettuce side salad with a Lemon Vinaigrette dressing. With executive chef Scott Leibfried of Hells Kitchen you know the food was divine!
So for the first meal back at the good old homestead I decided to reconstruct the lemon vinaigrette.
I am now even more in love then I was the first time I tried it, and it made an amazing marinade for the Salmon I will post later.
Were finally back from Maui.
I never had the intention of totally leaving the blog for a week and a half. I hope you all forgive me. But God seemed to see fit for me to take a total vacation. We watched no T.V. and had no internet since our lap top had gone on the fritz a week prior to us leaving. We had such a fabulous time away with our kiddos.
We cooked, we ate, we played but most importantly we were able to enjoy each other! We will probably never go back to Maui, we had a great time but we discovered Kauai is our favorite island so far!
