Another thing we do in the south is put the file in the gumbo after cooking and serving as the taste of file puts some people off when it is cooked in the gumbo. PS: Gumbo is technically not gumbo without the okra but I have cooked mine just as you do and won several first place cook offs with my own variations in seasoning.
