This weeks Sunday Supper theme is a Big Virtual Picnic and I couldn't think of something better to bring to a picnic than a Banana Pudding Cheesecake.

For the the banana cream pie lover I don't think dessert gets much better than this. Banana cream pie meets cheesecake. Colt said it's so good it doesn't even need the whip cream.

Just for the record Colt already put in his order for another Banana Pudding Cheesecake for our Birthday, it's that amazing! Since we share a Birthday it was a huge relief we both agreed on dessert this year.
In a large bowl combine 12 whole graham cracker crumbs and 1/4 cup sugar. Mix until well combined.
Add 7 tablespoons melted butter and stir until combined.
Press graham cracker mixture evenly across the bottom and up the sides of the pie plate. I find a measuring cup works well for pressing the crumbs evenly into the bottom and sides. Bake crust in a 375 degree oven for 7 minutes or until lightly brown.
Cool completely. 
To make Vanilla Pudding: Whisk together 3 egg yolks in a medium sized bowl and set aside.
To make filling: In a large sauce pan whisk together 2/3 cup sugar, 1/3 cup flour and a pinch of salt until well combined.
Slowly whisk in 2 cups milk. Bring mixture to a simmer and cook until mixture thickens over medium heat.
Stir mixture continually until thickened.
Slowly add 2 cups of the thickened cooked milk mixture to the egg yolks while mixing to temper egg yolks.
This prevents the eggs from curdling.
Pour egg yolk mixture back into milk mixture and return to a simmer, cook an additional 3-5 minutes while stirring until thick enough to hold it's shape on spoon.
Remove from heat and whisk in 1 1/2 teaspoons vanilla extract.
Cream 16 ounces room temperature cream cheese until smooth and creamy.
Add vanilla pudding and mix until well combined.
Scrapes sides of bowl well.
Add enough pudding cheesecake mixture to cover the bottom of the crust.
Add 3-4 sliced bananas to the bottom of the crust.
Cover with remaining cheesecake mixture and refrigerate until cold or overnight.

Graham Cracker Crust
  • 1 2/3 cup Graham Crackers, Crushed (about 12 whole crackers)
  • 1/4 cup Granulated Sugar
  • 7 tablespoons Butter, Melted
Banana Pudding Cheesecake Filling
  • 2/3 cup Granulated Sugar
  • 1/3 cup Flour
  • 1 pinch Sea Salt
  • 2 cups Milk
  • 3 whole Egg Yolks, Whisked
  • 1 1/2 teaspoons Vanilla Extract
  • 16 ounces Cream Cheese, Room Temperature
  • 4 whole Bananas, Sliced
  • Whip Cream and Additional Sliced Banana


Graham Cracker Crust
  1. Preheat oven to 375 degrees.
  2. In a large bowl add graham cracker crumbs and 1/4 cup sugar, mix until well combined. Drizzle in melted butter and mix well. Press graham cracker mixture evenly into the bottom of a 9 inch pie plate. Bake for 7 minutes or until light brown, cool completely.
Banana Pudding Cheesecake Filling
  1. In a large saucepan whisk together 2/3 cup granulated sugar with flour and salt until well combined. Slowly whisk in milk until smooth.
  2. Bring mixture to a simmer while stirring over medium heat. Cook until thickened.
  3. Slowly stir in 2 cups of thickened cooked milk mixture into the egg yolks. (This is not additional milk.)
  4. Add egg yolks back to the pan and continue to stir while returning mixture to a simmer. Cook until thickened and the consistency of pudding. It will hold consistency on spoon.
  5. Remove from heat and stir in vanilla extract.
  6. Beat cream cheese until smooth and creamy. Add pudding mixture to cream cheese and mix until well combined, scraping sides of bowl well.
  7. Cover bottom of graham cracker crust with 1/3 banana pudding cheesecake mixture. Add sliced bananas and cover with remaining cheesecake mixture.
  8. Refrigerate cheesecake until cold or overnight.
  1. Serve with whip cream, and additional sliced banana.

Kale Strawberry Blueberry Salad With Champagne Vinaigrette is a favorite for Memorial Day and 4th of July with the red, white, and blue colors from Serena Bakes Simply From Scratch.
We've been grilling a lot lately because the weathers been gorgeous and Kale Strawberry Blueberry Salad is amazing with just about anything off the grill. We've enjoyed it multiple times in the last week and I'm pretty sure I'm going to face plant into another bowl tonight. 

Kale salad is one of those salads that holds up beautifully at a barbecue or picnic since the kales hardier than lettuce  and doesn't wilt as easily. Most nights I prep the salad before Colt gets home so we can sit on the patio and read our books while he starts the charcoal. 

I just finished reading Cinder by Marissa Meyer after Lorna suggested I had to read it and moved on to Scarlet. So far I'm totally loving the series and the fact it gives me something to talk with her about.

To me it's the little things in life that make me happy..

Like a big bowl of Kale Strawberry Blueberry Salad on the patio with a book and lots of sunshine.
It couldn't get much better then that.

          Pizza's a Friday night staple in our house.
It take the fuss and hassle of deciding what's for dinner at the end of a long week.
Since the weather's been amazingly gorgeous in Washington the last few weeks we've been some pizza grilling fools.
So when we were planning Mas's 9th Birthday Party and he requested pizza for dinner I knew as long as the weather was nice Grilled Pizza it was.
I still can't believe he's already 9! 
Times gone way to fast, I wish I had a time slowing machine to keep them young just a little bit longer....
He's the ham in the house and always keep us all entertained.

Since it's Friday and bound to be 5 o'clock somewhere I figure right nows a good time to share one of our summertime favorites Strawberry Mojitos.

Our garden became over run with mint over this last year since I've pretty much given up any form of bending and stooping (meaning no gardening), in hopes that at some point me and my back will have a normal relationship where I don't wish to remove half of it.

Any who.... Sorry I didn't mean to start rambling on about my dysfunctional back again..

So back to the story at hand Colt spent the better half of the day pulling mint that was about 4 feet tall in a good 4x10 section to plant the tomatoes and a few other things a week or two back.

For now the mint is gone but let me warn you..


Or all you will have is a bed of mint and it's a pain in the patootie to remove.
It over took everything! I strongly suggest mint as a container only plant. 

So Colt then put some of our mother load of mint to use making these Strawberry Mojitos which just happen to be one of our favorite summer time cocktails and a few mocktails for the kids.

Happy Father's Day to all the wonderful Dad's! 
I knew Perfectly Pan Seared Steak would be perfect for Fathers Day Sunday Supper.
Then I saw lobster tails went on sale and new a Perfectly Pan Seared Steak smothered in Hollandaise Sauce and topped with a few slices of Lobster Tail was going to be the perfect man food to show Colt  just how much we appreciate and love him! 
He's really done a lot this last year to do so many of the things I've been unable to do.
He's come home after work to make dinner when my pains become unbearable and all I can think of is crawling into a ball.
He'll say don't worry about it we can handle this.
Colt's snapped almost all of my finished photos this last year including the one above, he's gained a lot of patiences with my picky ways of angles and plating.
But most of all he is and has always been an amazing Father.
He's patient and understanding.
Loving and kind.
When the kids were little he would lay next to their beds and read to them until they feel asleep, many nights after a long day at work.
I can't tell you how many times I had to wake him up slumped over on their beds.
I'm also extremely thankful for my own Father.
He's spent endless hours this last year taking his Grandkids to keep them occupied or taking me to appointments when Colt was unable too.
My Dad's always their for us no matter what time of day or night it is.
I feel blessed to have such wonderful men in my life.

This is one of those salads we live off of the minute the weather becomes warm. It's so easy and fast, perfect to make after a long day playing at the lake.

Our kids love the fruit so it makes it all the easier to get them to devour salad for dinner without a complaint. Plus the poppy seed dressing is to die for.

My only complaint is they never seem to leave me leftovers for lunch, so make sure to make extra. But if you do make sure to store the lettuce separate so it doesn't become wilted.

          I've been working on a skillet revolution lately because I hate always having a never ending pile of dishes growing in the sink plus some nights dinner done in under 30 minutes leaves me jumping for joy.
The one thing I always loved about Hamburger Helper was the one skillet to clean and how easy it was to make.
No one should have to fill the dishwasher multiple times per day, unless you have 10 kids then I am so sorry for the dishes and laundry I can only fathom how crazy this drives you.
Just the thought makes me want to pull the hair out of my head.

          It's that time of year where blueberries are in abundance and as sweet as ever.
I sadly discover this last week my 3 blueberry bushes were choked out from the mint that over ran my bed after last summers neglect.
It was a sad moment but Colt has promised to find me some new bushes and a better location.
He also spent the weekend pulling out more mint then I could image to reclaim the bed, planted tomatoes and a fig tree so I'm hoping by the end of summer for a bounty of goodness.
I guess this year a trip to the blueberry farm will be in order to fill the freezer with one of my favorite summer time fruits.

           I made this delicious Italian Tortellini Pasta Salad Saturday night because Lorna had a friend over for dinner and Colt had volunteered to barbecue chicken.
 This salad is great as a main course on a hot day or an easy side dish for a crowd.
I love the crunchy tomatoes, cucumber and bell peppers paired with artichoke hearts, olives and the cheese filled tortellini's then drizzled with an easy homemade italian dressing.
Once in awhile I'll also add a chopped chicken breast or salami but this dish is hearty enough on it's own.

             I can't believe we are to June already and the kids are at the end of the school year! 
Where has the time gone?
This Creamy Tomato Tortellini Soup might seem out of place with summer right around the corner but we live in Washington so you never know what kind of weather we might have plus it's so good I would hate to hold out on you until fall.
This is one of those soups that makes your want to shove yo face into it.
 The kids asked if I would make it 2 nights in a row and LJ (the boy who doesn't like cheese) dug in for seconds.
Plus did I mention dinner is done in under 30 minutes making it an easy dinner or lunch for any day of the week.
