Chocolate Pudding Cheesecake

I made Chocolate Pudding Cheesecake last week when I was having a massive dilemma..

I was craving chocolate pudding, and cheesecake, but wanted something that didn't take hours to make like traditional cheesecake. So I finally decided on Chocolate Pudding Cheesecake, since one of the most requested desserts in our house is Banana Pudding Cheesecake.

I figured it would be equally as delish, and I was right. The cream cheese adds a certain richness without being overly sweet which I love, and the family does too.

I made the Chocolate Pudding from scratch because that's usually what I do, and it really doesn't save that much time using a chocolate pudding box. Plus I like a pretty prominent chocolate flavor that can only be achieved with a scratch pudding.

It ended up tasting like magic in a pie plate rich, creamy, smooth, with the best chocolate pudding meets no bake cheesecake. If you're a serious chocolate lover it will probably leave you a little weak in the knees.

Spiced Candied Hazelnuts

Spiced Candied Hazelnuts are up in our house at the moment and the smell is amazing. 

Colt took me out to lunch a few weeks back to Pike Place Market between a Doctor's appointment and Physical Therapy to the The Athenian which just happens to be one of the shooting locations for Sleepless in Seattle. Who doesn't love a little Tom Hanks and Meg Ryan?

Anyways they have this salad called Athenian Salad with Spiced Hazelnuts, Green Apple, and Bleu Cheese that has me hooked. It's like all the flavors of fall in a perfect salad. 

So I decided to recreate it at home but did Spiced Candied Hazelnuts just to take it to the next level. 

OMG it's seriously so delicious.  I just can't get enough. I think you'll love my version of Apple Salad with Candied Hazelnuts as much as we do.

For now here's the recipe for Spiced Candied Hazelnuts, because they are amazing on their own, in salad, over ice cream, or as a garnish for dessert.

This soup comes out of a love for Tomato Basil Soup and Cheesy Bread.  Sometimes I just need a quick healthy weeknight meal and this is it!

I love Tomato Basil Soup but my kids have a strong dislike for grilled cheese well 2 out of 3 kids. This happened thanks to my Dad. He had babysat the kids a few years back while we went out of town and his specialty is Grilled Cheese. When I say specialty I mean they went through a lot of cheese, like 2 2lb blocks of cheese with in 5 days.

Yes I meant a lot of cheese..

At least my kids were fed well even if they did have to consume a lot of high fiber food upon my arrival home.. I won't go into details I think you get the idea..

This however hasn't hindered their love of Cheesy Bread..
