I made Chocolate Pudding Cheesecake last week when I was having a massive dilemma..

I was craving chocolate pudding, and cheesecake, but wanted something that didn't take hours to make like traditional cheesecake. So I finally decided on Chocolate Pudding Cheesecake, since one of the most requested desserts in our house is Banana Pudding Cheesecake. I figured it would be equally as delish, and I was right. The cream cheese adds a certain richness without being overly sweet which I love, and the family does too.

I made the Chocolate Pudding from scratch because that's usually what I do, and it really doesn't save that much time using a chocolate pudding box. Plus I like a pretty prominent chocolate flavor that can only be achieved with a scratch pudding.

It ended up tasting like magic in a pie plate rich, creamy, smooth, with the best chocolate pudding meets no bake cheesecake. If you're a serious chocolate lover it will probably leave you a little weak in the knees.

Summer's coming to a close, and with that Buddy our beagle has been moping around the house. He already misses following Logan around all day, and laying across his lap. They really are best friends. Buddy has been waiting patiently at the door for LJ to come home from school each afternoon.

Apparently, I'm just not as exciting as his best friend, but we seem to make due while the kids are gone. He's like one of the kids, so I had to find a way to perk him up in the morning after LJ leaves.

Spiced Candied Hazelnuts
Spiced Candied Hazelnuts are up in our house at the moment and the smell is amazing. 

Colt took me out to lunch a few weeks back to Pike Place Market between a Doctor's appointment and Physical Therapy to the The Athenian which just happens to be one of the shooting locations for Sleepless in Seattle. Who doesn't love a little Tom Hanks and Meg Ryan?

Anyways they have this salad called Athenian Salad with Spiced Hazelnuts, Green Apple, and Bleu Cheese that has me hooked. It's like all the flavors of fall in a perfect salad. 

So I decided to recreate it at home but did Spiced Candied Hazelnuts just to take it to the next level. OMG it's seriously so delicious.  I just can't get enough. I promise I will share the recipe for the Salad sometime next week. 

For now here's the recipe for Spiced Candied Hazelnuts, because they are amazing on their own, in salad, over ice cream, or as a garnish for dessert. 

Make them, eat them, and thank me later.

I love how easy  Gluten Free Cheesy Tuna Noodle Helper Skillet is. It is another one of my favorite easy skillet dinners, and almost as easy as Tuna Helper.

We almost always have the ingredients for this skillet in the cupboard saving a trip to the grocery store.

This works great with gluten free brown rice noodles or regular pasta, I've made it both ways. Tuna's so inexpensive and  we can do to slash our grocery budgets a good thing, I know so many of you are in the same boat.

Even though this is a budget friendly dinner it's full of flavor and something I would make regardless of if we were on a budget or not because it's just that good.

I decided to update the recipe card, and re-share this recipe since it's a family favorite. When I originally shared this Tomato Basil Soup with Cheesy Bread Georgia Pellegrini remade this recipe on Tasty Kitchen. It's still such a huge honor she made my recipe. I'm sure you'll love it as much as we do.

This soup comes out of a love for Tomato Basil Soup and Cheesy Bread.  Sometimes I just need a quick healthy weeknight meal and this is it!

I love Tomato Basil Soup but my kids have a strong dislike for grilled cheese well 2 out of 3 kids. This happened thanks to my Dad. He had babysat the kids a few years back while we went out of town and his specialty is Grilled Cheese. When I say specialty I mean they went through a lot of cheese, like 2 2lb blocks of cheese with in 5 days.

Yes I meant a lot of cheese..

At least my kids were fed well even if they did have to consume a lot of high fiber food upon my arrival home.. I won't go into details I think you get the idea..

This however hasn't hindered their love of Cheesy Bread..

That is the story of how Tomato Basil Soup With Cheesy Bread was born.


Lemon Zucchini Bread

Lemon Zucchini Bread Recipe
Tis the season of endless zucchini from our garden, so I made a loaf of Lemon Zucchini Bread to celebrate! 

It was the perfect addition to brunch last weekend. The flavors are bright, and light from the lemon. No one will even realize it's loaded with zucchini, unless they see the little green specks. I'm lucky if a loaf lasts a few hours in our house.

I will usually pre-shred, and measure the zucchini to freeze, so I can make loaves throughout the winter. It's the perfect way to make sure your zucchini doesn't go bad.

If I'm going to be honest the biggest reason I grow zucchini is to make all the different types of breads and cakes like:
It's almost all about the desserts, right? Is that bad?

Never mind don't answer that..

I also make Zucchini and Summer Squash with Ginger quite a bit, which is a simple side if your looking to change things up. The strong flavors pair perfectly with the zucchini.
