So I made Cheesy Ranch Cauliflower to go with the chicken. I tossed the ingredients in the oven while Colt started to open up the wall to find the broken pipe. It also had me thinking it would be a delicious addition at a St. Patrick's Day get-together whether at home or something to bring since the chicken and Cheesy Ranch Cauliflower are super easy to assemble. It's also kid friendly which is always a win in my book!

To make Cheesy Ranch Cauliflower cut up 1 head of Cauliflower. Toss it with about a tablespoon of Olive Oil, and 1/2 teaspoon Salt, until well combined. Spread evenly on a baking sheet and cook at 375° for 18 minutes or until tender.
Brush or drizzle cauliflower with your favorite Ranch dressing and cover with Shredded Cheddar Cheese. Return to oven until cheese is melted.
Cheesy Ranch Cauliflower is one of the kids' favorites! You can use as little or as much ranch and cheese as you like to suit your preferences. I usually will just brush a light layer on for flavor.  
The one tip I have for making the Cooked Perfect Fire Grilled Lemon Herb Chicken is to brush it with a little pan juices when you take it out of the oven to give it that nice shiny glaze.

Cheesy Ranch Cauliflower

Cheesy Ranch Cauliflower is an easy to make healthier alternative to potatoes and a favorite side dish with the kids.

  • 1 head Cauliflower
  • 1 tablespoon Olive Oil
  • 1/2 teaspoon Salt
  • 1/3 cup Ranch
  • 1 cup Cheddar Cheese, Shredded


  1. Preheat oven to 375°
  2. Toss cauliflower with olive oil, and salt. Spread in a single layer on a baking sheet. Cook for 18 minutes or until cauliflower is desired doneness.
  3. Brush or drizzle with ranch and cover with cheese. Return to oven for 2-3 minutes or until cheese is melted.
  4. Serve alongside Cooked Perfect Fire Grilled Chicken.
