One Skillet Caribbean Curry Chicken Red Beans and Rice recipe is an easy dinner in under 30 minutes. serenabakessimplyfromscratch.com

Thank you Safeway and Albertsons for sponsoring this post. All thoughts and opinions are my own.

If you follow me on Instagram you had seen I spent some time with Safeway and Albertsons at the 'Organics For All™' event with O Organics® a few weeks back. I had a wonderful trip.

We started out our day with a delicious Overnight Oats Breakfast Bar, I can't wait to make for the next time we have company overnight, and then had a wonderful cooking demo with Registered Dietitian Anissa Chumbley.

We then had a chance to hit the kitchen with O Organics® where my team decided to make the most heavenly Berry Muffins. Then we had an opportunity to look over all the amazing O Organic® products and see things that might not be available yet in our local stores!

The time with O Organics®, and all the other amazing bloggers left me inspired to hit the kitchen. Colt and I headed to our local Safeway store to pick up a few ingredients to make Caribbean Curry Chicken Red Beans and Rice. It's a faster version of two of my favorite things at the moment: Jamaican Curry Chicken with Coconut Red Beans and Rice.

I use to work with this wonderful women named Nathalie who volunteered on the employee committee, and hooked me on Jamaican Curry Chicken. If you've never had it you've been missing out!

Jamaican Curry Chicken is usually one of those long, and slow dishes that cooks the better part of the day, so I decided to create a Caribbean Curry Chicken Red Beans and Rice as a quicker fusion that can be made in under 30 minutes on a busy weeknight with all the flavors we love.

Safeway O Organics Organic for All Event.

We had a group of 33 bloggers all with an interest on a healthy lifestyle using O Organics®. It was great to meet so many people with similar goals.

Dice 1 pound Boneless Skinless Chicken Thighs or Breast. I chose thighs for this recipe for the flavor, but chicken breast can be used instead.

Toss Chicken with 1 1/2 tablespoons Jamaican Curry Powder, if using your hands make sure to wear gloves as the curry powder will turn your hands yellow.

Cilantro Lime Rice

Thursday, August 6, 2015
Easy to make  Cilantro Lime Rice recipe made with Jasmine Rice is the absolute BEST! Better than Chipotle's! It makes a great side dish with Mexican or Asian night!

We usually have Mexican Food night at least once a week since we're a bunch of Mexican Foodaholics in our house, and Cilantro Lime Rice is a staple.

I'm pretty sure we could live the rest of our lives off of Mexican food and be completely content.

We either make Cilantro Lime Rice or our other favorite Restaurant Style Mexican Rice to go with the meal. It's sort of a copycat of Chipotle's Cilantro Lime Rice but according to the fam it's even better.

I'll let you be the judge of that for yourself!

But I do know this rice packs plenty of flavor and makes a nice light side dish. It's also super easy to make which is a win in my book.

Herb Quinoa

Herb Quinoa
So this is my story... I had bought quinoa awhile ago and figuring the kids and the husband might find repugnance to the new grain on the dinner plate.  I hid it waiting for a good opportunity. This was the night! I was making salmon and decided to try the quinoa on the side. Surprise, surprise, all the kids loved it and my middle son asked to have it again the following night. So we will be adding this into our regular rotation instead of rice. The kids thought it was like sticky rice and my husband became inquisitive with questions and interest. It reminds me of a mix between rice and couscous. So be bold be brave and give it a go. I found mine organic in the bulk section of the local super market and it was pretty inexpensive.
2 cups chicken broth (I used homemade)
3 teaspoons chopped chives, 2 teaspoons chopped parsley, 1 teaspoon chopped fresh rosemary.
Bring broth to a boil and add 1 cup quinoa. Stir in herbs and lower heat to low. Cook about 20 minutes.

  • 1 cup Quinoa
  • 3 teaspoons Chives, chopped
  • 2 teaspoons Parsley, chopped
  • 1 teaspoon Fresh Rosemary, chopped
  • 1 teaspoon garlic powder
  • 1/2 a Lemon, juiced
  • pinch Salt or more to taste dependent on stock
  • 1/2 teaspoon Pepper or to taste
  • 1 tablespoon Parsley, chopped
Preparation Instructions

Bring stock to boil over high heat. Once boiling add quinoa, chives, parsley (reserve 1 tablespoon for the end), rosemary and garlic powder. Stir, return to simmer and turn heat to low. Cover and cook 20 minutes. Fluff with a fork, squeeze lemon juice over and add salt, pepper and remaining tablespoon chopped parsley. Serve with your favorite meat in place of rice.
