Spicy Jalapeno Mango Shrimp

*Recipe Update*
I thought as school is quickly approaching it's the perfect time to revisit a favorite healthy busy weeknight meal in our house. This was one of the very first recipes I shared on the blog.
 The sweetness of the mango paired with the spiciness of the jalapeño and hot sauce with the cilantro makes this a family favorite for a quick healthy weeknight meal or even a light lunch and is easy enough for Colt to make. 
Spicy Jalapeno Mango Shrimp
On another note as I write this I have learned so much about myself and the kindness of strangers and the love of my family for me in the past weeks.
I am learning to give up control of many things I would find frustration in if they weren't perfect.
Colt and the kids have been doing all the house work on there own, even the most basic tasks like rinsing off my plate, sitting for a extended period of time, doing my hair and carrying my own purse have become impossible at the moment.
I've always given the kids chores but choose to fold the laundry myself and load the dishwasher so it was done to my liking along with numerous other tasks. 
Now I'm learning it's really not a big deal if the clothes aren't folded just the way I like or one dish makes it into the dish washer and needs to be rewashed.
I've had a few melt downs because I miss most of the basic things I did in life that I took for granted and I want to be enjoying the summer with my kids but I'm thankful to be here.
I was always the one who took care of everyone else but now Colt and the kids are taking care of me and I try to celebrate the little milestones of recovery.
I'm learning to allow other people to do for me and that my stubbornness only leaves me in more pain.
I've learned it's not the end of the world if the laundries not folded right, it's best to have patience and wait for help instead of trying to do something my bodies not capable of doing on its own.
I'm also learning to listen to my body better and not push myself to the brink.
I've learned that so many people I haven't met personally care so much and I am thankful for everyones kind words of encouragement.
I shared this because I feel blessed to be here and also because I've learned some valuable lessons during this time of how to let little things go.
I know so many other people struggle with the kids not folding the laundry to their liking or whatever the task might be but I want to tell you they are capable and it might not be to your liking but by doing it, it's the only way they will learn.
So if your like me give up a little control and worse case refold the laundry later! 
It's a lesson in parenting and marriage I've learned the hard way.

This is one of our favorite family quick meals to make, all the kids love it. It's so light, perfect for a night when the kids have sports! My son's prefer white rice so my trick is a 50/50 split of white and brown, they didn't even notice.Such a delicious meal and is done in the time it takes to make the rice!

First off pour yourself a nice glass of white wine before proceeding further.
Taste testing and quality control is always of the up most importance.

Squeeze 1/2 a lime over the top of 2 Mango's.

Sauté onion in 2 tablespoons oil until start over med-hi heat.

Add Jalapeño and Garlic, cook until softened.

Add 1pound of shrimp and turn when bottom of shrimp is mostly pink.

Add white wine.

Soy Sauce, I use Tamari Gluten Free Sauce.

Add hot sauce of choice I like either Cholula or Sirarcha to taste.
How spicy this dish is really comes down to the how hot the jalapeño is and how much hot sauce you use. Cook until shrimp are pink on both sides.

Add Mango, Cilantro and additional half a Lime. Stir until heated through.

 Stir until heated through and serve over rice.

Spicy Jalapeno Mango Shrimp

Total time: PT25M
Yield: 5 Servings
Ingredients
  • 2 tablespoons Olive Oil
  • 1/2 whole Large Onion, Diced
  • 4 whole Cloves Garlic, Minced
  • 1 pound Shrimp
  • 1/4 cup Dry White Wine
  • 2 tablespoons Soy Sauce
  • Hot Sauce To Taste
  • 3 large Mangos, Diced
  • 1 whole Lime, Juiced
  • Rice Or Noodles For Serving
Cooking Directions
  1. Put 1/2 of lime juice over mango's and set aside.
  2. Heat olive oil in skillet until hot over med-hi heat add onion and saute until starting to caramelize.
  3. Add garlic and jalapeno cook until softened.
  4. Add shrimp to pan and turn when just barely pink.
  5. Add white wine, soy sauce and hot sauce, cook until shrimp are pink on both sides.
  6. Add mango with juice, remaining lime juice and cilantro.
  7. Cook until heated through approximately 2-3 minutes.

  3. Wow Serena, this recipe sounds delicious. I love the sweet and spicy combination you have going on with the shrimp. Definitely going to pin this one. :) FYI - totally understand that its hard to give up control, but there is freedom that comes with it! :)
