Perfect Waffles with Strawberries and Whipped Cream *Updated*
I hope everyone had a wonderful Christmas and a fabulous New Years! 

We were lucky enough to visit with some of our closest friends, eat great food, like these Brown Butter Brookies and play a few games. Then we returned home to find one my recipes was published in Foodie: Game Day Eats Edition! How awesome is that!

On another note way back in September  Colt threw out our 15 year old waffle iron when all the waffles kept sticking and his patients grew thin, no matter how well he greased it and we were blessed with a new waffle iron for Christmas. I can't believe we haven't had a waffle until now! It feels like forever! 

What a perfect excuse to update the pictures for the blog and indulge in these perfect waffles. I can't tell you how much I've missed these. So light and crisp, perfect to smoother in strawberries and whip cream. The perfect start to any morning.

 So last night our daughter was up most of the night with horrible hive's.
 It started at 9 p.m. with a few hives on her stomach and I gave her a benydryl and sent her to bed. I finally feel asleep at 11:30 to be woken up at 12:15a.m. by her in the bathroom scratching away like mad! Of course me being tired and groggy I said "what are you doing you need to be asleep!" So once I pulled my self out of the coma I wanted to be in,I went to check it out and saw her chest, both inside of her arms and inside of her legs where covered in hives! Her Dad finally arrived home from work at this point and tells her to go take a luke warm shower and changed the bed sheets! He's a good man! I gave her a second benydryl and anti itch cream and it seems today to be gone..So by 3a.m. we were all finally back asleep and the hives seem to be gone! I still can't figure out what caused them. So my sweet husband when he got up this morning made my favorite strawberry waffles with whipped cream. This is one of my favorite breakfast items along with puff pancakes my grandmother made me almost every morning for years and french toast!

I was stuffed wondering should I finish it? How could I not!
(Just for the record look how little and cute Mas and LJ are. I think I feel a case of the tears building looking at how much they've grown.) 
In a medium sized bowl combine flour, baking powder, cinnamon, sugar and salt. 
Mix until well combined.
In a small bowl combine milk, egg yolk, oil and vanilla. 
Mix until well combined.
Add milk mixture to flour mixture and stir until just combined.
Mixture will still be slightly lumpy.
Add 2 egg whites to a mixing bowl and beat on medium high speed until stiff peaks form.
Egg whites will look like this.
Add egg whites to waffle batter mixture.
Fold egg whites into batter mixture until incorporated. A few white streaks of egg whites might  remain. 
Cook waffles according to manufactures directions on waffle iron.
Aren't the strawberries gorgeous?
Slice 1 pound of strawberries and add sugar to taste.
Stir well and allow the berries to form a juice while waffles cook.
Serve waffles with strawberries and sweetened whip cream or butter and syrup! 
So delicious!

Perfect Waffles from Serena Bakes Simply From Scratch.

  • 1 3/4 cup All-Purpose Flour
  • 1 tablespoons Baking Powder + 1/2 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 1 tablespoon Sugar
  • 1/4 teaspoon Salt
  • 2 whole Egg Yolks
  • 1 3/4 cup Milk
  • 1/2 cup Cooking Oil like Grape Seed or Canola
  • 2 teaspoon Vanilla
  • 2 whole Egg Whites
  • 1 pound Strawberries, Sliced (optional)
  • 2 tablespoons Sugar Or To Taste
  • Sweetened Whip Cream


  1. Stir together flour, baking powder, cinnamon, sugar, and salt. Set aside.
  2. In a separate bowl mix egg yolks, milk, oil, and vanilla. Dump into flour mixture, and mix just till combined.
  3. Beat egg whites until stiff peaks form. Fold beaten egg whites into flour mixture being careful not to over mix. A few white streaks may remain, do not over mix.
  4. Bake according to waffle maker instructions until golden brown.
  5. Mix strawberries, and add sugar to taste. Allow strawberries to sit while waffles bake.
  6. Serve waffles with sweetened strawberries, and whip cream.

  5. Hi Serena. These waffles look absolutely wonderful! I have been thinking about making/eating waffles lately, too. It must be something with the weather or January or needing some comfort food after the sadness of having to put away the Christmas decorations. Anyway, thanks for sharing this great looking recipe. I am going to use it tomorrow! I like to make breakfast for dinner on Sunday evenings.

  8. Your recipe says 1 tablespoon baking POWDER then says 1/2 Teaspoon baking POWDER. Is one baking soda? Which one?

    1. Hi Karen, Its both! Its 1 tablespoon plus 1/2 teaspoon baking powder. Sorry for the confusion, I use a program that makes my recipes internet compatible and it had to be written that way! Thanks, Serena
