Healthier Caesar Salad Dressing

It's been super hot here the last few weeks, way warmer then usual for Seattle so we've been barbecuing and enjoy cold foods as much as possible in an attempt to keep the house cool. 
When the weather's hot Caesar Salad is a staple in our house.
Sometimes we enjoy it as a side but more often then not we toss in a little grilled chicken or steak and call it a meal.
The other night we stuffed it in pita bread for a quick and easy dinner.
The kids always love when I serve things in pita bread and it makes an easy lunch or dinner on the go.
I usually make Caesar Salad with this Healthier Caesar Salad Dressing to cut back on calories and increase the protein by using low fat greek yogurt over traditional egg yolks or mayonnaise for a healthier option.
This dressing is so easy to make you will no longer have a need to buy dressing from the store.

This weeks Sunday Supper theme is Potato Appetizers using Idaho® potatoes so I knew I had to share our favorite Fully Loaded Baked Potato Skins.

We love Fully Loaded Baked Potato Skins because they are hearty, easy to make and perfect finger food as a appetizer, for a crowd or a light dinner.

I like to lightly salt the potatoes before baking for maximum flavor and the filling options are endless. On this occasion we stuck with a traditional Fully Loaded Baked Potato Skin because you can never go wrong with melty cheese, crispy bacon with a large dollop of sour cream, a sprinkle of chives in a crispy lightly salted potato skin and if this is wrong I don't want to be right! 

Another favorite filling idea is taco seasoned ground beef, cheese, sour cream, avocado and salsa.
Just for the record I've never met a potato skin I didn't like!

Chocolate Strawberry Poke is perfect for a party or bbq from Serena Bakes Simply From Scratch.
This one goes out to all my chocolate strawberry lovers out there.. You know who you are! 

I was craving strawberries and chocolate the other day so I decided to combined the topping from this  Strawberry Shortcake Poke Cake and this Moist Chocolate Cake to create the perfect Chocolate Strawberry Poke Cake.

Moist chocolate cake with fresh strawberry filling pushed into the holes and covering the top, refrigerated to allow the strawberry flavor to permeate the cake and take it to the next level then I covered the cake in whip cream because we all know whip cream is always a good thing.

It's easy enough to make for dessert for the family but fun enough to serve at your next gathering or party! The only bad thing is it won't last long.

Bacon Wrapped Balsamic Marinated Sirloin Filet

This week Sunday Supper is celebrating Dad with Certified Angus Beef® brand and Summer Grilling  Recipes.
In honor of one of the most amazing Dad in my life I used a Certified Angus Beef® brand sirloin steak, marinated it in a rosemary garlic balsamic mixture and then wrapped it in bacon because the two things I know Colt truly loves to eat is a really good steak and bacon.
Then Colt took over and grilled the steaks to perfection! 
Bacon Wrapped Balsamic Marinated Sirloin Filet will be a summer staple with the warmer weather and the perfect steak to celebrate Colt.
He's always so selfless with our kids and works so hard to teach the boys how to be truly good men.
I love watching him teach the kids how to build or fix stuff and he always takes the time to play Lego's, video games, basketball or whatever else the kids want to do.
I find the little bit of time he invests in our kids is always returned 10 folds and makes my job of being a Mom a little bit easier.
I highly suggest using Certified Angus Beef® brand sirloin for this recipe because it is the best Angus beef available on the market and is more selective than USDA Choice or Prime.
They raise their beef to be amazingly tender, juicy and full of flavor.
We had also tried a strip steak and I can honestly say both steaks were a cut above the rest. 
Worthy of a special occasion but perfect for any night of the week.

Nectarine Summer Salad With Prosciutto Blue Cheese And Lemon Rosemary Thyme Vinaigrette from Serena Bakes Simply From Scratch.

Grammies in town so she took the kids last night so Colt and I were left home alone..

So when Colt came home we hit the kitchen for a date night in. We scavenged through the fridge and came up with this years summertime salad must have: Nectarine Summer Salad With Prosciutto Blue Cheese And Lemon Rosemary Thyme Vinaigrette.

Whew that was a mouthful! 

Sorry, not sorry for the long name but I wanted to make sure you understood just how amazing this salad is. The dressing is light and fragrant followed by the sweet bites of nectarine, thin salty slices of prosciutto and sharp, salty bites of blue cheese.

Every bite was an amazing mouthful of flavor explosion.

If blue cheese isn't your thing feta or goat cheese would make a great substitute. Chow down, mow down, devour! It won't last long.

I've been wanting to share this recipe for Frozen Root Beer Float Pie for quite some time.
It's smooth and creamy with the flavor of a root beer float, what's not to love?
The fillings a simple root beer custard made from scratch poured into a graham cracker crust, frozen and then covered in sweetened whip cream with a cherry on top. 
If that doesn't leave you salivating I don't know what will.
So when I saw this weeks #SundaySupper theme was backyard barbecues and potlucks I knew this was the perfect recipe to share.
Frozen Root Beer Float Pie is the perfect dessert on a hot day and fairly rich so a thin slice goes far.
We then paired it with Gallo Family Vineyards Pinot Grigio since it's a clean crisp wine perfect for a hot summer day or Gallo Family Vineyards Merlot as a delicious versatile red wine option.
We all know that root beer floats are an iconic summer time treat so this fun spin on a summertime favorite is sure to quickly become a cherished recipe.

Lightened Waldorf Salad

Lightened Waldorf Salad is a timeless classic dish for picnics and potlucks.

It's hot here, the suns shining, and schools out in less then a week.

Can school really be out already? Didn't it just start?

I went through that reality moment last week we are only a few blinks away from Lorna graduating High School when she told me they already had a moving up ceremony, and she's now a Sophomore. I was just getting use to the idea she was a Freshman, I'm not sure this Mom can handle this!

Can't I shrink them back into little people with kissable toes that like to snuggle on the couch? The cool thing about the kids getting older is I can look back and realize we've done a pretty amazing job with the kids even if half the time we've been flying by the seat of our pants.

So with the beginning of the first day of summer almost upon us I am officially craving Waldorf Salad.
It's one of those classic picnic or potluck dishes that was a standard dish at family gatherings.
I remember my Grandma Lorna whipping up Waldorf Salad for family picnics on a few hot summer days.

I lightened this classic dish by cutting back on the mayo and adding greek yogurt. If someone had told me there was mayo in this dish before I tried it I probably would have turned my nose up and run the other way but trust me it's delicious! 

I've never been big on mayo but it makes for a deliciously creamy dressing with a nice tang that really pulls the flavors of the sweet raisins, apples, grapes and walnuts together.

Then in memory of my Great Grandparents I decided to pull out the depression glass bowl Grandma Lorna gave to me a few years beck that she inherited from my Great Grandma Sachs. I think my summer goal will be to fill this bowl with gorgeous food instead of hiding it in the china hutch since every meal should be a celebration.

Fontina Chorizo Spinach Quiche

I had originally planned on sharing a crock pot mac and cheese with you today but the recipe still needs some perfecting and I kept dreaming of Chorizo Spinach Quiche and Fontina Cheese. I love Fontina's slightly nutty flavor and smooth creamy texture.

While Colt and I were out shopping we spotted fresh Chorizo in the meat case and knew Fontina Chorizo Spinach Quiche had to be made.  My kids usually like breakfast for breakfast and dinner for dinner. So they thought I might be losing it when they found out I had quiche planned for dinner but it was quickly devoured and I was barely able to hide the last piece for lunch the next day.

Colt and the kids all requested Fontina Chorizo Spinach Quiche be added to the regular breakfast and dinner rotation so I know the combo was out of this world.

My Favorite Tips and Tricks For Keeping Hydrated.

Lorna was instructed last week from the Doctor that she needs to be making sure she is consuming plenty of water.
One of her biggest complaints I encountered is she hates the taste of tap water out of the fountain or faucet and it's not practical for her to carry around numerous containers of bottled water especially at school or on the go.
So when I found a Hard Sided Brita Filtered Water Bottle in the Hardware section of Walmart I figured it was worth a try.
Our tap water dilemma on the go was solved.
My Favorite Tips and Tricks For Keeping Hydrated a Brita Filtered Water Bottle.
The filter in the water bottle gives her the same clean taste as our filtered water making consumption less of a chore.
Her Doctor also recommended setting a timer like a watch or a cell phone so she remembers to consistently drink plenty of water and isn't waiting until she's thirsty.

I also loved that the Brita Filtered Water Bottle has easy to read markings on the side in milliliters and ounces to help Lorna keep track of just how much water she's consumed in the day.
Just since I've surprised her with the bottle I've noticed she's drinking a lot more water and when we were at the park she was no longer was complaining about the taste of water out of the fountain.
The boys even asked if they had any other colors at the store and if I would buy them one next time I go by Walmart.
Lucky for them there were a few color options to choose from and the filtered water bottles are much less expensive over time then bottled water! 
We found adding a little ice to the water bottle before leaving home can help keep refills cool on a hot day.
