Coconut Pudding Cheesecake
For this month's recipe challenge we decided to round up our favorite no bake recipes. After a little contemplation I decided I was long over due to share this Coconut Pudding Cheesecake! Hopefully I don't get kicked out of the group for fudging the rules a little bit since the crust has to be baked, but if your really looking for a no bake option I can turn my head the other way while you pick up a pre-made graham crack crust from the store.. You do what you have to do when the weather is hot! 

Coconut Pudding Cheesecake is like a little slice of heaven for your taste buds, even Colt who's not fond of coconut couldn't get enough! After he ate the first slice he said, "you know I really don't care for coconut, but OMG that is so good I just can't get enough!" Yes, it's that good! I strongly suggest making it to take to a 4th of July barbecue or picnic, it won't last long!

Ambrosia Salad
Ambrosia Salad is one of those heavenly salad's. It's a year around holiday staples that's a necessity for gatherings, whether it be for a 4th of July BBQ, Thanksgiving, or Christmas it's loved by young and old a like, frequently enticing childhood memories with each luscious mouthful. In Greek mythology Ambrosia was the food of the Gods and the name is only fitting for such a delicious spin on a traditional fruit salad.

There is many variations of how to make Ambrosia Salad from vanilla pudding to cool whip, but my version of Ambrosia Salad uses as many fresh ingredients as possible, minus the marshmallows and unsweetened flaked coconut, which both could be done from scratch if time allows. I used honey as the sweeter,  greek yogurt, and fresh cream, to make a heavenly sauce. Then I added fresh pineapple, mandarin oranges, and fresh cherries. Maraschino cherries can be substituted in the winter time, or when fresh cherries are no longer available but I find the fresh cherries really add a wonderful burst of flavor to this classic salad.

Ambrosia Salad is positively to die for!  Make it this summer for a picnic, for 4th of July, in the Fall a few times just because, and in the winter since the pineapples and oranges are the best. It's a must for any gathering no matter the time of year!

Italian Chicken Pasta Salad with Basil Vinaigrette is probably one of the most popular summertime dinners we make! A cold but heart pasta salad is the perfect ending to a hot summer day and it usually produces enough salad for leftovers the next day. It's one of those dishes the family never tires of and is always a favorite at summer barbecues and picnics. The Basil Vinaigrette adds a wonderful depth of flavor to this salad. Even the kids just can't get enough.

Since we eat Italian Chicken Pasta Salad with Basil Vinaigrette at least once a week when the weather is hot I figured it was long overdue for new photos and a few updates to the recipe.

Even though this Dill Smoked Salmon Dip sounds fussy it's rather easy to make in under 10 minutes. The flavors only improve after refrigerating overnight, if time allows, but is still delicious served immediately. Dill Smoked Salmon Dip is not only perfect for picnics but great for barbecues and parties! It never lasts long.
Beat 8 ounces Cream Cheese until smooth.
Add 1/2 cup Sour Cream, 2 tablespoons Chopped Fresh Dill, 2 tablespoons Chopped Fresh Chives, 2 tablespoons Fresh Squeezed Lemon Juice, and a generous pinch of Salt. Mix until well combined, scraping sides of bowl frequently.
Add 1 cup Chopped Deboned Smoke Salmon and mix until well combined. Refrigerate until cold or overnight to allow the flavors to develop.

  • 8 ounces Cream Cheese, Room Temperature
  • 1/2 cup Sour Cream
  • 2 tablespoons Fresh Dill, Stems Removed and Chopped
  • 2 tablespoons Fresh Chives, Chopped
  • 2 tablespoons Fresh Squeezed Lemon Juice
  • 1 pinch Salt
  • 1 cup Smoked Salmon, Deboned and Chopped
  • Additional Chives and Dill for garnishing.


  1. Beat cream cheese until creamy. Scrape down sides of bowl.
  2. Stir in sour cream, dill, chives, lemon juice, and salt, until well combined.
  3. Mix in smoked salmon until well combined and broken up.
  4. Refrigerate until cold or overnight.
  5. Garnish with additional dill and chives.

Warm Potato Salad With Tangy Bacon Herb Vinaigrette
The weather was scorching over the weekend, so we took the kids to the beach to try and stay cool. While the kids played, Colt and I tried to decide what to make for dinner, and finally landed on Barbecued Chicken with this Warm Potato Salad With Tangy Bacon Herb Vinaigrette.

If you've never had a Warm Potato Salad it's a must try. It's super easy to assemble, and I love that it's delicious served warm or cold. We eat a lot of different variations of Potato Saladbut Warm Potato Salad With Tangy Bacon Herb Vinaigrette is definitely one of my favorites! I could probably live off the stuff! The combination of warm baby potatoes, fresh dill, chives, bacon, covered in a tangy, grainy, mustard vinaigrette is to die for! I love that I don't have to plan ahead for this recipe since it's served warm and I usually have the ingredients on hand to toss together.
