For this month's recipe challenge we decided to round up our favorite no bake recipes. After a little contemplation I decided I was long over due to share this Coconut Pudding Cheesecake.
Hopefully I don't get kicked out of the group for fudging the rules a little bit since the crust has to be baked, but if your really looking for a no bake option I can turn my head the other way while you pick up a pre-made graham crack crust from the store.. You do what you have to do when the weather is hot!
Coconut Pudding Cheesecake is like a little slice of heaven for your taste buds, even Colt who's not fond of coconut couldn't get enough.
After he ate the first slice he said, "you know I really don't care for coconut, but OMG that is so good I just can't get enough!" Yes, it's that good!
I strongly suggest making Coconut Pudding Cheesecake to take to a 4th of July barbecue or picnic, it won't last long!
Italian Chicken Pasta Salad with Basil Vinaigrette is probably one of the most popular summertime dinners we make! A cold but heart pasta salad is the perfect ending to a hot summer day and it usually produces enough salad for leftovers the next day. It's one of those dishes the family never tires of and is always a favorite at summer barbecues and picnics. The Basil Vinaigrette adds a wonderful depth of flavor to this salad. Even the kids just can't get enough.
Since we eat Italian Chicken Pasta Salad with Basil Vinaigrette at least once a week when the weather is hot I figured it was long overdue for new photos and a few updates to the recipe.
There is something magical and nostalgic about picnics at the park or the beach with friends on a warm day. I love to pack the picnic basket full of treats like Dill Smoked Salmon Dip andto enjoy with family, while playing games, and swimming. Good food has always played a major roll in creating a memorable summertime picnic. When I was young I remember my Mom, Aunt, and Grandma always creating a tantalizing picnic basket full of tasty finger foods to keep everyone satisfied while enjoy a day at the river. A great picnic always has plenty of delicious, simple, and fuss free foods for a memorable meal.
Even though this Smoked Salmon Dip recipe sounds fussy it's rather easy to make in under 10 minutes. The flavors only improve after refrigerating overnight, if time allows, but is still delicious served immediately. Dill Smoked Salmon Dip is not only perfect for picnics but great for barbecues and parties! It never lasts long.
Beat 8 ounces Cream Cheese until smooth.
Add:
1/2 cup Sour Cream
2 tablespoons Chopped Fresh Dill
2 tablespoons Chopped Fresh Chives
2 tablespoons Fresh Squeezed Lemon Juice
A Generous Pinch of Salt
Mix until well combined, scraping sides of bowl frequently.
Add 1 cup Chopped Deboned Smoke Salmon and mix until well combined. Refrigerate until cold or overnight to allow the flavors to develop.
