We eat a lot of almonds in our house, and one of our favorite healthy snacks at the moment is Rosemary Almond Parmesan Popcorn. The rosemary and parmesan gives this snack plenty of flavor, while the almonds add plenty of protein to help keep you feeling satisfied, and energized. The popcorn is high in fiber to promote digestion. It's the perfect mid-day or evening snack to help you stay on track to healthy eating.

Almonds are must if your trying to follow a healthy diet, recent research shows crunching on 1.5 ounces of almonds daily curbs appetite without increasing calorie intake or body weight. They also are an excellent source of antioxidants, vitamin E, and magnesium. 1 Ounce of almonds contains 13 grams of "good" unsaturated fat, and only 1 gram saturated fat.
In a small saucepan add:
- 2 tablespoons Butter
- 1 tablespoon Olive Oil
- 2 teaspoons Rosemary
Stir in 1 1/2 cups Unsalted Roasted Almonds. Sprinkle with 1 pinch of Salt.
Stir cooking for 2-3 minutes to infuse almonds with rosemary.
Pour Rosemary Almonds over 8 cups Popped Popcorn.
Add 1/2 cup Grated Parmesan Cheese, and Salt, to taste. Stir until well combined.
Rosemary Almond Parmesan Popcorn is a great healthy snack to leave you feeling satisfied.
Other great ways to enjoy almonds are keeping a handful in a baggie for easy snacking, you can also add them to your meals throughout the day to add crunch, and protein. I usually will add a few to my morning smoothie, over salad, and even on top of my ice cream in the evening.

Rosemary Almond Parmesan Popcorn is an easy snack with a great punch of protein from almonds to leave you feeling satisfied.

Ingredients
- 8 cups Popped Popcorn
- 2 tablespoons Butter
- 1 tablespoon Olive Oil
- 2 teaspoons Rosemary
- 1 1/2 cups Roasted Almonds
- 1 pinch Salt
- 1/2 cup Grated Parmesan Cheese
- Additional Salt To Taste
Instructions
- In a small saucepan heat butter, and olive oil, over medium-high heat, until melted. Add rosemary, and cook for 1-2 minutes while stirring until softened, and becomes fragrant.
- Add almonds, and a pinch of salt.
- Stir while cooking for 2-3 minutes to infuse almonds with flavor.
- Pour rosemary almonds over popped popcorn. Add parmesan cheese, and salt to taste. Toss until well combined.
