I decided to republish the recipe Pizzeria Style Cheesy Breadsticks since I update the recipe to make it easy to print. They are those chewy buttery garlic breadsticks topped bubbly cheesy goodness that you find at the local pizzeria place.

If your scared of making yeast bread don't be this dough is so easy to make and delivers delicious results perfect to go with a dinner salad, a bowl of soup or a plate of pasta. I'm still devouring comfort foods because Spring in Seattle seems to be no where in site. I've been totally having sunshine withdrawals.

To say that these garlicky breadsticks won't be appearing year around would be a huge fib, they are always favorite.  I'm just ready to ditch the soups and move on to lighter foods like this Strawberry Blueberry Chicken Salad with Orange Vinaigrette  but I can't bring myself to start consuming large amounts of salad, until the warm weather arrives.

I need a few good 65 degree days and some sunshine, it feeds my soul.  I'm ready for a few patio lunches, and dinners with the warm sun beating down. Maybe even a little color to my pale skin, if it doesn't happen soon we may have to move..

But for now it's breadsticks and soup on the menu.

Colt's vote was both and then Reuben Sandwiches with the leftover Corned Beef. He's not much help. 

I'll probably be making Irish Guinness Beef Stew again later in the week to appease Colt for both since overall it's pretty easy to make.

I mean who needs a holiday to make Irish Guinness Beef Stew? The dark stout beer really brings out the flavor of the beef in the gravy for the ultimate comfort food. It's hearty, rich, and stick to your bones delicious.

Salmon Nicoise Salad

Salmon Nicoise Salad is an all time favorite healthy easy dinner salad recipe in our house. It's based roughly on the delicious Nordstoms Salmon Nicoise Salad our family always orders.

We've had some gorgeous weather lately in Seattle and Salmon Nicoise Salad is one of our favorite warm weather dinners.

Even the kids have been asking for this salad the last few weeks, I know we have strange kids with highly developed palates. It's probably because we always feed them the same thing we ate with very few modifications when they where little. 

The only time this becomes an issue is when we go out to eat and none of them want to eat off of the kids menu because the adult menu looks way more appetizing. Hence how we found our they love the delicious Salmon Nicoise Salad from Nordstoms. It's our favorite thing to order off the menu.

The warm crispy potatoes, perfectly cooked salmon, hard boiled eggs, perfectly crisp asparagus, nicoise or kalamata olives and salty little capers over a cold bed of lettuce drizzled with a white balsamic lemon vinagrette makes this a family favorite and pairs beautifully with a glass of Chardonnay or Pinot Grigio.

I promise you this salad will rock your taste buds and leave you satisfied. Absolutely delicious!

If you are hosting a St. Patrick's Day Party this year or just having a festive dinner Irish Brown Bread is a must make recipe.

I first saw this recipe over at That Skinny Chick Can Bake and knew I had to give it a try. Liz said it was the most authentic recipes for Irish Brown Bread she has come across after a trip to Ireland.

Since we won't be going to Ireland anytime soon we try to do the next best thing by enjoying authentic recipes whenever possible.

I made Irish Brown Bread to go with Irish Guinness Beef Stew I'll hopefully be sharing next week, but it would also be amazing with Corned Beef and Cabbage, or just a great sandwich loaf.

I couldn't believe how quickly the bread was devoured, but the texture was perfect. I switched up the original recipe by adding some Guinness to accompany the stew for a lighter loaf, adding a little more brown sugar, and sprinkling some quick oats over the top to make it look pretty.

The best part is Irish Brown Bread is so easy to make.

St. Patrick's Day is almost here and just happens to fall on a Saturday this year. What's your plan? Will you be going out? Hosting a party at home? 
I just happened to have a bag of Cooked Perfect Fire Grilled Chicken and a head of cauliflower on hand the other night when our pipe in our wall started leaking. So I made Cheesy Ranch Cauliflower to go with the chicken. I tossed the ingredients in the oven while Colt started to open up the wall to find the broken pipe. It saved us so much time and money not eating out! It also had me thinking it would be a delicious addition at a St. Patrick's Day get-together whether at home or something to bring since the chicken and Cheesy Ranch Cauliflower are super easy to assemble. It's also kid friendly which is always a win in my book! 
The kids always love Cheesy Ranch Potatoes, so Cheesy Ranch Cauliflower is a little healthier variation with less calories - making it perfect for me! Who doesn't love a quick and easy dinner anytime?

Chicken and Sausage Gumbo

Chicken and Sausage Gumbo
Last week when it started snowing I decided to make Chicken and Sausage Gumbo with all the miscellaneous things I had left over in the fridge from making Cajun Pasta Shrimp Skillet the week prior and some frozen andouille sausage from Shrimp Jambalaya. I also happened to have a few frozen chicken breasts needing to be used up. Colt and I decided we would avoid the grocery store as much as possible the last two weeks, other then a few necessities to use up all the odds and ends we had accumulated.

If you follow me on Facebook you probably saw my post about realizing I had a whole bunch of chocolate chips in my cupboard, and was planning on buying more.. Good thing I looked.. I may also have the same issue with andouille sausage, and a few other things. In my defense I like southern food, and Chocolate Chip Cookies. I like to always have the stuff on hand to whip either up on a whim. My current goal is to become better about writing a grocery list before going to the store like I use to. Hopefully the fridge clean out will make it a little bit easier.

Luckily Chicken and Sausage Gumbo is pretty low key, and I almost always have the staples to make it.  I almost always keeping a package of andouille sausage in the freezer. I highly recommend keeping some on hand to whip up some delicious southern comfort..
