Easy Grilled Tomatoes with Cheese starts with brushing the tomatoes with olive oil and seasonings before topping with your favorite cheese. We used cheddar cheese and parmesan cheese for a delicious combination and then grilling until the tomatoes are warm and juicy, and the cheese is melted. Than topped with fresh basil.
These Grilled Tomatoes are delicious with just about anything but a favorite with grilled steaks, chicken, and seafood.

Grilled Tomatoes with Cheese sounds a little bit different but are so delicious! It's a favorite side in our house to go with steaks or whatever else might be on the grill.
If you're lucky enough to have a garden full of tomatoes Grilled Tomatoes are a great way to use them up as a side dish. Just make sure they are ripe but still firm tomatoes.
If the weather isn't grilling weather you can make them into Baked Tomatoes instead. Just place them in a pan and bake at 425° for about 15 minutes until the cheese is melted.
The first time I had Baked Tomatoes was at The Metropolitan Grill in Seattle for our first Wedding Anniversary and I was hooked. That was 19 years ago and that dinner is still a delicious memory I can't forget. Colt ordered a table side Chateaubriand that was served with Parmesan Tomato Crowns and I was hooked from that moment on. The warm cheesy tomato paired with the beef made an amazing mouth party.
So over the years we've taken Baked Tomatoes and started doing Grilled Tomatoes with Cheese if we are firing up the grill especially when it's hot outside, but I also love the way the smokey grill imparts flavor into the tomatoes.

Slice 3 large Beef Steak Tomatoes in half and remove stem end.
You can adjust the amount of tomatoes based on how many people you are feeding. I usually serve a half a tomato per person.

Brush tomatoes generously all over with Extra Virgin Olive Oil and sprinkle a generous pinch of Salt over both sides of tomatoes for each tomato.

Sprinkle evenly over the cut side of the tomatoes:
- 1 1/2 teaspoons of Italian Seasoning
- 1/2 teaspoon Granulated Garlic
- 1/2 teaspoon Smoked Paprika

Mix together:
- 3/4 cup Grated Parmesan Cheese
- 3/4 Grated Cheddar Cheese or other favorite cheese.
Divide Cheese evenly between tomatoes.

Grill Tomatoes using offset heat directly on the grill. The angle of this picture is somewhat deceiving, but the tomatoes are over to the side of the charcoal as the steaks cooked directly over the charcoal.
Grill tomatoes for 10-15 minutes in a covered grill until cheese is melted.
Alternatively you can bake the tomatoes in an oven proof baking dish at 425° for about 15 minutes or until cheese is melted.

If you're lucky enough to have fresh basil on hand top with a couple of tablespoons freshly chopped basil.
