Grilled Tomatoes with Cheese

Grilled Tomatoes with Cheese or Oven Baked Tomatoes are a delicious easy side dish recipe from Serena Bakes Simply From Scratch.

Grilled Tomatoes with Cheese sounds a little bit different but are so delicious! It's a favorite side in our house to go with steaks or whatever else might be on the grill. 

If you're lucky enough to have a garden full of tomatoes Grilled Tomatoes are a great way to use them up as a side dish. Just make sure they are ripe but still firm tomatoes. 

If the weather isn't grilling weather you can make them into Baked Tomatoes instead. Just place them in a pan and bake at 425° for about 15 minutes until the cheese is melted.

The first time I had Baked Tomatoes was at The Metropolitan Grill in Seattle for our first Wedding Anniversary and I was hooked. That was 19 years ago and that dinner is still a delicious memory I can't forget. Colt ordered a table side Chateaubriand that was served with Parmesan Tomato Crowns and I was hooked from that moment on. The warm cheesy tomato paired with the beef made an amazing mouth party.

So over the years we've taken Baked Tomatoes and started doing Grilled Tomatoes with Cheese if we are firing up the grill especially when it's hot outside, but I also love the way the smokey grill imparts flavor into the tomatoes.


Beef Steak Tomatoes Sliced in half.

Slice 3 large Beef Steak Tomatoes in half and remove stem end. 

You can adjust the amount of tomatoes based on how many people you are feeding. I usually serve a half a tomato per person. 

Brush Tomatoes with Olive Oil and Salt.

Brush tomatoes generously all over with Extra Virgin Olive Oil and sprinkle a generous pinch of Salt over both sides of tomatoes for each tomato.

Season cut side of tomato with Italian Seasoning, Granulated Garlic and Smoked Paprika.

Sprinkle 1 1/2 teaspoons of Italian Seasoning, 1/2 teaspoon Granulated Garlic, and 1/2 teaspoon Smoked Paprika over cut side of tomatoes. Gently brush cut side to distribute seasoning.

Topped cut tomatoes with parmesan and cheddar cheese.

Mix together 3/4 cup Grated Parmesan Cheese and 3/4 Grated Cheddar Cheese or other favorite cheese.

Divide Cheese evenly between tomatoes.

Grill Tomatoes using offset heat.

Grill tomatoes for 10-15 minutes in a covered grill until cheese is melted.

Alternatively you can bake the tomatoes in an oven proof baking dish at 425° for about 15 minutes or until cheese is melted.

If you're lucky enough to have fresh basil on hand top with a couple of tablespoons freshly chopped basil.

Ingredients

  • 3 whole Large Beef Steak Tomatoes, Ripe but firm
  • 2 tablespoons Extra Virgin Olive Oil
  • 6 pinches Salt
  • 1 1/2 teaspoons Italian Seasoning
  • 1/2 teaspoon Granulated Garlic
  • 1/2 teaspoon Smoked Paprika
  • 3/4 cup Grated Parmesan Cheese
  • 3/4 cup Grated Cheddar Cheese
  • 2 tablespoons Fresh Chopped Basil

Instructions

  1. Wash tomatoes and remove stems.
  2. Slice tomatoes in half.
  3. Brush both sides of tomatoes with olive oil and sprinkle both sides of tomatoes generously with salt.
  4. Sprinkle cut sides of tomatoes with Italian Seasoning, Granulated Garlic, and smoked paprika. Gently brush top sides to evenly coat with mixture.
  5. Mix both cheese together and divide evenly over cut side of tomato.
  6. Grill tomatoes using offset heat directly on grill covered for 10-15 minutes until cheese is melted.
  7. Alternatively tomatoes can be baked in an oven safe dish at 425° for about 15 minutes or until cheese is melted.
  8. Top with fresh chopped basil.
