Alphabet Vegetable Beef Soup

Alphabet Vegetable Beef Soup is a variation of my kids who are now adults favorite Alphabet Soup with a homemade beef broth and tender bite size pieces of melt in your mouth beef. It's the perfect fall soup and fun for those old and young alike!

Logan, Riley and Aspyn (our 1 year old Granddaughter) came over for dinner last Sunday. Aspyns at the age where she can pick and choose what she is willing to eat. Her Mom thinks it's a texture thing and I tend to agree..

When I found out they were coming over it left me with a few personal challenges. Come up with something she will hopefully enjoy along with the rest of the family and utilize as much as I can things I have on hand. Luckily I had 95% of the ingredients on hand for this soup including a bone in chuck roast in the freezer I was meaning to use.

I think we were all surprised just how much Aspyn loved this Alphabet Vegetable Beef Soup. Colt made her a pretty big bowl minus the broth that we put into a cup for easy sipping. She stayed content the whole time with a little help scooping her soup onto her spoon and feeding herself. Riley was even surprised she didn't try to throw her bowl on the ground. She really ate a lot for such a little person. 

A few favorite bread recipes to serve with the soup are: Cheesy Garlic Bread, French Bread Dinner Rolls, and Potato Dinner Rolls. 

 I didn't do step by step photos for this recipe so I hope you'll please forgive me but here is a photo of Aspyn enjoying her first birthday cake. It was a no sugar added Banana Cake with a Whipped Cream Strawberry Frosting.

Alphabet Vegetable Beef Soup

Ingredients

Beef Bone Broth Soup Base

• 3lb Beef Chuck Roast Bone In
• Salt
• 1 tablespoon Olive Oil
• 2 whole Onions, Peeled and Sliced In Half
• 6 cloves Garlic, Peeled
• 3 whole Carrots, Tops Removed and Cut Into 3rds
• 4 stalks Celery, Cut Into 3rds
• 2 tablespoons Worcestershire Sauce
• 2 sprigs Fresh Rosemary or 1 teaspoon Dried Rosemary
• 2 sprigs Fresh Thyme or 1 teaspoon Dried Thyme
• 2 Sprigs Fresh Oregano or 1 teaspoon Dried Oregano
• 1 handful Parsley (Optional)
• 6 cups Good Quality Beef Bone Broth or Water (If using Water add more salt to taste.)
• 2 cups Water

Alphabet Soup

• 5 stalks Celery, Diced
• 2 cups Carrots, Diced
• 1 1/2 cups Potatoes, Peeled and Diced Into Bite Sized Pieces
• 1/3 pound Green Beans, Cut In Bite Sized Pieces
• 1 cup Peas (Fresh or Frozen)
• 1 cup Corn (Fresh or Frozen)
• 29 ounces Stewed Tomatoes, Diced
• 1 small Zucchini, Diced Into Bite Size Pieces (Optional)
• 1 teaspoon Granulated Garlic
• 1 tablespoon Italian Seasoning
• 1 teaspoon Rosemary, Chopped
• 1/2 teaspoon Salt
• 1 cup Alphabet Shaped Pasta or Your Favorite Small Pasta
• Salt and Pepper to Taste

Instructions

Beef Bone Broth Soup Base

1. Heat oven to 325 degrees F.
2. Pat dry chuck roast and generously salt both sides.
3. Heat olive oil over medium-high heat. Brown Onions on both sides and remove from pan. Set aside.
4. Add chuck roast and brown on both sides.
5. Add back in Onions, Garlic, Carrots, Celery, Worcestershire Sauce, rosemary, thyme, oregano, and parsley.
6. Bake in oven for 2 1/2 hours.
7. Then add broth and water. Cook an additional hour or until beef is tender and falling off the bone.
8. Taste broth and add additional salt as needed for flavor.
9. Remove roast from broth and set aside. Then use a strainer to remove strain bone broth.
10. If time allows Beef Roast and Beef Bone Broth can be refrigerated. Cooling the broth makes it easy to skim off the fat as it will harden. If time doesn't allow try to skim as much fat as possible off the top of the bone broth.
11. Remove Beef from bone and as much fat as possible. Chop beef into bite size pieces.

Alphabet Soup

1. Add ingredients to a large soup pot except alphabet noodles including beef broth, and chopped beef. Stir until well combined. Bring soup to a simmer and reduce heat to low.
2. Cover and cook for 20 minutes or until potatoes and carrots are tender. Add Alphabet Pasta and cook for 10 minutes or until pasta is tender.
3. Taste Alphabet Soup and season with additional salt and pepper if needed

Notes

Additional Beef Bone Broth or Water can be used to thin soup if pasta absorbs too much water.
