Cauliflower with Chicken Skillet is an easy budget friendly meal under $2 a serving from Serena Bakes Simply From Scratch.

I originally posted Cauliflower with Chicken Skillet in the wee early months of blogging when I had no clue what I was doing.. I pointed, I shot and I posted...Life was easy, but the quality of the photos wasn't all that great..

A lot of our family favorite meals didn't receive the credit they deserve and One Skillet Chicken With Cauliflower is one of those dishes. It's easy, flavorful and super budget friendly.  When I can get Chicken Thighs and Cauliflower on sale this dinner is made for under $2 a serving and is really easy to make.

I love the clean up since it's all made in one pan. Plus the best part of all is the cauliflower being cooked in the chicken drippings then topped with the chicken and placed in the oven to finish cooking. It imparts a delicious flavor to the cauliflower and needs no additional butter.

This dish can be made with whatever chicken parts you have on hand. Chicken thighs, drumsticks or breast all work well. If you use breast meat the chicken will need to cook longer in the oven.

Roasted Tomato Pasta a perfect use for the over abundance of cherry tomatoes growing in the yard this time of year and a fresh light spin for a Meatless Monday night dinner.  

The easy light fresh sauce combined with the pop in your mouth roasted tomatoes creates a wonderful easy one pan dinner. 

We enjoyed this with a nice glass of organic Pinot Grigio and homemade Easy Chessy Garlic and Herb Bread  Sticks

I love fajitas! If I haven't said it before I will say it again just in case... Mexican is my favorite! Fajitas are so easy to make for a busy week night meal and when peppers are on sale I think its a pretty budget friendly  too! We have been so busy lately with basketball and school anything that is fast, easy and healthy is a plus in our house! Feel free to top the fajita mixture with whatever you like! We love tortilla's, refried black beans, lettuce,cheese, guacamole, greek yogurt ( you can use sour cream but I guarantee you will never tell the difference), olives and of course pico de gallo.

I also wanted to say thank you to No Ideas for nominating me for a Liebster Award! Dawney has a wonderful blog full of all sorts of goodies! I also love her saying do one thing every day that makes you happy! I will be working to pick out the next blogs to pass this on too! There have been so many wonderful blogs to choose from I have a hard time  picking just 5! I truly think you all are amazing and wonderful! You bring me smiles and encouragement every day! I think you all have helped me grow and learn during this blog endeavour! Just in case you didn't know..You All ROCK!!!!

Roasted Chicken Dinner In One Pan

This was so delicious. I love only having 1 pan to clean up after dinner! The names rather lame but it is what it is and I guess when something more creative pops in my head,I will change it. Other wise I might sit on this recipe for another few days or months or years before I post and let's just say this is way too delicious and easy not to make! Once again another favorite part is the chicken stock I made after dinner and froze. Homemade chicken stock is so much more tasty then anything you can pick up at the store!

Tuna Noodle Casserole

 I love casserole with homemade noodles! This was so creamy and delicious! My Granny would make chicken casserole a lot and this is similar other then the tuna. Another great, delicious budget dinner! Creamy goodness! Sorry I missed a picture or two in the steps this was a busy night in our house trying to get dinner on the table!

This is a great budget saving, delicious dinner, if you like greens. My husband when I met him, didn't like spinach, asparagus, and many other things. But I discovered his idea of greens was an over cooked mess! This was delicious and simple. If you have a little white wine I deglaze the pan with it before adding the pasta, just make sure to cook the wine down.
