Spinach Fontina Frittata
Years ago my Tutu "Hawaiian for Grandmother" had made something similar to a Spinach Frittata when I spent part of the summer visiting them in Hawaii probably after a long day of playing at the beach or out shopping for school clothes. I loved how comforting the Frittata was and similar to Quiche minus the crust. It still evokes wonderful memories of my time with my Grandparents when I make this.

Now that I'm older I love the simplicity of this Spinach Fontina Frittata. It's easy enough to make for the family before they head off to work or school, but hearty enough for a simple dinner. I will sometimes add about a 1/4 lb of ground chorizo to the onions, which the boys prefer, and perfect for those protein lovers in your life.

I love that it's all made in one skillet, and then baked in the oven keeping the dishes to a minimum.. It's perfect for breakfast, lunch, or dinner, and a great way to use up leftover bit's and pieces of stuff from the fridge. I'm sure your family will love it as much as mine.

I make Boccone Dolce every Easter. It is an all time favorite dating back to my childhood. As the base for the cake you make 3 layers of meringue and top with chocolate, fresh lightly sweetened whipped cream and lots of tasty strawberries.  I decided to post this recipe in two steps just in case you have another use for the meringue. If you have never had Boccone Dolce now is the time. I defiantly place it on the foods to try before you die!

I also love meringue sandwiched between chocolate cake with a nice dark chocolate frosting! It is simply divine!

This breakfast came about the other day as our fridge was almost empty as I had been avoiding the dreaded trip to the grocery store, I love to cook but hate to go to the grocery store. 
I had 5 eggs, 2 potatoes, 3 pieces of bacon and a few other odds and ends. This ended up being so delicious I will defiantly be making this again. It would also be great over the campfire for a one dish camping breakfast. I usually avoid cooking breakfast and leave anything more then oatmeal, muffins or the occasional hard boiled egg to my husband. But I new he would find a bit of frustration this particular morning when he went to look in the fridge and saw my lack of trip to the grocery store. So ahead I forged to create something healthy and delicious. The best part was when the kids asked me to make it again.
