Meatball Subs

Meatball Subs are a favorite lunch or dinner recipe in our house and so easy to make. Tender Homemade Meatballs are simmered in flavorful Marinara Sauce. Hoagie Rolls are toasted with cheese before topping with Meatballs and more cheese. Then baked for a few minutes to melt the cheese.

Meatball Submarine Sandwiches will quickly become a family favorite.

I hope everyone had a fabulous Easter. We sure did. 

We finally received some sunshine here in the northwest and the kids had a water fight out front. They are so funny, it hits 68 degrees and the kids are busting out the water guns and soaking each other. Not one complaint about being cold.

Meatball Subs are a household all time favorite recipe I have been making for years. 

Who doesn't like meatballs with marinara sauce on a crusty hoagie roll? Oh and did I forget lots of bubbly cheese covering it all..

Sorry the step by step photos aren't the greatest. They were taken in the early days of Serena Bakes Simply From Scratch when I was still trying to figure out photography but I promise the recipe is solid. I wanted to get it updated so it was easy to print.

Bacon Egg and Cheese Grilled Sandwich

Bacon Egg and Cheese Sandwiches have been one of my favorites for breakfast as long as I can remember. They are composed of crispy bacon, a layer or cheese, a runny egg or scrambled eggs sandwiched between two slices of sourdough bread or your favorite bread and grilled until toasty on the outside. Bacon and Egg Grilled Cheese are a favorite start to the morning.

The great thing about grilled breakfast sandwiches is that you can make them with whatever you have on hand. Ham or sausage can be substituted for bacon, don't have sourdough white or whole wheat can be used, and or coarse you can use whatever cheese you have on hand.

Turkey Pesto Paninis

Turkey Pesto Paninis filled with Turkey, Tomato, Onion, and Spinach on Focaccia Bread.

When I told Colt this months Shine Supper Club challenge was sandwiches for dinner he was stoked and we decided we had to shared with you these delicious Turkey Pesto Paninis we love.

He's the pancake, waffle and sandwich specialist in our house.

I love in the summer to fill our sandwiches with fresh pesto to use up the bounty of summer basil, tomatoes, cucumbers and fresh baby lettuce.

We love these grilled but on the hottest days of the year we enjoy them equally as well cold and skip the grilling all together.

Turkey Pesto Paninis are the perfect sandwiches for a nice lunch or a light dinner and as the weather gets colder we will enjoy them with a nice warm bowl of soup but for now the sandwich alone is enough.
