I promised you this Fuji Apple Spinach Bacon Salad With Creamy Honey Mustard Vinaigrette last week when I shared my recipe for Honey Mustard Chicken, since they go together like Peanut Butter and Jelly, you can't have one without the other! 

It's really an easy dinner to make and I strongly suggest making both since they pair perfectly together! 

The smokiness of the bacon makes a perfect addition to the sweet fuji apples and honey mustard vinaigrette; the perfect disguise to sneak raw spinach into my boys! 

We all know everything is better with bacon.

You could leave the mushrooms out of this salad if they aren't your thing but they are well disguised between the smokey bacon, apples, and vinaigrette. 

I skipped adding cheese in this recipe to keep it simple, but gorgonzola would make a nice addition if your looking for something a bit richer. It's really not missing it though, and has plenty of flavors to leave you satisfied.

To make the Creamy Honey Mustard Vinaigrette: Shake or whisk together 1/2 cup Extra Virgin Olive Oil, 1/4 cup Apple Cider Vinegar or White Wine Vinegar, 1 teaspoon Grainy Dijon Mustard, 3 tablespoon Honey, and 1/2 teaspoon Salt until well combined, and emulsified.

To assemble Fuji Apple Spinach Bacon Salad: 8 ounces Washed Baby Spinach, 1 whole Cored Fuji Apple Sliced 1/8" Thick, 4-5 medium sized Sliced Mushrooms, and 3-4 slices Cooked Bacon, Diced.
Drizzle with enough Creamy Honey Mustard Vinaigrette to coat lightly.
Toss until well combined and enjoy!

Ingredients
  • 1/2 cup Extra Virgin Olive Oil
  • 1/4 cup Apple Cider Vinegar Or White Wine Vinegar
  • 1 teaspoon Grainy Dijon Mustard
  • 3 tablespoons Honey
  • 1/2 teaspoon Salt
  • 8 ounces Baby Spinach, Washed
  • 1 whole Fuji Apple, Cored and Sliced 1/8" thick
  • 4-5 whole Mushrooms, Sliced
  • 3-4 slices Cooked Thick Sliced Bacon, Diced
Cooking Directions
  1. To make Creamy Honey Mustard Vinaigrette: Whisk or shake together olive oil, vinegar, dijon mustard, honey, and salt, until well combined and creamy.
  2. In a large bowl combine spinach, sliced apple, sliced mushrooms, and bacon. Drizzle with enough Creamy Honey Mustard Vinaigrette to lightly coat. Toss until well combined.
