Homemade Nacho Cheese Dip

Homemade Nacho Cheese Dip is super easy to make appetizer recipe in under 10 minutes without any processed cheese from scratch.


Nacho Cheese Dip is a favorite in our house whether it's over the top of Fully Loaded Nachos, for dipping chips, or Soft Pretzel Bites.  

 It's a favorite for Tailgating parties, weekend snacking and of course Super Bowl! I love that I almost always have everything on hand to make Homemade Nacho Cheese Dip and it has all real ingredients like sharp cheese.

Pickled Jalapeños add a delicious heat with a little bit of tang that makes it addicting. If you don't like spicy food you can find tamed pickled jalapeños that are pretty mild. 

Here's how to make Homemade Nacho Cheese Dip:


Melted butter with flour to make a roux for Nacho Cheese Dip.

Melt 2 tablespoons Butter over medium-low heat and add 2 tablespoons All-Purpose Flour.

Stir flour into butter until flour starts to cook and thicken.

Colt was a little distracted during his nacho cheese dip making and let the butter brown while trying to watch the playoff game 2 weeks ago.  It's not necessary to brown the butter.

Chicken Stock and Milk whisked into roux..

Slowly whisk in:
  • 3/4 cup Chicken Stock
  • 3/4 cup Milk 
Stir until thickened over medium heat.

Remove thickened milk mixture from heat and stir in 2 1/2 cups Grated Medium or Sharp Cheddar Cheese.


Add Black Pepper and Salt to taste. The cheese is the Nacho Cheese Dip is salty so taste it and got slow adding salt. It's usually just a generous pinch that is required.

Chop about 1/4 cup Sliced Pickled Jalapeños. You can find Pickled Jalapenos near the olive section at the grocery store of Mexican Food section. 

If you don't like spicy food they come as tame which aren't as spicy.

Stir in Pickled Jalapeños and serve immediately. 

Homemade Nacho Cheese Sauce is best served warm and works well served in a fondue pot.

ingredients:

  • 2 tablespoons Butter
  • 2 tablespoons All-Purpose Flour
  • 3/4 cup Milk Preferably Whole Milk
  • 3/4 cup Chicken Stock
  • 2 1/2 cups Medium or Sharp Cheddar Cheese, Grated
  • 1/4 cup Pickled Jalapeños, Chopped Fine
  • Salt To Taste
  • Ground Black Pepper To Taste

How to cook Nacho Cheese Dip

  1. In medium sauce pan melt butter over medium-low heat.
  2. Add flour and stir until flour starts to cook and thicken about 2 minutes.
  3. Slowly stir milk and chicken stock into the flour mixture.
  4. Stir over medium heat until milk mixture becomes thickened being careful not to boil.
  5. Remove from heat and stir in grated cheese and pickled jalapeno.
  6. Add salt and pepper to taste.

  5. Hi Leah! You could sub more milk instead of the chicken stock. You might have to add a little more salt too since the chicken stock is salty but I would taste it first.
