Cheeseburger Helper from scratch made in one pot with an easy gluten free option included. This will be the best Cheeseburger Helper you've ever had for dinner! It's made with pantry staples you probably already have on hand. No canned soup needed or cooking the noodles separately.

I'm ashamed to tell you this but when Colt and I first got married we lived off of the convenience of Hamburger Helper.

It was cheap and our budget was tight. Our use of hamburger helper didn't last long once we had Lorna I started to become aware of labels and what we were eating and it quickly disappeared from our cupboard.

But the need of an easy, quick minimal dish for dinner didn't.

I love this One Skillet Cheeseburger Helper. It's so easy to make and can be made gluten free using brown rice penne or macaroni noodles.

Our family can't even tell the difference when I use the brown rice noodles, it's devoured just as fast.
The leftovers have been fought over every time I make this, I promise this won't disappoint.

Onions and butter in a stainless steel pan for Cheeseburger Helper.

Add to a deep skillet with lid or pot:
  • 1 tablespoon Butter or Olive Oil
  • 1/2 whole Onion, Finely Diced
Cook over medium heat until is softened.

Just an fyi butter makes everything better!

Cooked Ground Beef, Onion, Minced Garlic, Garlic Powder, Chili Powder, Salt, Tomato Paste and Dijon Mustard in a stainless steel pan.

Add:
  • 1 1/4 pounds Ground Beef
  • 1 clove Garlic, Minced
Cook until brown. I use lean ground beef, if you use a fattier ground beef drain off extra any grease before adding the spices.

Add:
  • 1/2 teaspoon Garlic Powder
  • 1 teaspoon Chili Powder
  • 1/4 teaspoon Salt
  • 1 tablespoon Tomato Paste
  • 1/2 teaspoon Dijon Mustard
Stir until well combined.

Chicken Stock and Brown Rice Noodles added to Gluten Free Cheeseburger Helper in a stainless steel pan.

Stir in:
  • 4 cups Chicken Stock
  • 16 ounces Brown Rice Penne Noodles or Regular Large Macaroni Noodles
  • 1 cup Half and Half or Milk
Stir until well combined.

Gluten Free Cheeseburger Helper coming to a simmer in a stainless steel pan.

Bring mixture to a simmer over medium-high heat.

Please try to ignore my mess on the stove I somehow splattered ground beef all over my clean stove when I bumped the spoon. Our dogs however were thankful for the tidbits that fell on the floor.

Turn heat to low, cover with a lid and cook for 14 minutes.

Remove lid and check pasta for doneness. If sauce is runny remove lid and simmer for an additional few minutes until thickened.

Add:
  • 3 cups Grated Cheddar Cheese
 Mix until throughly blended.

Warning once you make this your family will beg for it in the weekly rotation.

Yes Cheeseburger Helper is that good! Dinner dilemma solved!

This sounds really good. I have to say that my hubby and grown son still love me to make the Hamburger Helper Stroganoff. I add extra sour cream, mushrooms, and sometimes onions to make it more flavorful. Good stuff!

Thanks so much Sandy! I have a beef stroganoff recipe on here that is amazing! A little more work then the box but well worth it! It probably is my kids all time most requested recipe! Have a wonderful evening!

Hi Serena! The beginning years of our marriage were TOTALLY filled with Hamburger Helpers. No more!! I love cooking from scratch. Your version looks much better and healthier!!

I am book marking this recipe, it looks amazing! I love the ease of the one pot type of meal and it just looks so darn good!

Mmm, that looks yummy. We're not big on the box stuff, either, but one pot meals are a thing of beauty.

Don't be ashamed. I've doctored up Hamburger Helper in the past and made it very tasty. Unfortunately, I didn't consider what I was consuming at the time. I had the capability and pantry to make it from scratch but I bowed to convenience. Thankfully we've learned from our mistakes and the healthier varieties are far better! :)

This definitely just got put on my upcoming recipe list!! Looks delicious, and thank you for the gluten free option! Being gluten intolerant, I always have to modify amazing recipes I find and sometimes it alters what the end result is supposed to be. However, whenever, there is a gluten free option, it's always amazing!!Thank you <3

I am fairly opposed to the Helper, but found the boxed Velveeta dinners creeping into my cabinets. I've been trying to figure out ways to make those easy dinners at home, and this looks great & easy! Pinned!

Your so welcome! The last 2 times I made it I used the brown rice noodles and they turned out just as good as regular pasta, the kids couldn't tell the difference!

This made a lot. I thought about that when measuring the pasta, but when done this can easily feed 5 of us with leftovers. Good though.
