It's one of our favorite one pan Homemade Helper Recipes along with Chicken Macaroni and Cheese Helper, Cheeseburger Helper, Tuna Helper, Hamburger Beef Stroganoff Helper, and Chicken Cordon Bleu Pasta.
The combination of the smokey bacon, chicken, and pasta in the creamy cheesy sauce makes this a must make dinner for all my bacon lovers out there.
This dish is comfort food at its best and so easy to make with just a hair more work than Chicken Helper.
I've been on a single skillet dinner the last few weeks because no one ever said I wish I had more dishes to do.
Or how about gosh I really love it when we have a sink full of dishes to wake up to in the morning, said NO Mom EVER!
With our dishwasher being broken and no ending in site for the repair man to return, the less dishes the better.
I even called the appliance shop today just incase they somehow forgot to leave a message but no bueno, they still don't have the parts in to fix my 2 year old dishwasher.
If only they made dishwashers like they use to.
So we've been fighting not only the battle of the laundry but now the world war 2 of dishes.
No matter what our laundries never done, I think it multiplies while we aren't looking.
I'm pretty sure part of it comes from the kids trying on clean clothes and then just tossing them in the dirty pile when they decide it's not what they want to wear for the day but no one will admit to it.
Oh to be a kid again.
Slice up 4 thick slices of bacon and add to a large deep skillet with a lid or a large pot with a lid.
Brown bacon over medium heat.
Once the bacons nice and crispy brown remove to a paper towel and set aside. Mmmmm.. Crispy Bacon. Go ahead take a taste just make sure to leave some for the pasta.
Leave bacon grease in pan and add 1/2 whole Diced Onion. Sauté over medium heat until onion starts to caramelize.
Add:
- 3 cloves Garlic
- 3 whole Chicken Breast
- 1 whole Bell Pepper, Seeded and Diced
Stir In:
- 1 pound Dried Pasta (Use Brown Rice Pasta For Gluten Free)
- 1 teaspoon Granulated Garlic
- 2 teaspoons Rosemary
- 4 cups Chicken Stock
- 1 cup Half & Half or Cream
Bring to a simmer and make sure pasta is covered by liquid. Reduce heat to low and cover.
Cook for 13-15 minutes or until pasta is tender.
Remove from heat and stir in:
- 1 cup Grated Cheese
- Fried Bacon
- 1/4 cup Chopped Parsley
I was all out of my usual parmesan cheese so I subbed with mozzarella because a simple trip to the grocery store always ends up being $50 later. Never fails but jack cheese or Gruyere would be tasty too.
See I told you easy and oh so good!

That is one of delicious pasta Serena, fried bacon looks very nice.
ReplyDeleteThanks Swathi! I love cooking the pasta all in one pot with the bacon and chicken, it saves me so much time and I don't have to drain the pasta. Plus the pasta serves as a natural thickener.
Deletei dont understand how you cook the pasta with it? do you put water in with everything? once your ready to cook the pasta. and how much water do you put?
DeleteHi Natalie,
DeleteThe recipe uses 4 cups of chicken stock in the pot and that is what cooks the pasta. No need to add any additional water. Just follow the steps! Please let me know if you have any more questions.
Thanks,
Serena
Never thought of adding bacon to pasta and when I make pasta I usually cook pasta in another pan and then mix into the pan which has the sauted onions, tomatoes etc.....love your one pot version....less dirty dishes :)
ReplyDeleteThanks Nisa! The less dishes the better in my book!
