Happy Mother's Day to all the wonderful Mother's out there! I am excited to be joining Sunday Supper this week to share Frozen Strawberry Cheesecake for Mother's Day.
I just love Frozen Strawberry Cheesecake because it's great to make ahead of time since it's frozen. The strawberry cheesecake filling is so good! It's super creamy and melts in your mouth like ice cream with the best graham cracker crust.
A dollop of fresh homemade whipped cream really puts this dessert over the top!
In a large bowl combine:
- 12 whole Graham Cracker Crumbs
- 1/4 cup Sugar
Press graham cracker mixture evenly across the bottom and up the sides of the pie plate.
I find a measuring cup works well for pressing the crumbs evenly into the bottom and sides.
Bake crust in a 375 degree oven for 7 minutes or until lightly brown.
Cool completely.
In a food processor or blender puree 1 1/2 cups Strawberries until smooth but still some small pieces remain. Set aside.
Whip 3/4 cup whipping cream until light and fluffy but not stiff. Set aside.
Beat:
- 16 ounces Cream Cheese
- 3/4 cup Sugar
- 1 teaspoon Lemon Zest
Add pureed strawberries and 1 teaspoon vanilla to beaten cream cheese mixture.
Beat until well combined, scraping sides and bottom of bowl several times.
On low speed add whipping cream and mix or fold in until combined.
Pour cheesecake mixture into baked graham cracker crust and place in freezer.
Freeze for 4 hours or longer until frozen.
Slice Frozen Strawberry Cheesecake with a knife run under hot water and dried.
Serve with a big dollop of whip cream and make sure to share with the ones you love.

Frozen Strawberry Cheesecake in a graham cracker crust with homemade whipped cream from Serena Bakes Simply From Scratch.
Ingredients
Graham Cracker Crust
- 1 2/3 cup Graham Crackers, Crushed (about 12 whole crackers)
- 1/4 cup Granulated Sugar
- 1/2 cup Butter, Melted
Strawberry Cheesecake Filling
- 3/4 cup Heavy Whipping Cream
- 16 ounces Cream Cheese, Room Temperature
- 3/4 cup Granulated Sugar
- 1 teaspoon Lemon Zest
- 1 1/2 cups Strawberries, Diced
- 1 teaspoon Pure Vanilla Extract
For Serving
- Sweetened Whipped Cream
- Strawberries, Diced or Whole
Instructions
Graham Cracker Crust
- Preheat oven to 375 degrees.
- In a large bowl graham cracker crumbs and 1/4 cup sugar, mix until well combined. Drizzle in melted butter and mix well. Press graham cracker mixture evenly into the bottom of a 9 inch pie plate. Bake for 7 minutes or until light brown, cool completely.
Strawberry Cheesecake Filling
- Whip heavy whipping cream until light and fluffy but not stiff. Set aside.
- Beat cream cheese, granulated sugar, and lemon zest, until smooth and creamy.
- In a blender of food processor puree strawberries, until smooth but still small chunks remain.
- Add pureed strawberries and vanilla to the cream cheese mixture. Mix until well combined, scraped sides and bottom of bowl several times.
- Add whipped cream to strawberry cream cheese mixture and mix on low speed or fold in until well combined.
- Pour strawberry cheesecake mixture into baked graham cracker crust, cover with plastic wrap and freeze for a minimum of 4 hours or until frozen.
- Slice with a knife that's been run under hot water and dried. Serve with a large dallop of sweetened whip cream, and additional strawberries if desired.

ReplyDeleteThis dessert is so delicious! My neighbor even brought me over some strawberries so I would make another one....and I have already made him two. My only issue that I am having is the crust is so hard to cut. I tried not pressing the crust down so hard the last time I made it. It was a little easier to cut but still hard. Is there something I can do to make the crust a bit easier to cut? I use a hot dry knife. Maybe my freezer is too cold? Maybe I should thaw it out a bit before I cut? Any suggestions? Love the recipe!!
