Apple Pie Oatmeal Cookies are a great Christmas Cookie to add to holiday cookie trays or school lunch boxes. The brown butter, brown sugar, cinnamon, vanilla, and oats make these taste like dutch apple pie in a cookie.

Masons been begging me to make cookies with him the last few days so we decided to make a batch of Apple Pie Oatmeal Cookies.

Apple Pie Oatmeal Cookies are a great addition to all the other traditional holiday Christmas Cookies. Their soft, chewy texture loaded with chunks of dried apples, and plenty of cinnamon will quickly become a favorite. 

Here's how we make these delicious soft chewy Apple Pie Oatmeal Cookies:

Brown butter in mixing bowl for Apple Pie Oatmeal Cookies.

In a medium sized saucepan brown 3/4 cup Butter until light brown and nutty smelling, being careful not to burn. 

Add Brown Butter to mixing bowl along with remaining 1/4 cup Cold Butter. Stir until butter is melted.

Mixing bowl with brown butter, brown sugar, and vanilla extract for Apple Pie Oatmeal Cookies.

Add to mixing bowl: 
  • 1 1/4 cup Brown Sugar
  • 1/2 cup Granulated Sugar
  • 2 teaspoons Vanilla Extract
Mix until well combined.

1 whole Egg and 1 Egg Yolk in a measuring cup for Apple Pie Oatmeal Cookies Recipe.

Whisk together 1 whole Egg, and 1 Egg Yolk, until well combined.

Add Egg mixture to sugar mixture and beat on medium-high speed for 30 seconds. Let rest for 3 minutes.

Brown Butter with eggs mixed in.

Repeat beating for 30 seconds and resting for 3 minutes, repeating 3-4 times.

Brown Butter Egg mixture pale yellow and thickened for Apple Pie Oatmeal Cookie Dough.

Until mixture becomes thick and pale yellow.

Apple Pie Brown Butter Cookie Dough with salt, baking soda, cinnamon.

Add: 
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Cinnamon
Mix for 30 seconds.

Mason scraping down sides of mixing bowl.

Scrape down sides of bowl. 

Flour and Rolled Oats added to the Apple Pie Cookie Dough.

Add:
  • 2 cups All-Purpose Flour
  • 1 cup Rolled Oats
Mix until well combined.

Dried Granny Smith Apple in Oatmeal Cookie Dough.

Stir in 2 cups Finely Chopped Dried Apples, think chocolate chip size. 

I prefer a tarter dried apple like Granny Smith but feel free to use your favorite.

Apple Pie Oatmeal Cookie Dough on baking sheet.

Drop Apple Pie Oatmeal Cookie Dough onto an ungreased baking sheet spaced about 2" apart using a standard sized cookie scoop or a heaping tablespoon. 

Bake in a 375 degree oven for 8-10 minutes until edges are lightly brown. Allow to cool for 1-2 minutes before removing to a cooling rack.

Store cookies in an airtight container.

  • 1 cup Cold Butter
  • 1 1/4 cup Brown Sugar
  • 1/2 cup Granulated Sugar
  • 2 teaspoons Vanilla Extract
  • 1 whole Egg
  • 1 Egg Yolk
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Cinnamon
  • 2 cups All-Purpose Flour
  • 1 cup Rolled Oats
  • 2 cups Dried Apples, Finely Chopped About The Size Of Chocolate Chips

How to cook Apple Pie Oatmeal Cookies

  1. Preheat Oven to 375 degrees.
  2. In a medium sized saucepan brown 3/4 cup butter over medium heat until light brown and nutty smelling. Add brown butter to mixing bowl and add remaining 1/4 cup cold butter. Stir until butter has melted.
  3. Stir in both sugars, and vanilla, until well combined.
  4. Mix whole eggs with egg yolks and add to brown butter/sugar mixture.Beat on medium high speed 30 seconds. Let mixture rest 3 minutes. Mix another 30 seconds and rest for 3 minutes repeating until butter mixture becomes thick and pale yellow. Add salt, baking soda and cinnamon, mix for 30 seconds. Scrape down the sides of bowl.
  5. Add flour and oatmeal. Mix just until combined. Stir in dried apple.

    1. Hi! Interesting.. Did you beat the brown butter until it became pale colored? It does take some time but my incorporating the air it cools the butter and firms it back up. The only other thing I can think of would be a miss measurement on the dry ingredients. Thanks, Serena
