One Pot Taco Pasta

With summer break coming to an end soon I thought it was the perfect time to share this delicious One Pot Hamburger Taco Pasta that's a favorite in our house when we need a quick and easy dinner recipe.

Taco Pasta is done in under 30 minutes and a favorite one pot dinner which I love, because the less pots to clean the better especially during the busy school week. It's loaded with plenty of ground beef, macaroni noodles, corn, peppers and greek yogurt in a cheesy taco seasoned sauce.

It's delicious plain but we like to add diced avocado, diced tomatoes, and chopped cilantro after it's cooked to really kick it up a notch. The condiments can also be served on the side so everyone can choose what they like.

According to Colt who usually calls dibs on the leftovers it's super delicious the next day too!
Here's how to make this easy One Pot Taco Pasta Recipe:

First we made a stop at my local Seattle area Safeway to stock up on my favorite O Organics® products because we were running low on some of my favorite pantry staples I needed to make Taco Pasta.

I frequently use Safeways Drive Up & Go™ to do our grocery shopping for a convenient way to shop. Its easy to build my list from the app on my phone. First you'll need to melt 1 tablespoon Butter in a large pot with a lid.
Add:
  • 1/2 whole Diced Onion
  • 1 clove Minced Garlic
Sauté until onion and garlic soften and become fragrant.

Add 16 ounces O Organic Grass Fed Ground Beef. Break ground beef up and cook until brown.

Add to pot:
  • 1 whole Diced Bell Pepper
  • 1 whole Diced Poblano Pepper
  • 1 whole Diced Jalapeño (Remove Seeds for less spicy)
  • 1 tablespoon O Organic Tomato Paste
  • 1 package O Organic Taco Seasoning

Mix until well combined.

O Organic Macaroni noodles being poured into ground beef mixture with beef broth.

Stir in:
  • 4 cups O Organic Low Sodium Beef Broth
  • 16 ounces O Organic Elbow Macaroni
  • 1 cup Whole Milk

Bring to a simmer, reduce heat to low, and cover. Cook for 11 minutes and add 1 cup Frozen Corn.

Cook 3 more minute until pasta is tender and corn is warm.

Remove from heat and stir in:
  • 1/2 cup O Organics Greek Yogurt
  • 12 ounces O Organics Mexican Style Cheese Blend
Mix until well combined.

You can serve One Pot Taco Pasta plain but we really like to top it with or serve on the side to top your own:
  • 1 whole Diced Avocado
  • 1 whole Diced Tomato
  • 1/4 cup Chopped Cilantro
  • Additional O Organic Mexican Style Cheese Blend

One Pot Taco Pasta

One Pot Taco Pasta is filled with ground beef, pasta, mexican seasoning and cheese making it a favorite easy weeknight dinner recipe in under 30 minutes.

Ingredients:

  • 1 tablespoon Butter
  • 1/2 whole Diced Onion
  • 1 clove Minced Garlic
  • 16 ounces O Organic Grass Fed Ground Beef
  • 1 whole Bell Pepper, Seeded and Diced
  • 1 whole Poblano Pepper, Seeded and Diced
  • 1 whole Jalapeño, Seeded and Diced
  • 1 tablespoon O Organic Tomato Paste
  • 1 package O Organic Taco Seasoning
  • 4 cups O Organic Low Sodium Beef Broth
  • 16 ounces O Organic Elbow Macaroni
  • 1 cup Whole Milk
  • 1 cup Frozen Corn
  • 1/2 cup O Organics Greek Yogurt
  • 12 ounces O Organics Mexican Style Cheese Blend
Condiments
  • 1 whole Avocado
  • 1 whole Tomato
  • 1/4 cup Chopped Cilantro
  • 1/2 cup O Organic Mexican Style Cheese Blend

Instructions:

  1. Melt butter in a large pot with a lid.
  2. Add onion and garlic. Sauté until softened.
  3. Add ground beef and break up. Cook until brown.
  4. Add bell pepper, poblano pepper, jalapeño pepper, tomato paste, and taco seasoning. Mix until well combined.
  5. Add beef broth, elbow macaroni, and milk. Stir until combined.
  6. Bring to a simmer, reduce heat to low and cover. Cook for 11 minutes and stir in corn. Cook an additional 3 minutes until pasta is tender and corn is warm.
  7. Stir in greek yogurt and cheese, until well combined.
  8. Top with desired condiments or serve on the side.
