Easy Homemade Lasagna

This might not be the easiest Lasagna Recipe ever because it's Lasagna but it is completely homemade besides the noodles which are no boil and absolutely delicious. Homemade Lasagna is a classic recipe everyone loves and should master. 

Tender sheets of pasta are layered with a rich meaty tomato sauce, homemade creamy béchamel, plenty of mozzarella cheese, and of coarse lots of parmesan cheese.  The Lasagna is then cooked until hot, lightly browned and bubbly. You can of coarse assemble ahead of time, refrigerate and bake when ready or assemble and freeze for a busy weeknight.

I think everyone has their favorite go to Baked Lasagna recipe, but L.J. would turn his nose up when I would make my original recipe, since it contained ricotta cheese.

Lasagna is one of those recipes with so much meaning and memories for us, since it was one of the first dinners I prepared for Colt way back when, in the apartment he was staying at with his buddy.

With L.J.'s aversion to ricotta or cottage cheese Homemade Lasagna had become a rare item on the dinner rotation until I decided to try a béchamel sauce like I use for Creamy Macaroni and Cheese.

The first time we enjoyed a ricotta free Lasagna was when Colt and I escaped for a weekend getaway in Victoria, BC years ago.

I ordered Lasagna with a Besciamella (the Italian equivalent of béchamel sauce) leaving the memory forever engraved on my palate. The Lasagna was constructed of layers of bolognese sauce, béchamel, plenty of cheese and sheets of fresh pasta.

I wasn't sure the Lasagna would pass L.J.'s picky palate but I found him enjoying a piece as large as his Dad's the last few times I've made this.

Lasagna with Béchamel Sauce is worth the effort and the taste is a whole new level of deliciousness if you've never tried it.

Honestly I doubt I will ever add ricotta to Lasagna again, the creaminess of the béchamel can't be beat! This is definitely the BEST EVER Homemade Lasagna recipe at least according to Colt and the kids.

Chicken Enchiladas in Homemade Red Enchilada Sauce from scratch is one of our family favorites. Homemade Red Enchilada Sauce has so much more flavor than the canned stuff you find at the store. Chicken Breast is simmered in the homemade Enchilada Sauce and shredded before being stuffed into the corn tortillas with plenty of shredded cheese.

We love serving Chicken Enchiladas with Refried Black Beans, Mexican Rice, Cilantro Lime Rice and Homemade Flour Tortillas for snacking.

This weeks Sunday Supper theme is Captivating Casseroles and I couldn't think of a more Captivating Casserole then these Chicken Enchiladas in red sauce.

This definitely isn't the quickest recipe I've shared but I promise you they are worth every minute of your time.

The whole family rates them even better then our favorite Mexican food spot, let me just tell you this is a huge thing because that's usually what the boys order.

I was hoping for a few leftovers for lunch tomorrow but they were devoured in about 2.2 seconds.
No matter how much food I make we seldom seem to have leftovers.

I'm officially feeling like this is the story of my life. I don't know what I will do someday when the kids move out and it's just the 2 of us. I might finally be able to bring food to the neighbors!

These can easily be made ahead of time and left in the fridge until ready to bake or one of those great go to recipes to bring over to someones house who's been recovering from surgery or just had a baby.

This recipe is also great for those that are gluten free as long as gluten free corn tortillas are used.

I hope you love these Homemade Chicken Enchiladas as much as we do because I can never seem to make enough!

I have a little secret to share.. It might change our relationship.. If so I totally understand..

Are you ready? 

I'm not very good about making breakfast. I'm sure you are all totally in shock.. I know say what? That's not to say I can't do it. Mornings just take me forever to get going, so Colt usually steps up to the plate taking one for the team when it comes to making breakfast on the weekends.

It's why I love this Pumpkin French Toast Casserole so much! All the prep work can be done the night before so all I have to do is heat the oven, while making crumb topping, and sip coffee while it bakes! It also helps it makes the house smell absolutely AMAZING! 

Did I tell you it has a crunchy crumb topping similar to coffeecake that puts it over the edge? The combination is like heaven for a pumpkin crumb topping lover like myself!  

Pumpkin French Toast Casseroles one of those secret recipes in my arsenal I use around the holidays when we need time in the morning to be fixing other food or spending time with the family. It makes the perfect start to Thanksgiving, Christmas morning, or a lazy weekend breakfast.

I broke down and started the oven the other night to make Cheesy Pork Chop Potato Casserole, because we ran out of briquettes to barbecue, and comfort food was calling my name. 

LJ told me about 3 times Cheesy Pork Chop Casserole tastes like Christmas dinner! I'm assuming it's the Potatoes Au Gratin I usually make around the holidays he's referring to, but I don't think I've ever seen that kid so excited about food! 
Actually the whole family was beyond content and dibs started going around the table on the leftovers for lunch the next day.

This recipe for Cheesy Pork Chop Casserole combines Potatoes Au Gratin, with Fried Pork Chops, with plenty of extra Cheesy Sauce, for smothering over the top of your pork chop. 

It's comfort food at it's finest, and sure to be a family favorite.

Biscuits and Gravy is a favorite breakfast casserole in our house. Homemade Sausage Gravy is topped with fluffy drop biscuits and baked in the oven. Biscuits and Gravy Casserole is also a favorite easy recipe for Christmas morning.

There are Biscuits and Gravy, and then there are Lord Have Mercy Biscuits and Sausage Gravy Casserole.

These just happen to be the later of the two. Colt loves Biscuits and Sausage Gravy, and I happen to love lazy weekend mornings.

Skillet Biscuits and Sausage Gravy makes everyone in our house happy for multiple reasons.

  1. No need to roll and cut biscuits, which means no flour mess first thing in the morning.
  2. It's super easy to make.
  3. It's deliciousness friends, pure unadulterated deliciousness! 
  4. 1 pan and a bowl = less mess! No one wants to be washing dishes on the weekend! 
  5. It's from scratch, no canned biscuits need, yet super easy to make! 
  6. Did I mention it's like Heaven for your mouth.

This is the perfect supper to make for early summer meals as we become busier and the days become longer.

This recipe's a spin off of a Ritz Cracker and Shrimp Casserole my friend Beth's Mom Sally would make when we were kids.

It was so good, I still remember having dinner at her house 20 some years later.

I don't have her recipe so I've had to improvise to make something similar to what my taste buds recall.

I usually don't have Ritz on hand so we usually make it using panko bread crumbs in some butter and herbs.

The herb coated panko bread crumbs gives a nice crunchy texture to the shrimp as it bakes.

If you don't like couscous, rice or quinoa make great alternate option for serving or they are amazing plain with a veggie or salad.

Gluten Free Chicken Tamale Skillet Casserole
We had a simple Valentines Day this year and stayed home with the kids and devoured Chicken Tamale Skillet Casserole and cuddled up on the couch with Strawberry Grapefruit Mimosas to watch Armageddon. 

Sometimes I love simple just as much as I love to get dressed up and go out.  My slippers where much more comfortable then dress shoes and we didn't have to wait on a table that Colt has reserved 3 weeks prior. This last year I've learned to be greatful for the small things, the little love notes he leaves me and phone calls home.

I couldn't think of a better dinner to tell him I love him then this Gluten Free Tamale Chicken Casserole, we both love Mexican food and this recipe is comfort food at it's best. Cornbread covered in chicken cooked in homemade enchilada sauce and then smothered with cheese.

Sometimes it's the little things you have to take time to enjoy and this casserole is one of those things. The only down side to this casserole is we both decided we wanted the leftovers for lunch on the same day but Colt beat me to them.

Next time I'll make sure to hide them better.
