Chicken Broccoli Casserole is a great easy dinner recipe. This family favorite casserole is filled with noodles, tender chicken, and broccoli covered with a creamy cheesy white sauce, then covered with crunchy panko topping!

Here's how to make this delicious Chicken Broccoli Casserole recipe that would be great paired with Bloomdust Chardonnay, Coral Pinot Gris, or Pinot Blanc from Origami:

Past being poured into boiling water.

Fill a large pot with 4 quarts of water and bring to a boil. Add 2 teaspoons of Salt and mix until well combined.

Add 16 ounces of O Organic® Penne Rigate or your other pasta shape. For firmer pasta cook for 8-9 minutes or just shy of al dente because the pasta will continue to bake in the sauce. For softer pasta cook for 10 minutes.

Drain pasta.

Chicken browned in a large pot sprinkled with flour.

In a large pot add 5 tablespoons Butter and cook over medium-high heat until melted.

Add 1 large Chopped Shallot and sauté until softened.

Add 1 1/4 lbs Diced Chicken Breast and cook until done. Alternatively 3 cup Diced Cooked Chicken or Turkey can be added.

Sprinkle with 1/3 cup All-Purpose Flour and cook for 1-2 minutes until the flour is well absorbed.

Milk being stirred in chicken and flour mixture.

Slowly stir in:
  • 4 1/2 cups Milk
  • 1 cup Half and Half
By slowly stirring in the milk about 1/2 cup at a time lumps from the flour will work itself out.

Parmesan Cheese being stirred into white sauce.

Stir in:
  • 1 cup O Organic Parmesan Cheese
  • 3/4 cup O Organic Italian Cheese
  • 1 1/2 cup Grated Fontina Cheese
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Black Pepper
Mix until cheese is melted. Taste sauce and add salt if needed. I usually find the cheese is salty enough for the sauce.

Stir into cheese sauce:
  • Cooked Pasta
  • 3 cups Bite Size Raw Broccoli Florets

Chicken Broccoli Casserole

Pour pasta mixture into a buttered 9"x13" buttered baking dish.

Top with remaining:
  • 1/3 cup Grated Parmesan Cheese
  • 1/3 cup Grated Fontina Cheese
  • 1/3 cup Grated Italian Cheese Blend

In a medium sized bowl mix together until well combined:
  • 1 cup O Organic Panko Bread Crumbs
  • 2 tablespoons Melted Butter

Sprinkle panko bread crumbs over the top of casserole and bake at 375° for 25-30 minutes until the top is light brown.

Chicken Broccoli Casserole

Ingredients

  • 16 ounces Penne Rigate5 tablespoons Butter
  • 1 large Shallot, Chopped
  • 1 1/4 lbs Chicken Breast, Diced
  • 1/3 cup All-Purpose Flour
  • 4 1/2 cups Milk
  • 1 cup Half and Half
  • 1 cup Grated Parmesan Cheese
  • 3/4 cup Grated Italian Cheese
  • 1 1/2 cup Grated Fontina Cheese
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Black Pepper
  • 3 cups Bite Size Raw Broccoli Florets
For Topping Chicken Casserole
  • 1/3 cup Grated Parmesan Cheese
  • 1/3 cup Grated Fontina Cheese
  • 1/3 cup Grated Italian Cheese Blend
  • 1 cup Panko Bread Crumbs
  • 2 tablespoons Melted Butter

Instructions

  1. Preheat oven to 375°.
  2. Fill a large pot with 4 quarts of water and bring to a boil. Add 2 teaspoons of Salt and mix until well combined.
  3. Stir in pasta. For firmer pasta cook for 8-9 minutes or just shy of al dente because the pasta will continue to bake in the sauce. For softer pasta cook for 10 minutes.
  4. Drain and set aside.
  5. In a large pot melt butter and cook over medium-high heat.
  6. Add shallot and sauté until softened. Stir in chicken and cook until done.
  7. Sprinkle chicken with flour. Stir until well combined and cook for 1-2 minutes until flour is cooked.
  8. Slowly stir in milk 1/2 cup at a time mixing well between each addition. Add half and half, cheeses, smoked paprika, and black pepper. Stir until well combined, taste, and add salt to taste if needed.
  9. Stir in broccoli florets, and pasta.
  10. Butter a 9"x13" pan. Add pasta mixture.
  11. Top casserole with remaining cheese.
  12. Mix together panko and melted butter until well combined. Sprinkle evenly over the top of cheese.
  13. Bake for 25-30 minutes until lightly brown.
  14. Allow to cool for 5-10 minutes before serving.
