I've been battling the cold from you know where lately, and I haven't been in the mood to cook anything extravagant only because the thought of any kind of mess to clean up right now is not appealing.

Creamy Sausage Mushroom Bow Tie Pasta Skillet hit the spot because it's so easy to make! 

So for Sunday night dinner I decided to make a favorite dish in our house because it really only dirties one pan, a knife and a cutting board. 

Hello easy clean up and it's rather simple to make and defiantly a comfort food dish for me with a nice salad.

This isn't the healthiest dish I've made by far but sometimes we indulge a little in our house with chicken sausage and mushrooms in a creamy tomato sauce, I think it's well worth the splurge. 

This is also a perfect dish to make for a small dinner party because most of the cooking is done in the oven and it is defiantly a crowed pleaser!

Who knew Homemade Yogurt is so very easy to make, and a great way to save some money! 

Homemade Yogurt is super easy to make, you know exactly what's in it and it tastes a lot and I mean a lot better then what I've been buying at the store all these years, and I don't buy the cheap yogurt just for the record.

Healthy Granola recipe with Vanilla Honey Nut Raisin is a favorite easy recipe from Serena Bakes Simply From Scratch.

Granola is one of my favorite things to have for breakfast or an easy snack! It's great with Homemade Yogurt or milk or a handful plain, It's definitely my go to meal with a little fruit stirred in.

You know what I love even more is making Granola from scratch because it is considerably cheaper, the ingredients are fresher, and it just plain old tastes better. 

Granola is an easy recipe to make.

The worst part about making granola is trying to decide what flavor combination to make, I guess we will be adding a few favorite granola combinations later. 

But for now I thought a recipe for traditional granola would do the trick!

I've been keeping these my little chocolaty secret for sometime now.. 
Since I came out last week and shared Gluten Free Peanut Butter Chocolate Chip Bites and it was a hit, I decided it was time to share another quick snack time cookie I make for the kids when I'm looking to make something a little bit healthier....
These cookies are super healthy, grain and gluten free, egg-less, easy to make and could be vegan if using Agave.
But most importantly these babies are double chocolate peanut butter deliciousness and I haven't shared these with the world yet only because I hated the pictures! Yep I said it!
 My food photo skills are improving but no matter what I did to these little bites the pictures just weren't as appetizing as I would have liked...
I actually feel rather proud of these photos only because the previous set really did not look appetizing at all! 
My kids had even joked around about the looks of the bites! But it sure didn't deter them from eating every last cookie! 
Now go get to baking!

Simple and beautiful Mango Salsa is always a favorite. There is something so delicious about the sweet and juicy mangoes paired with finely diced red onion, cilantro, spicy jalapeño then tossed with lime, fresh squeezed orange, and a generous sprinkle of salt that brings all the deliciously bright flavors together.

Eww..Gross... This was so gross hiding under my microwave hood vent... It was beyond time I share with you my trick on How to Clean A Greasy Hood Vent Filter.

By the time we're done this baby will be shiny new again! I promise and no I haven't been drinking...

I can't believe I let it get so bad.

I use borax because it doesn't have a strong smell and it's a natural product (which doesn't mean it's safe to eat, you definitely should keep it locked up like all cleaning supplies, and I use gloves while cleaning with it).

Fudgy Black Bean Brownies

Super Fudgy Black Bean Brownies are full of chocolate and a great way to sneak a little extra fiber into your diet!

I've had chocolate on my mind, and Fudgy Black Bean Brownies hit the spot. It's a bad habit but there's no way I'm willing to give it up!

I've seen different versions of black bean cakes, and brownies all over the internet, but the two biggest problems I had with the recipes I came across was either they had barely any black beans, or all black beans, but the texture didn't look quite as appealing. Most recipe's called for about 2/3 to 1 cup sugar more then what I used.

So last night in my brownie craving state I decided I was going to come up with a black bean brownie recipe with more beans but a traditional fudgy brownie texture and to try and reduce the sugar down. 

Let me tell you these are fabulously chocolaty and fudgy! Score!

I think the first bite I might have been able to taste a hint of the black beans but by the second I really couldn't tell.

Colt and the kids said these are some of the best brownies ever. When I told them I loaded them with black beans for protein, and fiber, Colt asked,"Are you pulling my leg?" He said he really couldn't tell so the black bean taste in the first bite might be all in my head. 

I am so very critical of the recipes I make, and pass on to you, because I know these are being fed to your husbands, wives, kids, families, and friends. 

Now go makes some fabulously Fudgy Black Bean Brownies! 

They really are divine.

White Bean Chicken Chili
With the forecast calling for snow in Seattle there was nothing more comforting then a big bowl of chili and cornbread! 
The prep time on this chili is under 10 minutes and could easily be tossed in the crock-pot to simmer for the day for a wonderful dinner to come home to.
This recipe fits 2 of my New Years resolutions! 
The first was to try and keep my grocery budget down, which this chili defiantly accomplished that even with leftovers! 
My second goal is to try and incorporate beans into our diet at least once a week because they are a wonderful source of antioxidants, protein, fiber, B vitamins, iron, magnesium, potassium, copper and zinc. Well and of course they are super affordable and great for the New Years resolution of a better budget or slimmer waist. We'll see how well I do on this goal but so far so good!

A creamy broth made of light coconut milk, chicken stock, lemon grass, kaffir lime leaves and many traditional Thai flavors. 

Filling so many requirements for this time of year of being healthy, easy, quick and very satisfying!

This soup probably is not traditional and is only my version of one of our favorite Thai soups.

I added baby kale to this soup, but feel free to use chopped kale or any other mild leafy greens you might have in the fridge.

Peanut Butter Chocolate Chip Bites are gluten free and a healthier sweet street from Serena Bakes Simply From Scratch with options for paleo and vegan.

Let's kick the new year off with Healthy Peanut Butter Chocolate Chip Bites a favorite healthy treat! 

First off let's not judge the ingredients. These are pretty amazing considering what the ingredients consist of. They are Gluten Free, Grain Free, and Dairy Free if you're food sensitive. 

You can use honey if you're following a paleo diet, or agave for a vegan option. 

Even the Hubby and kids love them! They are brutally honest, so I know these are good.

These are a fantastic little dessert or after school treat with no wheat and very high in protein from the chickpeas. Yes, I said it chickpeas.

I told you please don't judge these Peanut Butter Chocolate Chip Bites because they are a very good little treat if your trying to eat healthier in the New Year.

They taste like a doughy peanut butter chocolate chip ball, and are best straight out of the oven!
