I've had an almost full bottle of Creme De Menthe waiting to be used since making Grasshopper Pie at the very beginning of July and I couldn't think of a better combination to tame my mint and brownie cravings then Creme De Menthe Fudge Brownies.

Chocolaty fudge mint brownie topped with a layer of creamy creme de menthe goodness then covered in a layer of chocolate ganache.

Pumpkin Puff Pancakes
These aren't just any Puff Pancakes..
These are Puff Pancakes filled with Pumpkin and Spice and everything nice! 
Pumpkin Puff Pancakes are scrumptious.
Eye rolling in the back of your head amazing with every bite. 
If your feeling really naughty a little drizzle of Caramel Sauce  or maple syrup puts these bad boys over the top.
Just for the record Colt may or may not have drizzled Caramel Sauce all over my Pumpkin Puff Pancakes.
I may or may not have devoured every last bite of my Pumpkin Puff Pancake drenched in Caramel Sauce and licked my plate.
Be warned these pancakes come with lots of mmmms and yummms.

Oatmeal Chocolate Caramel Carmelitas

Oatmeal Chocolate Caramel Carmelitas are a favorite fall and Christmas cookie recipe with homemade caramel from Serena Bakes Simply From Scratch.
For some odd reason every time I make these Oatmeal Chocolate Caramel Carmelita's they're gone before I can even snap a photo.

This week our small group put out an APB for dessert since the family who was bringing dessert came down with the flu.

 How could I possibly not offer my dessert making skills?

So Tuesday morning I scavenged the cupboards to find some kind of sweet treat to make.

I haven't made Carmelita's since last winter and thought it was long over due for some Oatmeal Chocolate Caramel goodness.

Plus I was hopeful for a picture which almost didn't happen because Colt had a late night sweet tooth and ate about a third of a pan of Oatmeal Carmelita's with or without my help late Tuesday night.

I was relieved to find 2 bars left unharmed, whew that was close!

Please beware Oatmeal Chocolate Caramel Carmelita's disappear fast!

The BEST Hummus Recipe according to our house is Chipotle Artichoke Hummus. It's a favorite spicy hummus recipe, and easy to make! It is a delicious healthy snack and goes well with Charcuterie or Cheese Boards. Colt loves to use pita, crackers, chips, or veggies for dipping.

We love Hummus in our house. It's a super easy recipe to make for a healthy snack and Chipotle Artichoke Hummus just happens to be our favorite variation.

It's the absolute BEST Hummus to serve on your Charcuterie Board with veggies, pita bread, crackers, or chips for dipping.

Chipotle Artichoke Hummus is great a great appetizer for Thanksgiving, Christmas, Easter, or any other gathering since it's delicious made ahead of time and the flavor only improves after being refrigerated overnight if time allows.

It's a deliciously light and creamy hummus with small chunks of artichoke hearts for texture. The smokey chipotle peppers add plenty of flavor with their deeps smokey spicy flavor.

I used canned chickpeas to save time and to keep this easy to make anytime. Almost all the ingredients are pantry staples in our house. If you prefer to use dried chickpeas you can use the directions for How To Soak and Cook Dried Chickpeas from The Spruce Eats. If you cook your own chickpeas you'll need about 3 cups drained chickpeas for Chipotle Artichoke Hummus.

Chocolate Cream Pie

Chocolate Cream Pie recipe from scratch is a favorite dessert recipe from Serena Bakes Simply From Scratch.

I have a sweet spot for all things chocolate and that definitely includes Chocolate Cream Pie. 

There just something about rich chocolate pudding, pie crust and lightly sweetened whipped cream or  coconut cream (for a dairy free option) that makes me swoon. 

With the holidays quickly approaching I thought it was a good time to update the photo for the recipe and test out a dairy free option with Unsweetend Coconut Milk.

This pie didn't last long in our house.

 I'm not sure Colt even let the kids have a piece but I'm glad he snapped an updated shot before devouring what was left.

Is there anything better then Chocolate Cream Pie in life? 

I am a pie kind of girl, there is no denying that! AppleBanana Cream Pie,  Pumpkin Pie and don't let me forget Key Lime! I love them all! 

We where having company over so it was a perfect excuse to indulge in a chocolate and a banana cream pie, after all if you make one you have a second pie crust laying around waiting to be used, so you might as well make two! 

If you have never made Chocolate Cream Pie from scratch I promise it is easy and super worth it! 
Just thinking about it makes me want to go make another two pies, after all we did share with our company. 

Then there's the fork marks left in the pies from someones late night snacking binge. I really need to get an alarm on the fridge to keep my husband away.

I think both pies lasted less then 12 hours but well worth it!

Caramel Dutch Apple Pie was long over due for a new pic. It's a family favorite and a staple at Thanksgiving and Christmas. 

Apple Pie with a Crumble Topping never lasts long and I almost always make 2 but you can easily cut the recipe in half if you aren't feeding a small basketball team like our house.

I usually hide a piece or two to enjoy for breakfast the next morning.

I'm just a bit naughty like that sometimes.

Italian Wedding Soup With Meatballs

The Best Italian Wedding Soup Recipe! 

Wedding Soup is one of my favorites to make. The meatballs are made with a delicious blend of ground pork and beef for a delicious flavor and cooked in a chicken broth base. Small pasta is added like stars, orzo, alphabet or ditalini. I usually pick the funner shapes like stars or alphabet when I would make this for the kids. Curly Endive or kale is added when curly endive isn't available. At the very end whisked egg is then mixed in to the give a delicious body to this soup. 

Italian Wedding Soup or Italian Meatball Soup is a favorite broth soup filled with meatballs, chicory or kale, small pasta, and egg from Serena Bakes Simply From Scratch.

I decided to update the recipe for Italian Wedding Soup with Meatballs last week for 3 reasons.

#1. The picture below doesn't do this soup justice, it was so long over due for a picture overhaul. I left the step by step pictures from long ago, so no judgement please! 

#2. I realize sometimes it's hard to find curly endive and I wanted to see if kale would make a great substitute.The good news is it's fabulous with either! I really don't have a preference.

#3. The weathers quickly becoming soup weather and Italian Wedding Soup tops our all time favorite soups!  So I thought I would be kind and re-share! Just in case you need something to warm the soul.

Apple Puff Pancake

                I love Apple Puff Pancake or any Puff Pancakes for that matter!
I could eat one form or another of Puff Pancakes every morning for the rest of my life and feel totally satisfied. I can attest to this only because when I was in 4th or 5th grade Granny made me Puff Pancakes pretty much every morning and never once did I grow tired of there deliciousness.
This time I baked the apple into the Puff Pancakes out of sheer laziness.
The sides of the puff pancake don't rise as much with the apples baked inside as traditional puff pancakes but the taste is still totally amazing and it does rise gorgeously.
I also love to keep dishes to a minimum in the morning time because:
1. Who likes to do dishes? Not me!
2. I think we have a dirty dish ghost in our house, every time the sink is clean and empty he magically appears to refill it.
3. I love to cook but hate dirty dishes.
4. I super de duper hate dirty dishes. Enough said!
Alright I know you get the point, sorry I got a little carried away again.
I can't wait to make these again soon, they're defiantly one of my all time favorites!

One of my favorite Ham and Bean Soup recipes is Crock Pot Chipotle Ham and Bean Soup.

The weathers been cold, wet and windy in Washington the last few weeks.. My cold bones have been aching for warming comfort foods. This definitely hits the spot.

I made Chipotle Ham and Bean Soup in the Crock Pot before heading to church Sunday morning. I needed something easy and worry free.. I knew we had a large windstorm on the way, I am just thankful we didn't lose power. 

There's nothing I love more then a satisfying Ham and Bean Soup at the end of a cold, wet and windy day, other than maybe a hot bath and a slice of Caramel Dutch Apple Pie.

If I can have all 3 I am one happy Momma! 

Crock Pot Chipotle Ham and Bean Soup is a great use for leftover ham from the holidays but also an inexpensive soup made with a good quality smoked ham hock. I tried to keep this recipe simple and inexpensive because I understand so many families are on tight budgets but love flavorful and filling recipes. The chipotle pepper adds a little heat and extra smokiness to the soup.

I freeze the extra chipotle peppers and adobo sauce individually in small plastic bags for later, since I seldom use more then 1 or 2 peppers at a time.

A few more favorite chipotle dishes are Chipotle Chicken Sweet Potato Chili and Chipotle Black Beans. Incase you need a few ideas on what to make with your left over chipotle peppers. Both are delicious and healthy meals.
