Creme De Menthe Fudge Brownies

I have a total weakness for all things brownie and mint.
I've had an almost full bottle of Creme De Menthe waiting to be used since making Grasshopper Pie at the very beginning of July and I couldn't think of a better combination to tame my mint and brownie cravings then Creme De Menthe Fudge Brownies. 
Chocolaty fudge mint brownie topped with a layer of creme de menthe goodness than covered in a layer of fudgy chocolate. 
 I recommend putting these on the must make list sooner rather then later! 
You won't be disappointed.


Pumpkin Puff Pancake

Pumpkin Puff Pancakes
These aren't just any Puff Pancakes..
These are Puff Pancakes filled with Pumpkin and Spice and everything nice! 
Pumpkin Puff Pancakes are scrumptious.
Eye rolling in the back of your head amazing with every bite. 
If your feeling really naughty a little drizzle of Caramel Sauce  or maple syrup puts these bad boys over the top.
Just for the record Colt may or may not have drizzled Caramel Sauce all over my Pumpkin Puff Pancakes.
I may or may not have devoured every last bite of my Pumpkin Puff Pancake drenched in Caramel Sauce and licked my plate.
Be warned these pancakes come with lots of mmmms and yummms. 

Oatmeal Chocolate Caramel Carmelitas

Oatmeal-Chocolate-Caramel-Carmelitas.jpg For some odd reason every time I make these Oatmeal Chocolate Caramel Carmelita's they're gone before I can even snap a photo.
This week our small group put out an APB for dessert since the family who was bringing dessert came down with the flu.
 How could I possibly not offer my dessert making skills?
So Tuesday morning I scavenged the cupboards to find some kind of sweet treat to make.
I haven't made Carmelita's since last winter and thought it was long over due for some Oatmeal Chocolate Caramel goodness. 
Plus I was hopeful for a picture which almost didn't happen because Colt had a late night sweet tooth and ate about a third of a pan with or without my help late Tuesday night.
I was relieved to find 2 bars left unharmed, whew that was close! 
Please beware these disappear fast! 

Spicy Crock Pot French Dips

Since it's throw back Thursday I thought it's a great time to revisit a family favorite! 
Spicy Crock Pot French Dips.
When I made Spicy Crock Pot French Dips this time I thought I would try to make them with out all the fussy pre browning and caramelizing because sometimes life calls for easy and right now my life needs simplicity.
We tossed everything in the Crock Pot before church a few Sunday's back and I was so thankful I had nothing else to worry about the rest of the day! 
I'm happy to say the roast was amazingly delicious with out all the fuss of pre-browning.
So either way you make it, it's a winner.
So super easy to make and perfect for any parties you might be hosting or just an easy fix it and forget it meal!

The perfect cheesecake for Thanksgiving or Christmas. No Bake Pumpkin Cheesecake with Toasted Pecan Crust is always a hit! 

I've said it before and I'll say it again No Bake Pumpkin Cheesecake With Toasted Pecan Graham Cracker Crust is one of Colts all time favorites. 
The minute October hit and the leaves on the trees turned orange Colt and the kids started dropping hints that they really wanted a slice of Pumpkin Cheesecake and were more than willing to help in the kitchen.
We've been spending most Saturday's working on the weekly recipes and Colt's been taking most the pictures still which has been a life saver since the window I take photo's in takes a little bit of climbing and balancing above the kitchen sink and there's no way my body could handle that yet.
 I have an unusual set up but it's the perfect light source.
Such a great excuse for a family day in the kitchen!

This is another of my hubby's favorites, no bake pumpkin cheesecake. I am sure I have been making this for at least 10 years. It reminds me of pumpkin pie with whip cream folded in. It is fairly light but still rich. 
A small slice goes a long way, just a hint we had brought this to our life group for dessert and my hubby sliced big old manly man slices ( he likes to feed people). It was a bit too large! Keep them small.

I don't think I've ever met someone who doesn't like cookies.
 Especially chewy cookies with a little crispy edge and filled with white chocolate and macadamia nuts.
Who could resist?
Especially these Brown Butter White Chocolate Macadamia Nut Cookies. 
They were divine.
Notice the past tense, yep they didn't last long.
I was pretty impressed when the kids made these.
They used my recipe from Perfect Chocolate Chip Cookies as the base.

I came home and rested after church Sunday because my lower back was flared up from the previous day at the pumpkin patch and walked out to this. 
Creepy spiders and cob webs covering the inside and outside of our house! 
The kids and Colt did such a wonderful job, I feel blessed to have such good help.
I usually do most the decorating but ladder climbing and lifting still isn't happening anytime soon.

Citrus Orange Cinnamon Rolls

These were so good! 
The weekends fast approaching and I think you need to make Orange Cinnamon Rolls because you deserve it. 
Plus they make the house smell amazing! 
I love the orange cinnamon combination, it reminds me of fall and the holidays.
These will defiantly be on our Christmas morning menu this year.
Colt and I teamed up Sunday to make Citrus Orange Cinnamon Rolls after church and in between watching Football and snacking.
The best part was knowing Monday morning we had Citrus Orange Cinnamon Rolls and coffee to help get the day started.
I love Monday morning said no one ever! 
But a cinnamon roll with breakfast sure can help make it a little better.

Chipotle Artichoke Hummus

I'm behind today, I wanted to have this up and posted early this morning before my weekly appointments. But my bed was way too cozy and I only managed to roll out of bed to head to the chiropractor by the shear love of my husband bringing me a cup of coffee in bed and some gentle coaxing. I use to never be a coffee drinker but now I'm a hard core morning coffee lover... My morning cuppa gets me up and moving!Then I came home and seemed to accomplish nothing I wanted to get done, other then soak in my bath tub with the jets up to my ears to try and relieve some of the aches and pains from physical therapy and my daily exercises.

But I decided I wasn't going to let this hold me back from sharing one of our families favorite dips Chipotle Artichoke Hummus. What kind of friend would I be, if I didn't?

If you've been reading the blog for sometime I'm sure you've probably figured out I have a spicy little addiction to chipotle peppers. I don't know about you but I always love a healthy dip filled with flavor to help relieve my hunger pains at gatherings, light lunch or a before dinner healthy snack option.

We used blue corn chips or plain rice crackers for a gluten free option but pita chips are amazing too.

Chocolate Cream Pie

I have a sweet spot for all things chocolate and that definitely includes Chocolate Cream Pie. 

There just something about rich chocolate pudding, pie crust and lightly sweetened whipped cream or  coconut cream (for a dairy free option) that makes me swoon. 

With the holidays quickly approaching I thought it was a good time to update the photo for the recipe and test out a dairy free option with Unsweetend Coconut Milk.

This pie didn't last long in our house.

 I'm not sure Colt even let the kids have a piece but I'm glad he snapped an updated shot before devouring what was left.

Is there anything better then Chocolate Cream Pie in life? 

I am a pie kind of girl, there is no denying that! Apple, Banana Cream, Pumpkin and don't let me forget Key Lime! I love them all! 

We where having company over so it was a perfect excuse to indulge in a chocolate and a banana cream pie, after all if you make one you have a second pie crust laying around waiting to be used, so you might as well make two! 

If you have never made Chocolate Cream Pie from scratch I promise it is easy and super worth it! 
Just thinking about it makes me want to go make another two pies, after all we did share with our company. 

Then there's the fork marks left in the pies from someones late night snacking binge. I really need to get an alarm on the fridge to keep my husband away! 

I think both pies lasted less then 12 hours but well worth it!

Caramely Apple Pie With Crunch Topping is a fall must have.

I've been on a roll lately making some of our family favorite recipes, and updating pictures. 

Caramel Apple Pie With Crunch Topping was long over due for a new pic. It's a family favorite and a staple at Thanksgiving and Christmas. This pie never lasts long and I almost always make 2 but you can easily cut the recipe in half if you aren't feeding a small basketball team like our house.

I usually hide a piece or two to enjoy for breakfast the next morning.

I'm just a bit naughty like that sometimes!

Italian Wedding Soup With Meatballs

I decided to update this recipe last week for 3 reasons.

#1. The picture below doesn't do this soup justice, it was so long over due for a picture overhaul. I left the step by step pictures from long ago, so no judgement please! 

#2. I realize sometimes it's hard to find curly endive and I wanted to see if kale would make a great substitute.The good news is it's fabulous with either! I really don't have a preference.

#3. The weathers quickly becoming soup weather and this tops our all time favorite soups! 
So I thought I would be kind and re-share! Just in case you need something to warm the soul.

Apple Puff Pancake

                I love Apple Puff Pancake or any Puff Pancakes for that matter!
I could eat one form or another of Puff Pancakes every morning for the rest of my life and feel totally satisfied. I can attest to this only because when I was in 4th or 5th grade Granny made me Puff Pancakes pretty much every morning and never once did I grow tired of there deliciousness.
This time I baked the apple into the Puff Pancakes out of sheer laziness.
The sides of the puff pancake don't rise as much with the apples baked inside as traditional puff pancakes but the taste is still totally amazing and it does rise gorgeously.
I also love to keep dishes to a minimum in the morning time because:
1. Who likes to do dishes? Not me!
2. I think we have a dirty dish ghost in our house, every time the sink is clean and empty he magically appears to refill it.
3. I love to cook but hate dirty dishes.
4. I super de duper hate dirty dishes. Enough said!
Alright I know you get the point, sorry I got a little carried away again.
I can't wait to make these again soon, they're defiantly one of my all time favorites!

Caramel Apple Cake

My three favorite words in the whole wide world Caramel Apple Cake.
There's just something about caramel and apples that makes my heart pitter patter..
Its one of the things that makes fall one my favorite seasons, along with the gorgeous colors of the trees, cozy sweaters and boots..
I totally planned on posting this cake yesterday but somehow my time disappeared. I started out editing pictures, then waiting for them to upload, so I started poking around Facebook and Pinterest.
I don't think I need to tell you what happened from there...
Before I knew it Colt was headed home to take me to a Doctors appointment and I had barely accomplished anything including the afternoon nap I had planned.
I wonder if I can have a rain check for my missed nap? Oh well..
I guess I'll stop rambling on and get down to business..

Crock Pot Chipotle Ham And Bean Soup

The weathers been cold, wet and windy in Washington the last few weeks.. My cold bones have been aching for warming comfort foods.

I made Chipotle Ham and Bean Soup in the Crock Pot before heading to church Sunday morning. I needed something easy and worry free.. I knew we had a large windstorm on the way, I am just thankful we didn't lose power. There's nothing I love more then a satisfying soup at the end of a cold, wet and windy day, other then maybe a hot bath and a slice of apple pie.

If I can have all 3 I am one happy Momma! 

Crock Pot Chipotle Ham and Bean Soup is a great use for leftover ham from the holidays but also an inexpensive soup made with a good quality smoked ham hock. I tried to keep this recipe simple and inexpensive because I understand so many families are on tight budgets but love flavorful and filling recipes. The chipotle pepper adds a little heat and extra smokiness to the soup.

I freeze the extra chipotle peppers and adobo sauce individually in small plastic bags for later, since I seldom use more then 1 or 2 peppers at a time.

A few more favorite chipotle dishes are Chipotle Chicken Sweet Potato Pumpkin Ale Chili and Chipotle Black Beans. Incase you need a few ideas on what to make with your left over chipotle peppers. Both are delicious and healthy meals.
