Brown Butter Rice Crispy Treats

Brown Butter Rice Crispy Treats are an easy to make delicious spin on a family favorite.
I've been making Brown Butter Rice Crispy Treats for some time now after I had accidentally browned the butter a few years back.
I've gone back and forth trying to decide if you all would totally think I was crazy for sharing my favorite little recipe with you but after much consideration I figured if you haven't accidentally browned your butter before you've been missing out on one of life's best kept secrets.
The brown butter adds a rich nutty taste to these little gems.
Just incase the brown butter wasn't enough I slathered the top with a little chocolate ganache just cause that's how I roll...

Peanut Butter Blondies

Tuesday, May 20, 2014
Peanut Butter Blondies are delicious and easy to make.
We made these delicious Peanut Butter Blondies for Mother's Day because we had already devoured the Frozen Strawberry Cheesecake I shared with you that day.
Matter of fact these didn't last long either and may or may not have resulted in a melt down from one of the kids.
Someone ate more then their share resulting in some serious interrogation in our house.
You would think we never have dessert the way it all went down but to be honest if it was my slice of Peanut Butter Blondies I might have resulted to interrogating people too.
We might take dessert a little too seriously sometimes.

Saturday, May 17, 2014

An easy to make pasta salad for any gathering. Creamy Avocado Bacon Pasta Salad with Dill Dressing is easy and delicious.

Creamy Avocado Bacon Pasta Salad with Dill Dressing. So good and easy to make.
I'm totally smitten with this Creamy Avocado Bacon Pasta Salad with Dill Dressing. When I first made it I thought it was ok but after a couple of hours in the fridge it became amazing.
I couldn't seem to keep the kids out of the leftovers.

When I couldn't sleep the other night because it felt like someone was running a stake into my hip I resorted to enjoying the last bit of this luscious salad and catching up on this weeks Ink Master Episode. I'm just going to get it out there I never thought I would be watching a tattoo competition when I can't sleep but I've been pulled into the show.

For pete's sake I don't even have a tattoo, not to say at some point down the road this might change.
First off my best friend from High Schools husband is Sausage and I'm totally praying that he wins because his works incredible, he's had the best attitude on the show all season and well he is my best friends husband.

Do I need to say more?

I actually haven't seen her in like 15 years when her family moved away. I was hoping to go visit her last fall if only for the weekend but the car accident happened, and so we had to postpone. She's that friend that some how senses when I need her and calls or text's me things that make me smile or leaves me a silly little comment on a photo.

I don't know what I would do without that girl! #GOTEAMSAUSAGE

Frozen Strawberry Cheesecake

Frozen Strawberry Cheesecake from Serena Bakes Simply From Scratch.
Happy Mother's Day to all the wonderful Mother's out there! I am excited to be joining Sunday Supper this week to share Frozen Strawberry Cheesecake for Mother's Day.

I was blessed growing up to have multiple wonderful women in my life. A few of the most important were my Mother of course, my Granny, Grandma Lorna and Tutu.

My Mother always made sure my childhood was wonderful no matter how much she struggled with being a young Mother. She was one of the best bedtime story tellers ever and always made sure I brushed my teeth. She loved me unconditionally. She made hard, unselfish decisions like having my Granny raise me when her and my Father became divorced so I could have someone there at all times to raise me in a stable home. A home she new was the best situation for me.

I was blessed with my Granny who had time to do the things most stay at home Mom's do. She shuffled me to birthday parties, Brownies and volunteered at my school. She made sure breakfast, lunch and dinner were always on the table. I never thought much about how my life was different living with my Grandparents. My Granny Passed away over 18 years ago and I still miss her to this day.

My Grandma Lorna was the fun one who would take me on weekends for adventures with tea parties on the patio, hikes and once she lived in a teepee for a year and let me stay the night.
It took a lot of begging to have a sleep over in her teepee but I'll never forget how cool I thought it was. My Grandma Lorna taught me to love nature and that it's not the stuff that's important in life but how the time is spent.

My Tutu (Hawaiian for Grandmother) took me for summer's in Hawaii with my Grandpa once I was old enough to fly alone. She made sure my summers were full of fun activities like days at the beach, learning to boogie board, lunch dates and shopping for new school clothes.

All of these women had a huge impact in my life and made me who I am today. So to celebrate all these wonderful women in my life I made a Frozen Strawberry Cheesecake because not only is it delicious but the color's so pretty! Perfect for Mom!

Broccoli Salad

Crunchy Broccoli Salad in a light sesame vinaigrette filled with bell pepper, red onion, cheddar cheese and sunflower seeds makes this a delicious salad for summer time barbecues, gatherings and picnics.

Broccoli Salad filled with red onion, bell pepper, sunflower seeds and cheddar cheese in a sesame seed dressing.
This recipes comes from my sweet seester-in-law Dana, well it's actually adapted because I can't find the original recipe she gave me 15 years ago but let me tell you this is a must make!
I decided to make Broccoli Salad last weekend because the minute the weather becomes warm and sunny I crave salads, barbecues and dinner on the patio so we did all 3 before the rain came.
The boys had a friend over for a sleepover and they all gave the broccoli salad double thumbs up other then LJ, he said I lost half a thumb because I added cheese..
He's now decided he likes cheese but only when it's grated, we'll see how long that lasts.
As most of you know I don't cater to picky eating so I left him to pick out his little orange cubes of cheese and share them with his brother.
Just for the record he did tell me I would have gotten two thumbs up if I didn't add cheese.
This is one of those salads that can be made ahead of time or the night before and becomes even better with age as the vinaigrette soaks into the broccoli softening it just slightly.
The perfect salad for all of those summer barbecues, gatherings and picnics.

Skinny Banana Chocolate Chip Muffins
I was given 2 cookbooks for this review but didn't receive any further compensation for this post and giveaway all thought and opinions are my own.
I received a copy of Sally's Baking Addiction Cookbook in the mail last week and I'm excited to have an additional copy to giveaway to one of you!
It was really hard deciding which of her recipes to make first, so many drool worthy photos.
If you haven't stopped by Sally's blog you can finder her at Sally's Baking Addiction where she shares lots of delicious treats to keep you drooling.
We decided Sunday morning to make Sally's Skinny Chocolate Chip Muffins to help kick start our day along with some loaded scramble eggs and fresh fruit.
The texture is a little bit different from traditional muffins because it used yogurt in place of butter or oil to cut calories but a few less calories is always a good thing.
Sally used honey in the muffins that left the house with such a delicious smell of honey and banana as the muffins baked, it was hard to wait for them to cool.
We thought they were best fresh from the oven.
We didn't even slather them with butter.
Giveaway of Sally's Baking Addiction Cookbook.
I can't wait to make the cover cookies too! Who can ever pass on chocolate and sprinkles?
It makes me happy just looking at it!

Homemade Soft Flour Tortillas
Homemade Flour Tortillas are one of those things that take a little work to make but it so worth the effort and with the help of the food processor the task has become a little bit simpler. These aren't quite authentic because I've been making mine with butter over the last few months since I seldom have shortening in the house and truth be told I've never bought lard..

Since these are delicious as is, why mess with a good thing?

Warning: Once you start making these it will be hard to eat store bought tortillas ever again. Homemade Soft Flour Tortillas are the way to go!

Homemade All Natural Inexpensive Weed Killer

Homemade All-Natural Inexpensive Weed Killer
Our yards been over run by weeds this year, so I decided to make Homemade All Natural Weed Killer thats super inexpensive.
I usually buy the all natural weed killer at the local home improvement store because of the kids, and dogs, but it is so expensive.
Vinegar on the other hand is very inexpensive, and works even better then the fancy all natural weed killer I had been buying.
We picked up 2 gallons of vinegar at Costco for under $4.00 and it worked wonderfully when mixed with salt, and a little dish soap.
Under $5.00 bucks total for something that is completely safe for my kids, and pets, that kills weeds is a good thing in my book!
In a clean pump sprayer that hasn't had any chemicals added mix 1/3 cup Salt or 2 ounces Orange Oil, 1 teaspoon All Natural  Liquid Dish Soap.
Tip: If your wanting to grow other things where you are spraying this mixture use orange oil instead of salt according to a reader on Facebook the salt will make it hard for other plants to grow in the soil.
Pour in 1 gallon of White Vinegar and use a long paint stir stick and mix until combined.
Alternately if your strong like Colt you can just shake it until well combined.
Make sure the salt on the bottom becomes dissolved.
Weeds are best sprayed on a warm day when their is no rain for 24 hours.
The picture on the right was 12 hours after the weeds were sprayed.

Looks like it worked to me!
Now at least I have the weeds under control until Colt has time to pull them.

prep time: 5 MINScook time: total time: 5 mins

  • 1/3 cup Salt or 2 ounces Orange Oil
  • 1 teaspoon All Natural Dish Soap
  • 1 Gallon Plain White Vinegar

  1. Add all ingredients to a clean pump spray that hasn't been used for chemicals and mix or shake until salt is dissolved. The salt provide long term weed control but seedlings and delicate plants might have a hard time growing in the soil after spraying with salt. If you will be planting in the area you are spraying orange oil is a better alternative.
  2. Spray weeds on a warm day when no rain is expected for 24 hours.
