Sweet and Spicy Cajun Style Meatloaf with Bacon.

We made Cajun Meatloaf the other night after we were done hitting up our local Safeway for the stock up sale.

The chilly weather and torrential down pour of rain left me craving comfort food. Of course we didn't plan dinner while we were out shopping. Luckily, I had picked up everything I needed for Meatloaf except Oatmeal, or breadcrumbs, so I subbed them out with crushed up Cheerios™. Luckily it worked like a charm, and the kids didn't even know the difference.

Are you ready to make Cajun Meatloaf?
Saute 1/2 a Diced Large Onion in 1 tablespoon Olive Oil, until softened. Add Onion to 2 pounds Lean Ground Beef, 3/4 cup Ground Cheerios, 2/3 cup Heinz Ketchup, 2 whole Egg, 3 teaspoons Brown Sugar, 1 teaspoon Dijon Mustard, 1-2 teaspoons Hot Sauce, and 1 teaspoon Salt.
Add 1 1/2 teaspoons McCormick Perfect Pinch Cajun Seasoning, and mix until well combined.
Place into a pan, and shape into a loaf.

Tip: Meatloaf can be cooked on the top of a lined broiler pan, so the grease drains into the bottom, if preferred.
For the Cajun Barbecue Sauce stir until well combined 1 cup Heinz Ketchup, 2 tablespoons Brown Sugar, 1 tablespoon Floridas Natural 100% Orange Juice, 1 teaspoon McCormick Perfect Pinch Cajun Seasoning, 1/2 teaspoon Molasses, and 1/4 teaspoon Salt.
Spread 3/4 of Cajun Barbecue Sauce over Meat Loaf.
Cover with 6 strips of Bacon. Bake in a 375 degree oven for 30 mins.
Brush Bacon with remaining Cajun Barbecue Sauce, and cook for 30-45 minutes uncovered. Until Meatloaf is cooked through, and reaches 160 degrees in center.
Allow to rest for 5-10 minutes before slicing, and serving.

Cajun Meatloaf
  • 1 tablespoon Olive Oil
  • 1/2 whole Onion, Diced
  • 2 pounds Lean Ground Beef
  • 3/4 cup Cheerios, Ground
  • 2/3 cup Heinz Ketchup
  • 2 whole Eggs
  • 3 teaspoons Brown Sugar
  • 1 1/2 teaspoons McCormick Perfect Pinch Cajun Seasoning
  • 1 teaspoon Dijon Mustard
  • 1-2 teaspoons Hot Sauce (To Taste)
  • 1 teaspoon Salt
Cajun Barbecue Sauce
  • 1 cup Heinz Ketchup
  • 2 tablespoons Brown Sugar
  • 1 tablespoon Floridas 100% Orange Juice
  • 1 teaspoon McCormick Perfect Pinch Cajun Seasoning
  • 1/2 teaspoon Molasses
  • 1/4 teaspoon Salt
  • 6 strips Bacon


Cajun Meatloaf
  1. Saute onion in olive oil, until softened, and starting to caramelize.
  2. In a large bowl combine sautéed onion, ground beef, ground cheerios, ketchup, eggs, brown sugar, Cajun seasoning, mustard, hot sauce, and salt. Mix until well combined.
  3. Place into pan, and shape into a loaf.
Cajun Barbecue Sauce
  1. Mix all ingredients together, until well combined.
  2. Spread 3/4 of barbecue sauce over meatloaf. Cover with bacon strips.
  3. Baked uncovered for 30 minutes. Brush with remaining barbecue sauce, and bake an additional 30-45 minutes until cooked through. Internal temperature should be 160 degrees.
  4. Allow Meatloaf to rest 5-10 minutes before slicing.
