Sweet and Spicy Cajun Style Meatloaf with Bacon.

We made Cajun Meatloaf the other night because it's the ultimate fall comfort food.

It's sweet and spicy plus covered with bacon! Meatloaf is delicious served with mashed potatoes or baked potatoes and of course your favorite veggie.

Sweet and Spicy Cajun Style Meatloaf recipe from Serena Bakes Simply From Scratch.

ingredients:

Cajun Meatloaf
  • 1 tablespoon Olive Oil
  • 1/2 whole Onion, Diced
  • 1/2 whole Bell Pepper, Diced
  • 2 pounds Lean Ground Beef
  • 3/4 cup Oatmeal
  • 2/3 cup Ketchup
  • 2 whole Eggs
  • 1 tablespoon Worcestershire Sauce
  • 3 teaspoons Brown Sugar
  • 1 1/2 teaspoons Cajun Seasoning
  • 1 teaspoon Dijon Mustard
  • 1-2 teaspoons Hot Sauce (To Taste)
  • 1 teaspoon Salt
Cajun Barbecue Sauce
  • 1 cup Ketchup
  • 2 tablespoons Brown Sugar
  • 1 tablespoon Orange Juice
  • 1 teaspoon Cajun Seasoning
  • 1/2 teaspoon Molasses
  • 1/4 teaspoon Salt
  • 6 strips Thick Sliced Bacon

How to cook Cajun Meatloaf

  1. Preheat oven to 375 degrees.
Cajun Meatloaf
  1. Sauté onion in olive oil, until softened, and starting to caramelize.
  2. In a large bowl combine sautéed onion, ground beef, oatmeal, ketchup, eggs, worcestershire sauce, brown sugar, Cajun seasoning, mustard, hot sauce, and salt.
  3. Mix until well combined.
  4. Place into pan, and shape into a loaf.
  5. If you have a broiler pan available you can line the lower pan with foil or parchment paper for easy clean up and cook meatloaf on upper pan so the grease can drip off.
Cajun Barbecue Sauce
  1. Mix all ingredients together, until well combined.
  2. Spread 3/4 of barbecue sauce over meatloaf. Cover with bacon strips.
  3. Bake uncovered for 30 minutes. Brush with remaining barbecue sauce, and bake an additional 30-45 minutes until cooked through. Internal temperature should be 160 degrees.
  4. Allow Meatloaf to rest 5-10 minutes before slicing.
