A pitcher of Handmade Raspberry Margaritas made with fresh ingredients is an impressive cocktail recipe everyone loves.

We made a pitcher of these Raspberry Margaritas way back at Cinco De Mayo, but I think they would be a hit for 4th of July!

They are an absolute favorite for summertime barbecues, parties or just to enjoy on the back patio to kick off the weekend.

I mean who doesn't love an easy Pitcher Margarita recipe? They are absolutely delicious! 

The best part of these Raspberry Margaritas is they can be made ahead of time and stored in the fridge. Just add ice to the glasses instead of the pitcher when serving.

It's definitely a favorite pitcher cocktail recipe for summer entertaining along with Peach Whiskey Iced Tea, Strawberry Grapefruit Iced Tea, Spiked Blackberry Lemonade, and Slushy Mango Margaritas.

Homemade Flour Tortillas are one of those things that take a little work to make but it so worth the effort and with the help of the food processor the task has become a little bit simpler.

These aren't quite authentic because I've been making Flour Tortillas with butter over the last few months since I seldom have shortening in the house and truth be told I've never bought lard..
Since these are delicious as is, why mess with a good thing?

Warning: Once you start making these it will be hard to eat store bought tortillas ever again.

Chicken Enchilada Soup

Chicken Enchilada Soup recipe is like the Enchilada Soup Recipe from Chilis. It's one of my favorite soups, naturally gluten free, easy to make in  under 30 minutes and so good from Serena Bakes Simply From Scratch.

I've been craving Enchilada's lately so I decided to make Chicken Enchilada Soup, a healthier alternative to traditional Enchiladas.

Two of my all-time favorite things just happen to be Enchiladas and Soup. So after ordering Chili's Enchilada Soup one time I was hooked! Enchilada Soup is now one of my top 5 favorite soup recipes!

It's the perfect comfort food since it has all the things that make Enchiladas great, but with a healthier spin.

I used Breast Fillets and black beans for plenty of protein. 

Masa Harina is used to thicken the soup so it's naturally gluten free. It's easy to make in under 30 minutes, and since the cheese is added as a garnish it's easy to control quantity. 

All the ingredients for the soup are kitchen staples in my house making this an easy dinner on a cold day.

It makes a great party appetizer and is always a hit for tailgating with chips. We love it over Tacos. The sweet pineapple, blueberries with the kick of habanero and jalapeño makes an amazing fusion of flavors when paired with Fish, Shrimp, Chicken, Pork, or even the Smoked Beef Tacos I will be posting in a few days.

I was a little surprised when Colt said he was totally addicted to this Habanero Pineapple Blueberry Salsa and choose to polish off the bowl before he devoured the remaining Pico De Gallo. He sometimes hesitates when it comes to fruit salsa, but this is far from being overly sweet with a nice heat unlike some Fruit Salsas are.

Blueberry Mango Salsa

The first time I had Blueberry Salsa was over Fish Tacos when Colt and I were having a date night and I instantly fell in love with the sweet blueberries paired with the spiciness of the jalapeño, and cilantro. There's something about good food that just lingers in my mind making it hard to forget, and this Blueberry Mango Salsa is one of those you won't quickly forget!

So for Sundays big game I made Blueberry Mango Salsa, to go with the Fish Tacos Colt made. It's also a favorite when we make Quick Shrimp Tacos or even Breakfast Burritos! We also like to keep it in the fridge as a healthy snack, and it makes a great topping for chicken, and fish.

I love Cinco De Mayo simply because it's one of those great reason's to eat Mexican food and drink margarita's which is defiantly on the top of my all time favorite things list! 

In case you need an easy sweet treat for dessert these Cinnamon Sugar Tortillas are a favorite in our household. These are my version of Bunuelos or better know as Elephant Ears at the fair.

The kids beg for me to make these every time we have Homemade Soft Flour Tortillas.

When I'm feeling fancy we even drizzle them with a little strawberry puree and whipped cream.

I'm so stoked barbecue season is almost here and one of my all time fav's on the barbecue is this recipe for Carne Asada!

Flank Steak was on sale while we were at ye olde grocery store trying to stick to our list which seems pointless. I always end up buying way more food then what I planned.

It's the black hole of our pocket book, I really should buy stock in the local grocery store and Costco.
Oh don't get me started on Costco we actually celebrate when we step foot out of there under $100.00.
We actually double high five and play Celebrate by Kool and The Gang on our way home.

Ok you caught me I actual sing Celebrate while the kids yell at me to stop and tell me I'm embarrassing them.. They have no idea what embarrassment is! I grew up with a couple of Uncles that were always more then ready to be crazy and embarrassing.  I remember one year for my birthday we drove through down town Portland with my Uncle honking the horn and yelling out the window that it's my birthday.

Let's just say everyone and their Grandmother was staring at our car. It's what makes me love my family so much they always know how to have a great time and provided me with some pretty amazing memories.

Alright before I start getting all sentimental we better get back to the recipe for Carne Asada.
