I've been working on a skillet revolution lately because I hate always having a never ending pile of dishes growing in the sink plus, some nights dinner done in under 30 minutes leaves me jumping for joy.

Chicken Enchilada Pasta is a super easy one skillet dinner recipe using chicken breast, but hamburger could always be substituted. It's a perfect dinner for a busy weeknight in under 30 minutes.

The one thing I always loved about Hamburger Helper was the one skillet to clean, and how easy it was to make.

No one should have to fill the dishwasher multiple times per day, unless you have 10 kids then I am so sorry for the dishes and laundry, I can only fathom how crazy this drives you. Just the thought makes me want to pull the hair out of my head.

 Chicken Enchilada Pasta Skillet is made totally from scratch, easy to make, no canned enchilada sauce needed, and tastes amazing!

 It's a perfect combination of two of my favorite things pasta and enchilada's all in one perfect dish.

I know we usually only do from scratch recipes it even says it in my title but this Sunday we are doing something a little bit different.
This weeks theme for Sunday Supper is quick and easy recipes using McCormick Skillet Sauces and I decided to make these Smokey BBQ Pulled Chicken Sandwiches with Creamy Coleslaw.
Let me tell you now not only are they done in under 30 minutes they are off the flavor chart! 
We have lots of nights where we need something quick and easy for dinner between the kids sports and school activities.
These are quick and easy enough Colt or I can fix dinner for the crew on a night we might have eaten out otherwise.
I was extremely impressed with how much flavor was packed into the pouch, the finished product came out tasting jut like the slow cooked Smokey BBQ Pulled Chicken Sandwiches that have been slow smoked all day on the grill but made in under 30 minutes.
We whipped together a quick and easy Creamy Coleslaw to go with these because it pairs perfectly with smokey sweet BBQ sauce.

What's that? How did I know? Because I can totally relate.
Right now our days seem to fly by.
We have basketball practice a few times a week for the kids, I have physical therapy that some day's just kicks my booty and did I mention the never ending amount of homework they always have but some how seem to forget until it's bed time.
One Pot Tortellini with Sausage, Spinach & Artichokes is so easy to make and the dishes are minimal.
Double score! 
Leaving a little more time to make sure the kids have homework completed before bedtime or just to snuggle up to watch a movie.
Oh wait a minute I almost forgot the best part..
It's super de duper tasty!

With school about to start and summer coming to a close I thought there's no better time to share one of our favorite quick meals.
Quick Shrimp Tacos With Pineapple Mango Salsa. 
There's something amazing about the combination of shrimp with the sweet pineapple, mangos, spicy jalapeños and cilantro with a squeeze of fresh lime. 
These are a staple in our weekly meal rotation and I thought there's no better time to share this favorite then now.
We seem never to have leftover's when we make these and second helpings disappear fast.

First off sorry about the picture. On this particular night dinner was done around 7P.M. and the sun had already set, leaving me less then happy with the photos. Inside food photography's hard with out special lighting.
But on another note dinner was AMAZING and super healthy too! What more can you ask for in a dish? Lean protein paired with Kale which by the way is a super food and taste amazing cooked with the clams. 
We paired this with a little toasted baguette for soaking up the broth at the bottom of the bowl and a nice glass of wine. The best part this meal is done in 25 minutes (other then the soaking of the clams)! Totally gourmet weeknight meal!
This dish came together as a duel effort. We where aiming for a quick weeknight dinner with the least amount of dishes possible and the middle child had been begging for clams for weeks, I know my kids aren't quite typical but my secret was consistently offering whatever my husband and I ate. I never once offered the kids the option of a special meal and the kids will eat close to anything as long as it taste's good. The only down side to this is if the food doesn't taste good the kids have no problem saying so and I have been left on a few occasions trying to cover up what I could barely eat myself when we have been over to someones house to eat. 
Over cooked, under seasoned food is hard for the palate.

Roasted Tomato Pasta Recipe is the perfect way to use up garden fresh tomatoes from Serena Bakes Simply From Scratch.

Roasted Tomato Pasta a perfect use for the over abundance of cherry tomatoes growing in the yard this time of year and a fresh light spin for a Meatless Monday night dinner.  

The easy light fresh sauce combined with the pop in your mouth roasted tomatoes creates a wonderful easy one pan dinner. 

We enjoyed this with a nice glass of organic Pinot Grigio and homemade Easy Chessy Garlic and Herb Bread  Sticks

Roasted Pumpkin Puree

Homemade Pumpkin Pie Puree with roasted pumpkins. There is nothing to compare. 

My Aunt Sonya for as long as I can remember makes all of her pumpkin pies and cheesecake with homemade puree, she uses a particular type of squash she prefers but I always forget the name so I just use good ole sugar pie pumpkins. 

I will have to email her and ask again and see if I can tell a difference.. She's always been such a foodie and an amazing inspiration! 

Homemade Roasted Pumpkin Puree is so much more creamy and will work cup for cup for canned pumpkin. I like to make extra and freeze it for later when the pumpkins are on sale. 

This is a pre op for Pumpkin Pie and hopefully my hubby's favorite No Bake Pumpkin Cheese Cake. I can't wait to share my favorites!
