I spent all weekend trying to decide what to call this bad boy. It's a bit like a thick flaky pie crust top with a little bit of a fluffy biscuit underneath with lots of cinnamony apple goodness.

Colt and the kids just kept saying how amazing it is but still wouldn't help name the cinnamon apple deliciousness..

So we're just going to call it Apple Pie Cobbler, the best of both worlds with a butter cinnamon sugar topping..

Other then trying to name this little deliciousness we didn't seem to accomplish much of anything this weekend except a lot of loafing. We may or may not have been in PJ's until 2PM and by we I mean me and Colt. Hey don't judge you should try it out once in awhile, it was so nice.

This past week we didn't adhere to our menu plan very well.
Colt called me Friday afternoon and asked me out to a dinner date. How could I say no? The last few months we've been awful about dating so I was super excited.
He surprised me pizza for the kids, flowers and movie tickets to see Divergent since we had both read the book. We had a great time other then my constant shifting from my back acting up from sitting too long, even with a few trips to the bathroom so I didn't just look like a weirdo standing in the back of a movie theater. He had tried to reserve the reclining seats at ipic but they had already been reserved, he really went out of his way to set up a great date.
Then Saturday morning we had to head to Kirkland for a blood test for our health insurance and we couldn't eat for 12 hours before hand so we enjoyed breakfast out. It was like having another date day.
On the way home we stopped at Trader Joes and somehow during check out Colt told the girl in the check out he married a model. I just about died. The last time I modeled was when I was 2 years old, I really don't feel like that qualifies but she thought it was the cutest thing ever and she was pregnant so next thing I know she's tearing up. I have to watch him closely.....
By Sunday Buddy our dog really wasn't feeling well so Monday we brought him into the vet. It looks like it was just an ear infection, I was pretty sure our dog was dyeing but he seems to be doing a lot better today and was back to begging at the dinner table last night. I never thought I would say I was thankful he was in the kitchen begging. 
Hopefully we'll be back on track this following week.

Chinese Orange Peel Chicken is so much more flavorful then what most restaurants serve you might not go out for Chinese food again.

It's no secret that Orange Peel Chicken is one of my all time favorite things but it's horribly hard to find a well made Orange Peel Chicken that's crunchy and full of flavor.

Our favorite Chinese food restaurant changed owners awhile back and I haven't been able to find an Orange Peel Chicken that compares. Panda Express was the closest but still wasn't as good. After trying out all the local Chinese food restaurants we decided to perfect it at home. It was very similar to what our favorite restaurant had made but even better! 

The only bad thing was we had no leftovers to devour the next day. Next time I'll have to add an extra chicken breast and hide the leftovers from Colt.

Another wonderful week filled with total deliciousness! 

Meal planning has become such an easy way to help us keep from going out to eat at the last minute when we aren't sure what to make and by not eating out it's helping to save some money. Plus I know what the quality of the food we've been feeding our family is.

Dependent on your family size you might have more leftovers to take a night off from cooking and have a leftover night. In our house leftovers never last long since Colt usually eats them for lunch..

The suns finally shining in Washington and I'm ready to celebrate and I have just the cake ready for this occasion Carrot Cake with Pineapple and Cream Cheese Frosting.

Carrot Cake was always one of those childhood favorites Granny made and one of the first cakes I mastered from scratch.It floods my mind with memories of her in the kitchen happily slaving away.
She was one of those women who always did whatever needed to be done plus more without a complaint.

She was always kind, she cooked, she cleaned, she gardened and she raised me until I was about 11 years old while taking care of my Granddad who had a stroke and lost the use of most the left side of his body when I was about 5. I can't remember one time where she raised her voice or lost composure. My memories of her reminds me of Superwomen.

I don't know how at 70 years old she had the energy to do everything she did. Some days I feel lucky to have dinner on the table.  She always inspires me to try to be kinder and give my all in everything I do.

I'm thankful for the years she spent raising me and the memories she made.

As we gather around the table to enjoy the rays of sunshine and our slice of Carrot Cake I like to think she's smiling down from heaven.

I promised you yesterday a quick easy veggie to accompany our Quick Herbed Panko Baked Shrimp done in under 30 minutes and this is it Oven Roasted Broccolini. 

It's so easy and the broccolini comes out perfectly al dente every time.

If you happen to be making yesterdays Quick Herbed Panko Baked Shrimp the Roasted Broccolini goes in the oven at the same time as the shrimp for a perfectly timed meal.

Between the kids in basketball, our dishwasher deciding to stop working a little over 2 weeks ago and my back being totally unpredictable we've been trying to keep dinner low key, yet full of flavor.

Roasted Broccolini is so delicious and easy to make it doesn't require much skill.

The hardest part can be finding broccolini. I've seen it before in the produce section with little rubber bands rapped around the stalks. Costco use to carry it in our area but I haven't seen it in awhile. The most dependable source for broccolini has been our Trader Joes.

With 3 kids in basketball and Colt coaching L.J.'s team our days seem to be endlessly busy and an easy dinner is essential.

This is the perfect supper to make for early summer meals as we become busier and the days become longer.

This recipe's a spin off of a Ritz Cracker and Shrimp Casserole my friend Beth's Mom Sally would make when we were kids.

It was so good, I still remember having dinner at her house 20 some years later.

I don't have her recipe so I've had to improvise to make something similar to what my taste buds recall.

I usually don't have Ritz on hand so we usually make it using panko bread crumbs in some butter and herbs.

The herb coated panko bread crumbs gives a nice crunchy texture to the shrimp as it bakes.

If you don't like couscous, rice or quinoa make great alternate option for serving or they are amazing plain with a veggie or salad.
